I have been making Green Corn Tamales for years. They are different than regular tamales and are time comsuming but well worth it. It really helps to have another person to help with the wrapping. My DH usually helps, he is good at husking the corn and clean up. I usually make when corn is in season & cheap. My family loves them. The original recipe comes from a restaurant and I made some changes.This makes 12 to 16 good sized tamales.

24 ears corn, save husks
1/2 lb cornmeal
1/2 cup shortening
1/2 cup unsalted butter
3/4 cup sugar (I use Splenda) or 3/4 cup Splenda sugar substitute (I use Splenda)
1/2 cup half-and-half cream
1 teaspoon salt
12 -16 ounces cheddar cheese or 12 -16 ounces cheese, of choice cut into 1-ounce pieces
1 (24 ounce) can whole green chilies, cut into strips
aluminum foil, for wraping (12 to 16 pieces 12x12)

Steps:

  • Cut both ends of the corn, remove husks and save for wraping,(Put husk in water), cut corn kernels off the cob, use a spoon and scrap corn cobs.
  • Place corn kernels in food processor, grind, Add cornmeal and grind together, set aside.
  • Beat shortening and butter with electric mixer until creamy, add sugar, half and half and salt; ADD corn mixture and mix well.
  • FOR each TAMALE, overlap two or more corn husk and spread some of the corn mixture onto the husk.
  • Place one cheese strip and chile strips(I used about 1/2 of a whole chile in each tamale without seeds, seeds makes then HOTER your choice).
  • Top with MORE corn mixture; Bring edges of husk over OR add another husk on top, to cover filling complety, Bring bottom of husk over tamale.
  • Wrap in foil,lay tamale on foil, bring one side over, bring up the bottom, then bring other side over leaving top open.
  • Place tamales upright in a steamer or large kettle with steamer basket in bottom.
  • Steam for 45 to 50 minutes, enjoy.

24 ounces frozen chicken tamales or 24 ounces beef tamales
1 (10 ounce) package frozen corn, unthawed
1 (4 ounce) can green chilies, diced
3 green onions, chopped
1 cup fresh cilantro, chopped
1 cup whipping cream
1 (7 ounce) can salsa verde
1 1/2 teaspoons chili powder
1 teaspoon ground cumin
1/4 teaspoon salt
1/4 teaspoon pepper
2 cups monterey jack cheese, grated
1 avocado, wedges (optional)
salsa verde (optional)

Steps:

  • Preheat oven to 375°F.
  • Place frozen tamales in microwave and cook on high until thawed, about 5 minutes.
  • Remove husks.
  • Cut tamales in half lengthwise.
  • Place in single layer in 10-inch-diameter glass pie dish.
  • Sprinkle with frozen corn, chilies, green onions and 1/2 cup cilantro.
  • Whisk cream, salsa verde, chili powder, cumin, salt and pepper in medium bowl to blend; drizzle over casserole.
  • Sprinkle grated cheese over top.
  • Bake casserole until heated through and bubbling, about 35 minutes.
  • Sprinkle with 1/2 cup cilantro.
  • Serve with avocado and more salsa, if desired.

Don't use butter instead of lard; the texture is too soft and it won't cream properly. If you must substitute, use vegetable shortening.

6 ounces corn husks
1 lb cooked chicken meat, shredded
8 ounces canned diced green chiles
10 ounces queso fresco, crumbled
2 jalapeno peppers, diced
1/4 cup fresh cilantro, minced
4 garlic cloves, minced
4 scallions, sliced
2 teaspoons ground cumin
2 teaspoons Mexican oregano
1 teaspoon ground coriander
1/2 teaspoon kosher salt
1 teaspoon black pepper
2 tablespoons fresh lime juice
6 cups masa harina
1 1/2 teaspoons baking powder
1 1/2 teaspoons salt
1 cup lard, room temperature
3 -4 cups low sodium chicken broth

Steps:

  • Fill a large bowl or pot with warm water. Put the corn husks in the water and weight them down so they stay immersed.
  • Combine all filling ingredients. Set aside.
  • Combine masa, baking powder, and salt.
  • In a standing mixer, beat the lard until it becomes light and fluffy.
  • Gradually mix in dry ingredients.
  • Slowly add chicken broth just until a soft dough forms.
  • To assemble the tamales, put a spoonful of dough on the smooth side of a corn husk, smooth it down to a thin layer (1/8"-1/4" thick), and put a smaller spoonful of filling on the dough. Bring the two sides of the husk together so that the dough rolls around the filling and the husk overlaps itself. Fold up the bottom and tie it with a bit of string or a strand of corn husk.
  • Set the tamales open end up in a steamer or colander. Put the steamer in a large pot with some water in the bottom. The water musn't touch the tamales. Cover tightly and steam over medium heat for 90-120 minutes.
  • Once cooked, tamales can be kept in the freezer. To reheat, put in a microwave-safe bowl, cover, and cook on high for about one minute per tamale.

  • Coarsely puree the corn kernels along with the evaporated milk in a food processor or blender. The mixture should be a bit chunky, not completely smooth.
  • Heat 1 tablespoon of vegetable oil in a skillet or sauté pan over medium heat. Add the onion and cook, stirring often, until it begins to soften, about 3 to 4 minutes. Stir in the sliced roasted Anaheim chiles, sprinkle with 1/2 teaspoon salt, and continue to cook for another 3 to 4 minutes, stirring often, until the onions are very soft and all of the flavors have combined. Remove from the heat and scrape into a bowl.
  • Remove about 30 good size corn husks from the package and place in a large bowl of hot water. Soak for a couple of minutes, or until they are pliable, and drain. One by one, lay out a corn husk with the tapering end towards you. If the husks seem thin, layer a second corn husk on top. Leaving a 1 to 1 1/2-inch space at the bottom, a minimum of 1/2 inch space on the sides and a little more than that at the top, spread about 1/4 cup masa into an approximately 2x3-inch rectangle. The masa layer will be a little thicker than 1/4 inch. Place a very generous tablespoon of the Anaheim and onion filling along with a very generous tablespoon of the grated cheese lengthwise down the middle of the masa.
  • When you have all tamales ready, place them as vertically as you can in the prepared steamer with the open end on top. If there is space left in the steamer, tuck in some corn husks, so the tamales won’t dance around. Cover with more corn husks, cover tightly with a lid, and steam covered for 1 1/2 hours. Allow the finished tamales to rest for 10 to 15 minutes. You know the tamales are ready when they come away easily from the husks. They will still be moist, and as they are released from the husks, you will see the moisture, like when you remove good moist muffins from their paper baking cups.

  • Using a sharp knife, remove the kernels from ear of corn. Process until coarsely chopped. If you like it a little smoother, you can process a little longer, set aside.
  • Combine masa harina, chile ancho powder, baking powder and salt in large bowl. Gradually add warm chicken broth and using your hand, work into a soft dough.
  • In another glass bowl, melt the shortening or manteca in the microwave for a minute or so. Add the shortening and the reserved corn to the masa and work with hands until mixed well. If masa seems too thick add a little more chicken broth. Cover with plastic wrap and refrigerate for 1 hour.
