1 1/2 cups crushed crackers (such as Ritz)
3/4 cup freshly grated parmesan cheese
1/4 teaspoon black pepper
4 (1/2 lb) chicken breasts, boneless and skinless
2 tablespoons butter, melted

Steps:

  • Heat oven to 425°F Spray a large rimmed baking sheet with cooking spray; set aside.
  • Combine crushed crackers, Parmesan, and pepper in a shallow dish; set aside.
  • Slice each chicken breast in half horizontally, so you have 8 pieces total. Pound each chicken piece between two sheets of plastic wrap until very thin, about 1/4" thick.
  • Coat chicken in butter, then dredge in cracker mixture, pressing crumbs firmly onto each piece. Lay chicken in a single layer on the baking sheet. Bake 12 minutes or until golden and cooked through.

My reverse-engineered recipe for replicating KFC's 'Original Recipe' chicken at home. Yields 8-10 pieces whole fried chicken, or up to 16 drumsticks. For a bulk mix seasoning for quick and easy breading, use Recipe #453973. PLEASE NOTE: The Nutritional Information listing here is inaccurate -- since only a fraction of flour and salt actually end up in the finished product. So be aware -- the suggested sodium, sugar, carbohydrate and calorie levels are ridiculously exaggerated!

2 quarts cold water
2 tablespoons morton lite salt
2 teaspoons Accent seasoning (optional)
5 teaspoons nonfat dry milk powder
1 1/2 tablespoons fine sea salt
2 teaspoons egg white powder (cornstarch okay)
1 teaspoon Accent seasoning (optional)
1/4 teaspoon garlic powder
5 teaspoons ground peppercorns (3 tsps black, plus 2 tsps white)
2 teaspoons ground dalmatian sage
1 1/2 teaspoons sweet paprika
1 teaspoon ground coriander
1 teaspoon ground ginger
1/2 teaspoon celery salt
1/2 teaspoon ground savory
1/4 teaspoon ground allspice
1/4 teaspoon ground cardamom
1/4 teaspoon ground parsley
1/4 teaspoon ground vanilla bean
2 cups unbleached bread flour

  • RINSE and blot chicken; CUT chicken into 8 pieces (or 10 pieces with breast portions cut in half); MIX 2 quarts (8 cups) cups cold water with 2 tablespoons Morton Lite Salt (OR 2 tablespoons fine sea salt), and 2 teaspoons Accent seasoning in a large container with an accompanying lid, until dissolved; ADD chicken pieces; COVER and transfer to refrigerator; MARINATE chicken at least 4 hours in refrigerator. NOTE: FOR A QUICKER STOVETOP MARINATION METHOD, PIERCE CHICKEN PIECES WELL WITH A FORK, THEN HEAT THE MARINADE WITH CHICKEN, COVERED, OVER LOW HEAT UNTIL HEATED THROUGH, TURNING ONCE).
  • MEASURE the BASE MIXTURE and 11 SECRET HERBS AND SPICES into a large re-sealable container; BREAK up any clumps (and nonfat milk granules) using the back of a spoon; SEAL the container with mixture; SHAKE to mix well; OPEN container and add the BREADING FLOUR (2 cups unbleached bread flour), then seal the container again; SHAKE well until thoroughly combined.
  • REMOVE chicken from brine; PLACE one piece chicken at a time into the breading mixture container; SEAL container firmly; SHAKE chicken gently in all motions to thoroughly coat chicken until evenly and generously breaded; PLACE breaded chicken piece onto a rack to rest; REPEAT with remaining pieces chicken; ALLOW breaded chicken to absorb the breading for a few minutes before frying.
  • ADD the manufacturer's recommended amount frying oil for deep-frying; PLACE deep-fryer basket into place in deep-fryer; PREHEAT fryer to 315°F (or preheat enough fat to immerse chicken completely in deep heavy stovetop pot between 315°F to 325°F, using a standard deep-fryer thermometer to gauge).
  • CAREFULLY drop each piece breaded chicken one at a time, gently into the deep-fryer basket without crowding (if a standard size home fryer is used, add no more than 2-3 pieces at a time); (if stovetop frying, gently place breaded chicken pieces into hot oil using tongs, turning once halfway through frying duration).
  • FRY chicken between 15-18 minutes until golden brown and fully cooked, depending on chicken portions/sizes (juices should run clear when chicken is done); BLOT chicken lightly to absorb excess oil; PLACE cooked chicken into a large resealable container to steam (the steam will soften the breading for added Original Recipe authenticity. If you prefer crisp breading, skip this procedure).
  • MAINTAIN frying fat temperature for each new batch and repeat the same cooking/steaming procedures for the remaining chicken.
  • REHEAT chicken if necessary before serving in a microwave oven, using a reduced-power setting, as if reheating 2 frozen pastries, pausing in intervals to turn chicken for even heating if necessary.

