I love Quaker Strawberries and Cream Instant Oatmeal but HATE the additives so I decided to make it with fresh ingredients.

3/4 cup chopped strawberries or 4 large strawberries
1 tablespoon turbinado sugar, if you like it sweeter (or more, can substitute white or light brown)
1/4 cup water
3/4 cup whole milk
1/2 cup organic quick oats
1 dash salt
1/4 teaspoon pure vanilla extract

Steps:

  • Chop the berries and coat them with the sugar, set aside.
  • In a small pot bring the water and milk to a simmer.
  • Add in the berry/sugar mixture and bring to a boil.
  • Add the oats and salt, cook 4 minutes.
  • Add the vanilla and cook another minute or until desired consistency.

I tried this one morning when I was out of blueberries (my usual favorite) and it is surprisingly good! I am posting it because, like me, I am sure not too many people would think to put strawberries in oatmeal, but it actually has become one of my favorite ways to eat oatmeal (a daily staple for me!) Also, fruit measurements are estimates, as I usually just use whatever I have.

1/2 cup quick-cooking oats
1 cup milk (I prefer vanilla soymilk) or 1 cup soymilk (I prefer vanilla soymilk)
1/2 cup strawberry
1/2 banana (optional)
sugar or artificial sweetener, if desired

Steps:

  • Add milk to oats in a deep bowl and microwave 3-5 minutes, depending on your microwave wattage and desired thickness. Watch carefully so it doesn't spill over the sides!
  • While oatmeal is cooking, wash and slice strawberries. Soft strawberries work well, so you may want to mash them a little bit, but that is up to you.
  • When cereal is done, stir strawberries and sliced banana (if using) into oatmeal. If desired, add a little sugar or splenda.
  • NOTE: It is also good with a little vanilla extract if you are using plain milk, just to give it some flavor. ALSO, You may need to re-heat oatmeal a little before eating if your strawberries cool it down too much.

Fresh strawberries are pretty delicious on their own. Adding this cream topping makes them an elegant dessert for a dinner party. I like it with Amaretto liqueur, you could use orange juice in place of liqueur if you prefer. Perfect for brunch or a lovely summer dessert and easy enough for everyday. 1 cup whipping cream
2 tablespoons sugar
1/2 cup sour cream
1 tablespoon Grand Marnier or 1 tablespoon amaretto liqueur
2 pints fresh strawberries, washed and hulled

Steps:

  • In a large mixing bowl whip the cream and sugar with a mixer until thick but not stiff.
  • Add the sour cream and beat until mixture is thoroughly combined.
  • Continue to beat while gradually pouring in the liqueur.
  • Divide strawberries between 6 dessert dishes, reserving 6 strawberries for garnish.
  • Pour cream over berries; top with a reserved strawberry. Serve immediately.

4 cups fresh strawberries, rinsed,hulled and quartered
4 teaspoons superfine sugar
1 tablespoon Chambord raspberry liquor or 2 drops almond extract
3/4 cup cold heavy cream
1 tablespoon icing sugar

Steps:

  • Chill bowl and beaters.
  • Crush 1 cup of the berries with fork.
  • Combine crushed berries with remaining 3 cups of strawberries in large bowl, tossing with sugar and framboise.
  • Refrigerate, covered, until serving time.
  • At serving time, whip heavy cream with icing sugar in chilled bowl with chilled beaters until soft peaks form.
  • Lightly fold into berries with streaking motion, so berries and cream are barely combined.

1/2 cup water
2 teaspoons French vanilla flavored coffee creamer (powdered)
3 large strawberries, diced
vanilla yogurt, to serve

Steps:

  • Combine water, oats & creamer.
  • Microwace for 1 minute and then stir to combine.
  • If you want your srawberries warmed through add them now and cook for a further 30 seconds.
  • Serve with strawberries (if you didn't already add them) & vanilla yoghurt.

2 cups quick-cooking oats
1/2 cup fat-free sweetened condensed milk
1 teaspoon coconut extract

Steps:

  • Toast coconut in a pan on top of the stove for a few seconds.
  • Bring water and salt to a boil and add oats, cooking for 1 minute.
  • Remove from heat and stir in sweetened condensed skim milk, extract and coconut stir until well blended.
  • Cover and let stand 2 to 3 minutes.
  • Oatmeal will thicken as it sits.
