COPYCAT NUTRI GRAIN BARS
Copycat Nutri Grain Bars. Soft, oatmeal bars filled with delicious, homemade fruit jam. These are so good that you will never want to buy store breakfast bars again.

Steps:
- In a large sauce pan over medium-high heat, combine berries, lemon juice and sugar.
- Stir very frequently. As the berries soften, use your spoon to squish them a bit.
- Once mixture comes to a boil, use a thermometer to measure temperature. When the mixture reaches 220 degrees, remove from heat. This will take about 15 minutes.
- Allow filling to cool completely before using for bars.
- In a large bowl or base of stand mixer, stir together almond flour, 1 cup of all purpose flour, corn starch, oats, salt, baking powder and cinnamon.
- Once combined, add melted butter, coconut oil, vanilla, eggs, honey, and 1/4 cup milk. Beat until a soft dough forms, about 3 minutes.
- Form dough into a ball as best you can (the dough is very sticky), and cover in plastic wrap. Place in refrigerator for at least two hours.
- Flour a working surface with about 1/4 cup flour (I use a Wilton fondant mat). Using your hands, spread out dough as best as you can. Sprinkle top of dough with extra flour and roll to about 1/8-1/4" thickness.
- Cut dough into 4 inch by 4 inch squares.
- Preheat oven to 350 degrees. Cover a cookie sheet with parchment paper or a silicone baking mat.
- Fill bars with about 2 tbsp of filling in the center of each square. Turn two sides of square in toward each other so that it makes a rectangle. Gently squeeze ends of the rectangle together to seal in the filling.
- Place rectangle seem side down on prepared baking sheet.
- Brush tops of bars with remaining milk. Bake for 15-18 minutes, or until bars are starting to turn a light golden brown.

- Combine cake mix, oatmeal, and melted margarine; cover the bottom of a 9x13" baking pan with half of this mixture and press firmly into place.
- Combine jam and water; spoon evenly over mixture in pan.
- Crumble remaining mixture evenly over jam layer and press lightly into place.
- Bake at 375° for 20 minutes, or until lightly browned on top; cool completely before cutting into bars.

I received an email this morning with a couple of copycat recipes and this was one of them. Sounds interesting - starts with a boxed cake mix.

Steps:
- Preheat oven to 375 degrees.
- Melt butter.
- Combine cake mix and oats in a large bowl; stir in the melted butter until the mixture is crumbly. Measure half of this mixture (about 3 cups) into a greased 13x9x2-inch pan. Press firmly into pan to cover the bottom.
- Combine preserves and water; spoon over crumb mixture in pan, and spread evenly. Cover with remaining crumb mixture. Pat firmly to make top even.
- Bake for 20 minutes; top should be very light brown. Cool completely before cutting into bars.

- Preheat oven to 350°F
- Mix all of the above ingredients except the jam into a crumbled texture.
- Divide in two portions. Pat half into an 8 x 8 pan.
- Top with your choice of jam or jelly.
- Crumble the remaining dough over jam evenly.
- Bake for about 30 - 35 minutes until light brown.
- Cool completely and cut into squares.

ALMOST NUTRA GRAIN BARS
These are great to take to work, kids lunch boxes, for a potluck or a bake sale, you can slice them and stick them in the freezer then wrap tightly in foil, put a frozen wrapped bar into your kid's lunchboxes, they will thaw out by noon, they are just as good if not better than the store-bought! ---This also works well using blueberry or other flavors of jams, for easy spreading heat the jam in the microwave until softened :)

- Set oven to 375 degrees (oven rack to second-bottom position).
- Grease a 13 x 9-inch baking dish.
- In a large bowl combine cake mix, oatmeal, cinnamon and brown sugar; mix with a spatula or a large wooden spoon.
- In a small cup whisk egg with lemon juice and vanilla until combined; add to the crumb mixture along with 1/4 cup plus 2 tablespoons melted butter.
- Using a large wooden spoon toss to combine then use your fingers to finish the mixing.
- Mix until the mixture clumps together.
- Sprinkle a litle more than half of the crumb mixture into the pan then spread out evenly pressing firmly to cover bottom.
- Spoon the jam carefully over the crust in the pan and spread evenly.
- Cover with remaining crumb mixture over top of the jam then gently pat the mixture down slightly.
- Bake for 20 minutes (the top should be very light brown).
- Cool completely, or semi-freeze before cutting into bars (this will make cutting the bars easier).
