Steps:

• Slice focaccia bread lengthwise, then toast bread.
• In a small bowl, add mayo and chipotle sauce, and stir to combine.
• Spread chipotle mayo onto bottom half of toasted bread, then top with chicken, cheese, tomato slices, red onion slices, and basil.
• Close the sandwich with the other piece of bread, then serve and enjoy.

• CHICKEN: Place chicken, broth, liquid smoke and salt in a slow cooker and cook on high for AT LEAST 4 hours! Once the 4 hours are up, remove chicken from broth and "pull" apart shred. In a small bowl mix together the mayo and sour cream. Stir in the chipotle pepper and basil. Set it in the fridge for 1 hour. Use your panini press to grill or heat a grill pan on medium heat, and place on the rolls, cut side down until they turn a nice gold brown.
