ZHOUG! (SPICY CILANTRO SAUCE)

Zhoug! (Spicy Cilantro Sauce) image

Homemade zhoug sauce adds a spicy cilantro kick to any meal! Zhoug is a popular Middle Eastern condiment that's very easy to make. Recipe yields 1 1/4 cup.

Provided by Cookie and Kate

Categories     Condiment

Time 10m

Number Of Ingredients 8

4 medium cloves garlic, roughly chopped
2 packed cups fresh cilantro (about 2 bunches, mostly leaves but skinny stems are ok)
4 medium jalapeños, seeds removed but reserved
1 teaspoon fine sea salt
1 teaspoon ground cardamom
3/4 teaspoon ground cumin
1/2 teaspoon red pepper flakes, more to taste
3/4 cup extra-virgin olive oil

Steps:

  • Place the garlic in your food processor and process until the garlic is broken into tiny pieces.
  • Add the cilantro, jalapeño (keep the seeds in case you want to make the sauce more spicy after tasting), salt, cardamom, cumin and red pepper flakes. Process until the mixture is all mixed together and very finely chopped.
  • While running the food processor, slowly drizzle in the olive oil. Scrape down the sides and blend until the sauce is mostly smooth.
  • Adjust to taste-for a spicier sauce, add the jalapeño seeds or additional red pepper flakes (1/4 teaspoon at a time) and blend again. Too bitter? You can add more salt or give the flavors some time to mellow. This sauce's flavor transforms with time, so if it's too spicy or you just don't love it right off the bat, let it chill in the fridge and try it again in an hour.

CHICKEN IN CORIANDER / CILANTRO SAUCE

Chicken in Coriander / Cilantro Sauce image

My neighbour was telling me about this dish a while ago and they way she explained it made my mouth water. I asked her a copy of the recipe and here it is now on Zaar. I've only tried it once and next time I make it I may remove the liquid/sauce and puree it so it could be a thicker green sauce. I will also try it with chicken thighs as I used chicken breast and it wasn't tender as I wanted it to be. Overall the flavours were yummy and I served it with cous cous. UPDATE!! After much consideration and experimentation, I've double to sauce as suggested by the reviewers - NOTE!! An "average" sized bunch of coriander is 60 grams (2 oz) = 1 1/2 cups chopped

Provided by Nici Wickes

Categories     Starter, Cocktail food

Time 1h15m

Yield Makes 30

Number Of Ingredients 16

500 gram minced lamb
1 onion, finely chopped
2 teaspoon ground cumin
1 teaspoon ground allspice
good pinch of cayenne pepper or chilli
1 cup fresh coriander (main stalks removed), roughly chopped
salt and pepper, to season
100 gram feta cheese, cut into 1cm cubes
olive oil, for frying
1/4 cup plain yoghurt
1/4 cup sour cream
1 tablespoon pomegranate molasses, plus extra for drizzling
1/2 teaspoon mustard
1/2 teaspoon horseradish cream
salt and pepper, to season
pinch of paprika, to garnish

Steps:

  • For the dipping sauce, whisk all the ingredients together and put in a small serving bowl. Drizzle with extra pomegranate molasses and a sprinkle of paprika.
  • Serve warm meatballs with the dipping sauce - don't forget the toothpicks for easy eating.

Cheesy Corn Fritters with Coriander Sauce image

These cheesy corn fritters are made with fresh corn and served with a creamy coriander sauce. Sweet and crunchy, they are the perfect bites for a light lunch or as an appetizer!

Provided by Dash of Honey

Categories     Appetizers     Lunch

Time 25m

Number Of Ingredients 16

2 1/2 cups of fresh corn (about 4 corn on the cob)
½ cup of shredded strong cheddar cheese
1 egg
1 sliced green onion
1 tsp of paprika
¼ tsp of onion powder
2 tbsp of fresh chopped coriander
½ tsp of salt
½ tsp baking powder
½ cup of all purpose flour
¼ cup of milk
Vegetable oil or avocado oil(for cooking)
3 cups of fresh coriander (1 bunch of coriander)
1 cup of plain greek yogurt
1 garlic clove, minced
Juice of ½ lime

Steps:

  • In a large bowl, combine fresh corn, cheddar, egg, green onion, paprika, onion powder, fresh coriander and salt. Mix well. Add baking powder and flour. Mix again. Add milk and combine.
  • Prepare the coriander sauce. Add all the ingredients to a food processor and season well. Blend for a few minutes and scrape the edges with a spatula a few times. We want to get a creamy green sauce.
  • In a large pan on medium high heat, add a decent amount of vegetable oil (about ¼ - ½ inch width). When the oil is hot, use an ice cream spoon or regular spoon and form 5 fritters in the pan (half of the batter). Cook each side of the fritter for 2 minutes. Remove from the pan and transfer to a plate with a paper towel. Sprinkle sea salt on each fritter while they are still hot. Repeat the cooking process with the rest of the batter (to create 5 more fritters).
  • Serve the fritters with the coriander sauce.

