Steps:
- In a small bowl, mix together the mustard and mascarpone. Set aside.
- Preheat the broiler to high.
- Heat a large ovenproof skillet over medium-high heat. Add the oil and continue to heat for an additional 1 minute. Sprinkle the chicken breasts evenly with 1 teaspoon salt. Place the chicken in the skillet and cook on the first side until golden brown, about 4 minutes. Flip the chicken and continue to cook until just cooked through, about 2 minutes more. Remove from the heat.
- Lay 1/2 slice of cheese on each chicken breast. Lay 2 slices of ham on top of the cheese on each breast. Divide the mustard sauce evenly over the ham and top with the remaining cheese slices. Broil until the cheese is melted, golden brown and bubbly, about 2 minutes.
CORDON BLEU APPETIZER
Looking through some magazines tonight to see what would go well with a Roasted Red Pepper Soup and I stumbled upon this recipe. It was in my Taste of Home magazine Feb/Mar 2009 issue. Wow, can I say these are so yummy and taste incredible! These are wonderful paired with soup, a main dish or just for a snack. I hope you...

CHICKEN CORDON BLEU BITES
I created this recipe to try to duplicate some appetizers I had last summer from Stew Leonard's famous dairy retail store in Connecticut. They are great as appetizers or as a fun food for kids. I love to make them with bread crumbs seasoned with Parmesan cheese. Enjoy!

CORDON BLEU APPETIZERS
This came out of Taste of Home Feb/Mar 2009. The first time I made this was with cheddar cheese, and it came out too dry for my taste. I would suggest adding butter or mayo to the mixture to moisten it up.
