Steps:

2 tablespoons minced shallots
3 garlic cloves, minced
2 jalapeno peppers, seeded and minced
2 cups frozen whole kernel corn, thawed
2 green onions, sliced
3/4 cup all-purpose flour
1 tablespoon sugar
1 teaspoon baking powder
1 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon ground red pepper
2 large eggs, separated
3/4 cup buttermilk
1/2 lb fresh lump crabmeat
vegetable oil

Steps:

  • Melt butter in a large skillet; add vegetables, and sauté 5 minutes.
  • Combine flour and next 5 ingredients in a large bowl.
  • Lightly beat egg yolks; add buttermilk to egg yolks. Stir sauteed vegetables and buttermilk mixture into flour mixture. Fold in crabmeat.
  • Beat egg whites at high speed until soft peaks form. Gently fold half of beaten egg white into crabmeat batter. Fold in remaining beaten egg white.
  • Heat 2" oil to 375º.
  • Shape 2 tablespoons batter into a fritter shape and drop into hot oil 4 or 5 at a time. Cook 3 minutes or until golden on all sides, turning once. Drain on paper towels.
  • Serve with Spicy Dipping Sauce.

These easy homemade corn fritters are a hit for breakfast or as an appetizer. Whether made with leftover corn, creamed corn or frozen corn they are a hit every time!

⅓ cup all-purpose flour
¼ cup cornmeal
1 egg
1 green onion (chopped)
1 tablespoon jalapeno (minced)
⅛ teaspoon smoked paprika
salt & pepper to taste
2 cups corn (fresh, frozen or leftover corn on the cob)
½ cup Monterey jack cheese
¼ cup milk (or more if needed)
2 tablespoons oil

Steps:

  • Combine flour, cornmeal, egg, onion, and smoked paprika in a bowl. Add salt to taste. Stir in corn and cheese.
  • Add milk a little bit at a time if needed to make a moist mixture that can still hold its shape. You may not need all of the milk.
  • Heat oil over medium heat in a large skillet. Spoon 2-3 tablespoons of the corn mixture onto the hot oil and gently flatten with a spatula.
  • Cook for 3-4 minutes or until golden, flip and cook an additional 3-4 minutes.
  • Top with sour cream for serving.

1/2 cup cornmeal
1 teaspoon baking powder
2 tablespoons sugar
1/2 teaspoon salt
2 large eggs, lightly beaten
1/3 cup milk
1 (13 1/4 ounce) can creamed corn
1 cup corn kernel (fresh, frozen, or canned)
1 jalapeno pepper, minced
1/4 cup chopped fresh cilantro
vegetable oil, for frying
coarse salt, for sprinkling

Steps:

  • Combine the flour, cornmeal, baking powder, sugar, and salt in a bowl.
  • Stir in the eggs, milk, creamed corn just until the flour mixture has all been moistened.
  • The mixture should be lumpy.
  • Fold in corn, jalapeno, and cilantro.
  • Heat 1/4 inch of vegetable oil in a large skillet over med-high heat; drop the corn batter by tablespoonfuls into the skillet and fry until brown on both sides.
  • The centers should feel firm when gently pressed, about 1 minute per side.
  • Remove and drain on paper towels.