POACHED SALMON WITH CORIANDER SAUCE

Poached Salmon With Coriander Sauce image

Don't Like Salmon...Try this anyways, you may be surprised. I know I was. I don't really care for salmon but my hubby loves it so I figured I'd give it a try. Don't be intimidated by all the steps either it isn't as bad as it sounds. I got thias from a Freshwater Fish Cookbook from Walmart and I can't wait to make it again.

Provided by Gail2293

Categories     < 60 Mins

Time 50m

Yield 4-6 serving(s)

Number Of Ingredients 18

1 onion, sliced
1 carrot, sliced
1 tablespoon dried basil
2 bay leaves
1 cup minced fresh parsley
4 garlic cloves
1 1/2 teaspoons peppercorns
1 teaspoon salt
3 tablespoons red wine vinegar
1 (2 1/2 lb) whole salmon or 2 1/2 lbs salmon fillets
1 (8 ounce) can chicken broth, about 2 cups
3 tablespoons butter
3 tablespoons flour
1/2 cup salmon liquid, reserved and cooled at room temperature
1 teaspoon ground coriander
1/4 teaspoon black pepper
1/4 teaspoon salt
1 cup milk

Steps:

  • Cooking the fish.
  • In a fish poacher or roaster large enough to lay salmon in pan, combine all ingredients except the fish. Add can of broth. Then add enough water to the pan to cover the thickness of the fish, then remove fish. Bring the mixture to a boil, reduce heat and simmer 15 minutes.
  • Place the fish in the pan and set your timer once the water returns to a simmer. Do not boil the fish-- it will break up. Allow 10 minutes for each 1 inch of thickness for frsh fish. Lift the salmon from the cooking liquid, and serve hot with coriander sauce. (reserve 1/2 cup poaching liquid for the sauce).
  • Cooking the Sauce.
  • Melt butter on medium heat in small saucepan, add flour, and cook until well mixed. Add reserved poaching liquid and stir until smooth. Gradually add the milk, and continue cooking till the sauce is thick. Add the salt, pepper, and coriander5, and stir to blend.
  • TIPS.
  • While fish poaches it is important to keep water just below a bubbling boil. A bubbling boil will cause the fish to break apart, and alter cooking time. The other important thing is to take the fish out of the cooking liquid as soon as fish is done. Do not let fish cool in pot; it will be over done and tough.

Spiced tomato sauce with bits of creamy paneer fills delicious stuffed peppers here, but it can also be served with flatbread, over quinoa, or in a quesadilla.

Provided by Rachel Gurjar

Time 1h15m

Yield 4 servings

Number Of Ingredients 16

3 Tbsp. extra-virgin olive oil
2 (6-oz.) packages paneer
1 medium onion, finely chopped
6 garlic cloves, finely chopped
½ jalapeño, seeds removed, finely chopped
1 (1") piece ginger, peeled, finely chopped
1 tsp. cumin seeds
½ tsp. mustard seeds
2 tsp. ground coriander
½ tsp. cayenne pepper
½ tsp. ground turmeric
1 (15-oz.) can crushed tomatoes
2 tsp. Diamond Crystal or 1¼ tsp. Morton kosher salt
Nonstick vegetable oil spray
4 red or yellow bell peppers, halved through stem end, ribs and seeds removed
Chopped cilantro (for serving)

Steps:

  • Heat oil in a large Dutch oven or other heavy pot over medium. Cook paneer in a single layer, undisturbed, until golden brown underneath, about 2 minutes. Turn over and cook on other side until golden brown, about 2 minutes. Transfer to a medium bowl; let cool slightly, then crumble into bite-size pieces. Set aside.
  • Add onion, garlic, jalapeño, ginger, cumin seeds, and mustard seeds to same pot and cook (still over medium), stirring often, until onion is softened and translucent, about 5 minutes. Add coriander, cayenne, and turmeric and cook, stirring occasionally, until fragrant, about 3 minutes. Stir in tomatoes, salt, and 1 cup water. Bring to a simmer, then reduce heat to low and stir in reserved paneer. Cover pot and cook, stirring occasionally, until sauce is slightly thickened, 15-20 minutes.
  • Place a rack in middle of the oven; preheat to 400°. Coat a rimmed baking sheet with nonstick spray. Place peppers, cut side up, on baking sheet. Spoon ⅓ cup sauce into each pepper half. Bake until peppers are tender and top is lightly browned, 25-30 minutes.
  • Transfer stuffed peppers to plates and top with cilantro.