MRS. CRIBBS'S CHICKEN AND DUMPLINGS

This is a "simple ingredients make the best meals" dish. She uses dark meat because of their moistness and extra flavor, and the cooking methods are what makes all of them shine. The dumplings - Amish style or flat, not the rising kind - have to freeze for at least 4 hours so plan ahead. Its a great dish to get ready the day before then just put together the final cooking and serve in minutes. Its a simple dish, i only put the 45 min for prep because of the dumplings (does not include freezing time).

3 lbs chicken legs
5 carrots (2 cut into large chunks, 3 thinly sliced on the diagonal)
2 celery ribs (1 cut into large chunks, 1 thinly sliced on the diagonal)
2 medium onions, coarsely chopped
6 cups water
2 1/4 cups all-purpose flour
salt & freshly ground black pepper

Steps:

  • In a large saucepan, combine the chicken legs with the large chunks of carrot and celery, half of the chopped onions and the water. Simmer over moderate heat until the chicken legs are cooked through, about 15 minutes. Transfer the chicken to a plate. Let cool slightly, then remove the meat from the bones and let cool. Strain the chicken broth and discard the vegetables.
  • In a medium bowl, combine the flour with 1 cup of the chicken broth, adding a little of the fat from the broth; stir to form a stiff dough. Turn the dough out onto a lightly floured board and knead until smooth. Wrap the dumpling dough in plastic wrap and let rest at room temperature for 30 minutes.
  • 3.Cut the dough into quarters. Working with 1 piece at a time, roll out the dough a scant 1/4 inch thick on a very lightly floured work surface. Cut the dough into 3-inch-wide strips and transfer to a sheet of wax paper. Working on the paper, cut each strip crosswise into 1-inch-thick dumplings and transfer the paper to a baking sheet; do not separate the dumplings. Repeat with the remaining dough, stacking each layer on the baking sheet. Freeze the dumplings until solid, at least 4 hours and preferably overnight.
  • In a large enameled cast-iron casserole, combine the sliced carrots and celery and the remaining chopped onion with 4 cups of the broth and bring to a boil. Season well with salt and pepper and cook until the vegetables are just tender, 7 to 8 minutes. Add the cooked chicken and return to a boil.
  • Separate the frozen dumplings and add them to the simmering broth a few at a time, submerging them in the broth. Bring the broth to a simmer and cook until the dumplings are tender, about 15 minutes; tuck the dumplings into the broth occasionally.
  • Spoon the chicken and dumplings into bowls and serve.
  • MAKE AHEAD The recipe can be prepared through Step 3 up to 3 days ahead. Refrigerate the broth and the chicken; keep the dumplings frozen.

MRS POWELLS CINNAMON ROLLS (COPYCAT)

I got this recipe several years ago from a dear friend. I have used it almost exclusively ever since. It works great as cinnamon or orange rolls which ever you please. The key is to watch them closely and not let them get brown, or they will dry out. It makes a huge batch and I have never halved them so I don't know how that would work...we just give them away and I have frozen them with good results. I often split the dough in half and make half cinnamon and half orange.

2 tablespoons yeast
1 1/2 teaspoons sugar
1 quart warm water
1 cup melted shortening
1 (12 ounce) can evaporated milk
1/2 cup sugar
1 tablespoon salt
10 -12 cups flour
1 cup butter
3/4 cup sugar
2 -4 tablespoons cinnamon (depending on taste)
1 cup butter
3/4 cup sugar
1 tablespoon orange zest
1/2 orange, juice of

Steps:

  • Place first 3 ingredients into mixing bowl and let sit till yeast begins to work.
  • Add other ingredients using just as much flour as necessary to make a smooth elastic nor quite sticky dough.
  • Knead well.
  • Place in a greased bowl and let rise till doubled.
  • Punch down, rise till doubled again.
  • knead then let rest 10 minutes.
  • Roll out about 1/2 inch thick .
  • Spread with desired filling butter -- then sugar -- then orange or cinnamon.spreading out evenly and going almost to the edge.
  • Roll up jelly roll style and cut into 3/4-1 inch thick rolls.
  • Place on greased cookie sheet allowing plenty of room for them to expand.
  • Let raise 30 minutes.
  • Cook at 350°F for up to 25 minutes, watch carefully and do not let them brown!
  • Store in an airtight container and only frost when needed.
  • To freshen your cinnamon rolls place a pat of butter on top and microwave for 10-20 seconds.
  • I have no idea how many this makes -- depends on how big you make them.
  • Frosting I use:.
  • 8 c powdered sugar.
  • 1-1/2 T vanilla.
  • 1 c butter or margarine.
  • cream or milk.
  • For orange rolls add 1 T orange zest and the juice of an orange.
  • Mix well with a hand mixer using just enough cream to make a nice spreadable frosting.
