Perogies image

I grew up on these delicious perogies. I make 3 batches of dough for this recipe and freeze some. You can have perogies just boiled, or you can fry them in butter, which makes them tastier. Serve with sour cream or cottage cheese. Hint: To freeze perogies, freeze separately first, then put in freezer bags. Otherwise, they will all stick together.

2 cups all-purpose flour
1 teaspoon salt
1 egg, beaten
⅔ cup cold water
1 pound bacon
5 pounds baking potatoes
1 cup shredded Cheddar cheese
salt and pepper to taste
¼ pound bacon
1 (32 ounce) jar sauerkraut - drained, rinsed and minced
3 tablespoons sour cream
salt and pepper to taste

Steps:

  • To Make Dough: In a medium bowl combine the flour, salt, egg and water. Mix all together to form dough; cover bowl and set aside.
  • To Make Potato Filling: Place potatoes in a large pot. Add water to cover, bring to a boil, and boil for 25 to 35 minutes or until tender. Remove potatoes from water and mash. Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and stir into mashed potatoes. Stir in cheese and season with salt and pepper.
  • To Make Sauerkraut Filling: Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and place in a medium bowl. Stir in sauerkraut, then sour cream. Mix well.
  • Roll reserved dough out on a floured surface. Cut circles out of dough, using a small round container. Place a spoonful of potato or sauerkraut filling in the center of each circle and fold over, pinching edges together to seal. Bring a large pot of lightly salted water to a boil; drop perogies in boiling water and cook for 4 to 5 minutes, or until they float.

Extra-virgin olive oil
1/2 onion, peeled and thinly sliced
2 cups skim coconut milk
1 (3-inch) piece ginger, cut in 1/2
2 (15-ounce) cans white hominy corn, drained
Kosher salt and freshly ground black pepper
1 pinch ground nutmeg
1 cup low-sodium chicken stock

Steps:

  • Set a large saute pan over medium heat and add a 2 count of olive oil. Add the onion and caramelize for about 10 to 15 minutes. Stir in the coconut milk and ginger and simmer for 5 minutes to reduce a little. Remove the ginger and add the hominy. Season mixture with salt and pepper, to taste, the nutmeg, and chicken stock and cook for 10 minutes to heat through and allow the flavors to come together. Pour into a serving dish and season with pepper, if desired.

ROASTED PORK TENDERLOIN WITH SAGE CORN BREAD CRUST



Roasted Pork Tenderloin with Sage Corn Bread Crust image

1 (1-lb) pork tenderloin
2 teaspoons salt
1/2 teaspoon black pepper
1 tablespoon olive oil
1 tablespoon unsalted butter
2 garlic cloves, minced
2 corn toaster cakes, crumbled, or 1 cup crumbled corn muffin
1 teaspoon finely chopped fresh sage
2 tablespoons Dijon mustard

Steps:

  • Preheat oven to 425°F.
  • Pat pork dry and sprinkle with salt and pepper.
  • Heat oil in a 10-inch nonstick skillet over high heat until hot but not smoking, then brown pork, turning, about 4 minutes. Transfer to an oiled shallow baking pan.
  • Add butter to skillet and cook garlic over moderate heat, stirring, until fragrant, about 30 seconds. Remove pan from heat and stir in crumbs, sage, and salt and pepper to taste.
  • Spread mustard over pork and pat half of seasoned crumbs onto mustard, then sprinkle with remaining seasoned crumbs. Roast in middle of oven until an instant-read thermometer inserted diagonally 2 inches into meat registers 155°F, 20 to 25 minutes. (Check after 15 minutes to see if crumbs are getting too dark; if they are, tent loosely with foil.) Transfer to a cutting board, then tent loosely with foil and let stand 10 minutes before slicing (temperature will rise to 160°F).

GRILLED PORGIES AND ONIONS



Grilled Porgies and Onions image

4 tablespoons extra virgin olive oil, more for grill
2 whole porgies, 2 pounds each, cleaned
Salt
freshly ground black pepper
2 medium-large onions, in slices 1/2 -inch thick
6 sprigs fresh thyme
Juice of 1 lemon

Steps:

  • Heat grill to very hot. Oil the grates. While grill heats, use 1 1/2 tablespoons oil to rub fish inside and out. Season generously with salt and pepper inside and out.
  • Using a grill pan, sear onion slices until lightly charred on grill, or cook them in a dry skillet on top of stove. Stuff fish cavities with onions and thyme. Grill both fish close to source of heat, turning once, until skin is nicely charred and fish are cooked through, 8 to 10 minutes a side, depending on heat of grill. While fish are grilling, mix lemon juice with remaining oil.
  • Transfer both fish to large platter or board. Remove onions and thyme and set aside. Fillet fish by first cutting along the top and bottom edges and just below the head. Lift off top fillet and place on serving dish. Remove skeleton, head and tail. Transfer bottom fillet to platter. Repeat with second fish and arrange on platter. Scatter onions and thyme over fillets and drizzle with lemon oil. Serve.

This is a basic coating for fried fish. You can substitute any type of fish you like.

½ cup milk
1 tablespoon lemon juice
4 (3 ounce) fillets cod
1 cup oil for frying
⅓ cup cornmeal
⅓ cup all-purpose flour
1 teaspoon paprika
½ teaspoon ground black pepper
½ teaspoon salt
½ teaspoon garlic powder
½ teaspoon dried thyme
⅛ teaspoon cayenne pepper

Steps:

  • In a medium bowl, combine milk and lemon juice. Add cod fillets, and marinate 5 minutes. Heat oil in large heavy skillet over medium heat.
  • In a shallow bowl, mix together cornmeal and flour. Season with paprika, black pepper, salt, garlic powder, thyme and cayenne pepper. Dredge fish in cornmeal mixture.
  • Fry cod fillets in hot oil until golden brown.

  • Place fish in a large nonreactive bowl; sprinkle with lemon juice. Cover and let stand while you heat the oil and prepare the coating.
  • Pour oil to a depth of about 1 inch in a deep cast-iron skillet and clip on a candy thermometer; heat the oil over medium-high heat to 350 degrees F. While the oil is heating, pulverize seafood seasoning to a fine powder in a spice grinder or mortar and pestle. Transfer to a brown paper bag (see Tip). Add cornmeal, flour, salt and pepper; shake to combine.
  • Place buttermilk in a shallow dish. Working with a few fish at a time, add them to the bag with the cornmeal mixture; shake well to coat evenly. Next, dip the fish in the buttermilk to coat them all over, gently shaking off any excess. Return the fish to the bag; shake well to coat evenly again. Slide the coated fish into the hot oil, being careful not to crowd them in the pan. Fry, turning once, until golden brown, 2 to 3 minutes on each side. Transfer to a paper-towel-lined plate to drain, then place on a warmed platter. Repeat the coating and frying process until all the fish are cooked. Serve immediately.
