- In a large pot over medium heat, melt butter. Cook onion, garlic, and bell peppers in butter until tender, 10 to 15 minutes. Stir in broth, potatoes, pepper and cumin and bring to a boil. Reduce heat and simmer 20 minutes, until potatoes are tender.
- Place half the corn in a blender or food processor and puree until smooth. Stir pureed corn, remaining whole corn, kielbasa, milk and cream into soup. Simmer 20 minutes more.

- 1. Place washed potatoes whole, in a pot and cover with water. Bring to a boil over high heat and continue to boil until fork tender. Rinse with cold water. Once cool enough, peel and slice or cube. Set aside.
- 2. Melt the 1/4 cup butter in a dutch oven, add onions and cook until tender. Add garlic and cook for another minute or so, stirring often.
- 3. Add the flour, salt, pepper and cayenne. Stir well and cook for at least 1 minute.
- 4. Whisk in the milk and bring to a boil, stirring often. Cook for 1 minute after boiling starts.
- 5. Add the corn and Kielbasa and bring back to a boil. Now, reduce heat and simmer for about 10 minutes, stirring frequently so as not to burn.
- 6. Now add the cooked potatoes and heat just long enough to warm through. Taste to see if seasoning needs adjusting to your taste.
- 7. Ladle into serving bowls, top with cheese and green onion slices. I served with a crusty piece of Vienna bread. Delicious!

- Place the kielbasa, onions, potatoes, salt, pepper, and corn into the slow cooker.
- In a bowl, mix the chicken broth with the cream of celery soup until smooth. Pour into the slow cooker.
- Cook on low for 5-6 hours or until the potatoes are tender.
- About a half hour before serving, add the evaporated milk and using an immersion blender, blend all the ingredients together to your desired consistency.
- Cook another half hour.
- Dish up and top with desired toppings and enjoy!

- Place a 4-quart heavy-bottomed saucepan over medium-high heat and add the oil.
- When the oil is hot, add the kielbasa and cook, stirring, until lightly browned, about 4 minutes.
- Using a slotted spoon, transfer the kielbasa to a double layer of paper towels.
- Set aside.
- Add the onion to the pan and cook, stirring frequently, until golden, 6 to 7 minutes.
- Add 1/2 cup of the broth and simmer for 2 minutes, scraping up the browned bits.

- Bring 5 cups broth to simmer in heavy medium saucepan over medium heat. Add wild rice and simmer until all liquid evaporates and rice is almost tender, stirring occasionally, about 40 minutes.
- Meanwhile, blend 3 3/4 cups corn and 1 1/2 cups chicken broth in processor until thick, almost smooth puree forms. Heat vegetable oil in heavy large Dutch oven over medium-high heat. - Sprinkle the flour over the veggies, stir, and cook for 2 more minutes until the floured veggies start to brown.

- Add bacon and kielbasa to a 6 quart Dutch oven then turn the heat to medium. Saute until bacon is golden brown then scoop the meats onto a plate, reserving bacon grease in the pot. Add carrots, celery and shallot then saute until tender, 8-10 minutes - adding a splash of chicken broth then placing a lid on top to speed up softening if it’s taking too long. Add garlic then saute until very fragrant, 1 minute.
- Add chicken broth plus 1 cup milk to the pot then turn heat up medium-high to bring soup to a bubble - NOT a boil. Add potatoes then turn heat down to medium and simmer until tender, 5-7 minutes. Meanwhile, whisk together gluten-free flour and remaining 1/2 cup milk until very smooth.
- Add browned bacon and kielbasa back into the pot then stream in flour/milk mixture and simmer until soup has slightly thickened, 5 minutes. Add sweet corn then simmer until heated through, 1 minute. Taste then add seasoned salt to taste, and lots of pepper. Scoop into bowls then serve topped with green onions.

- In a large wide soup pot, saute kielbasa until lightly browned. Remove to a plate. Add butter to the pot, along with the onion and garlic. Season lightly with salt and saute for a couple minutes, until translucent and fragrant. Add the corn and potatoes. Season well with salt and pepper. Saute for a couple minutes in the butter.
- Add milk, chicken broth, red pepper flakes, and corn cobs. Season again with salt. Cover and bring to a boil, but watch it so it doesn’t bubble over. Once it comes to a boil, reduce to a high simmer for 10 minutes, or until the potatoes are cooked, stirring occasionally. Remove the cobs and discard. Use a wooden spoon to lightly smash some of the potatoes against the pot to thicken the broth more. You can also scoop out a couple ladles of chowder into a blender, puree it, and pour it back into the pot if you want it even thicker.
- Add back the sausage and cook for a minute more. Taste for seasoning and adjust with salt and pepper if needed. Finish the soup last minute with the fresh basil, and top each bowl with more fresh basil at the end. Serve immediately. Keep any leftovers in an airtight container in the fridge for up to 3 days.
