2 tablespoons butter
1 onion, chopped
2 cloves garlic, minced
1 red bell pepper, chopped
1 green bell pepper, chopped
2 cups chicken broth
1 pound red potatoes, cut into chunks
¼ teaspoon ground white pepper
¼ teaspoon ground cumin
3 ½ cups whole kernel corn
4 ounces kielbasa, halved and sliced
⅓ cup milk
⅓ cup heavy cream

Steps:

  • In a large pot over medium heat, melt butter. Cook onion, garlic, and bell peppers in butter until tender, 10 to 15 minutes. Stir in broth, potatoes, pepper and cumin and bring to a boil. Reduce heat and simmer 20 minutes, until potatoes are tender.
  • Place half the corn in a blender or food processor and puree until smooth. Stir pureed corn, remaining whole corn, kielbasa, milk and cream into soup. Simmer 20 minutes more.

3 - 4 medium potatoes, washed
1/4 c each, butter & flour
1 medium onion, chopped
2 clove garlic, minced
1 1/2 tsp salt or to taste
1 lb kielbasa or smoked sausage, cubed
1//2 tsp pepper
1 tsp cayenne pepper
4 c milk
2 c corn
fresh shredded cheddar cheese
green onion, sliced for garnish

Steps:

  • 1. Place washed potatoes whole, in a pot and cover with water. Bring to a boil over high heat and continue to boil until fork tender. Rinse with cold water. Once cool enough, peel and slice or cube. Set aside.
  • 2. Melt the 1/4 cup butter in a dutch oven, add onions and cook until tender. Add garlic and cook for another minute or so, stirring often.
  • 3. Add the flour, salt, pepper and cayenne. Stir well and cook for at least 1 minute.
  • 4. Whisk in the milk and bring to a boil, stirring often. Cook for 1 minute after boiling starts.
  • 5. Add the corn and Kielbasa and bring back to a boil. Now, reduce heat and simmer for about 10 minutes, stirring frequently so as not to burn.
  • 6. Now add the cooked potatoes and heat just long enough to warm through. Taste to see if seasoning needs adjusting to your taste.
  • 7. Ladle into serving bowls, top with cheese and green onion slices. I served with a crusty piece of Vienna bread. Delicious!

2 onions, finely chopped
1 tablespoon butter
14 1/2 ounces chicken broth
12 ounces baking potatoes, peeled and cut into 1/2-inch cubes
1 cup half-and-half
16 ounces frozen corn, thawed
salt and pepper

Steps:

  • Heat a deep skillet or a wide 4- to 6-quart pot over medium-high heat. Add the kielbasa and cook, stirring, until lightly browned, about 6 minutes. Transfer to a plate.
  • Add the onions and butter to the pan and cook over medium heat, stirring occasionally, until golden, about 6 minutes.
  • Add the broth and potato and bring to a boil. Reduce the heat, cover with a lid and simmer until the potato is tender, about 10 minutes.
  • Add the half-and-half and corn and cook, stirring, until heated through.
  • Using a blender or food processor, puree 1 cup chowder until smooth. Stir the puree back into the chowder along with the browned kielbasa and season to taste with salt and pepper.

1/2 teaspoon chicken bouillon granules

2 kale leaves, torn or 1/3 cup chopped fresh spinach

Steps:

  • In a large nonstick skillet, brown kielbasa and bacon; drain, reserving 1 teaspoon drippings. Add onion; cook over medium heat for 2-3 minutes or until onion is tender. Add garlic; 1 minute longer., In a large saucepan, bring broth and water to a boil. Add the potatoes, bouillon and pepper. 4 potatoes, washed, peeled and diced
4 cup corn (fresh or frozen)
8 oz kielbasa, diced
½ onion, medium, diced
9-10oz cream of celery soup
12 oz evaporated milk
4 cup chicken broth
as desired salt and pepper
optional toppings: additional corn kernels, bacon crumbles, cheese, green onions and/or a dollop of sour cream

Steps:

  • Place the kielbasa, onions, potatoes, salt, pepper, and corn into the slow cooker.
  • In a bowl, mix the chicken broth with the cream of celery soup until smooth. Pour into the slow cooker.
  • Cook on low for 5-6 hours or until the potatoes are tender.
  • About a half hour before serving, add the evaporated milk and using an immersion blender, blend all the ingredients together to your desired consistency.
  • Cook another half hour.
  • Dish up and top with desired toppings and enjoy!

  • Bring 5 cups broth to simmer in heavy medium saucepan over medium heat. Add wild rice and simmer until all liquid evaporates and rice is almost tender, stirring occasionally, about 40 minutes.
  • Meanwhile, blend 3 3/4 cups corn and 1 1/2 cups chicken broth in processor until thick, almost smooth puree forms. Heat vegetable oil in heavy large Dutch oven over medium-high heat. 1 jalapeño pepper (seeded and diced, optional)

2 russet potatoes (peeled and diced into 1/2-inch cubes)
1/2 tsp ground cumin

2 15 oz cans sweet corn kernels (drained and rinsed, "lower sodium" recommended)
6 oz pre-cooked Kielbasa sausage (sliced)
1 cup half & half

Steps:

  • In a large dutch oven or soup pot, melt the butter.
  • Add onion, peppers, and garlic. Cook for about 5 minutes, stirring occasionally
  • Sprinkle the flour over the veggies, stir, and cook for 2 more minutes until the floured veggies start to brown.

  • Add bacon and kielbasa to a 6 quart Dutch oven then turn the heat to medium. Saute until bacon is golden brown then scoop the meats onto a plate, reserving bacon grease in the pot. Add carrots, celery and shallot then saute until tender, 8-10 minutes - adding a splash of chicken broth then placing a lid on top to speed up softening if it’s taking too long. Add garlic then saute until very fragrant, 1 minute.
  • Add chicken broth plus 1 cup milk to the pot then turn heat up medium-high to bring soup to a bubble - NOT a boil. Add potatoes then turn heat down to medium and simmer until tender, 5-7 minutes. Meanwhile, whisk together gluten-free flour and remaining 1/2 cup milk until very smooth.
  • Add browned bacon and kielbasa back into the pot then stream in flour/milk mixture and simmer until soup has slightly thickened, 5 minutes. Add sweet corn then simmer until heated through, 1 minute. Taste then add seasoned salt to taste, and lots of pepper. Scoop into bowls then serve topped with green onions.
