COPYCAT LEGAL SEAFOOD BAKED SCALLOPS RECIPE
This is a delicious copycat recipe. As long as you select good scallops, this dish is bound to taste just as delicious as if you had it at the restaurant.

Steps:
- Preheat oven to 400 degrees Fahrenheit.
- Remove the side muscle from each scallop, then rinse scallops and pat dry with paper towels.
- Place scallops in a large bowl.
- Add buttermilk, thyme, parsley, salt, and pepper, and toss gently.
- Pour into a baking dish.
- Drizzle melted butter over the top of the scallops.
- Put Ritz crackers into a ziptop bag, and crush with your fingers until you have a mixture of fine crumbs and larger pieces.
- Sprinkle cracker crumbs on top of scallops.
- Bake scallops for 20 minutes at 400 degrees.
- Serve with lemon wedges.

Steps:
- Heat oven to 400 degrees.
- In a bowl, season the scallops with salt and pepper. Add thyme and buttermilk and toss to coat the scallops.
- Evenly place the scallops in an oven-proof casserole and cover with hand-crushed Ritz crackers. Top with melted butter and bake for 20 minutes.
- Squeeze juice of lemon over the scallops and serve immediately.

LEGAL SEAFOOD STYLE BAKED SCALLOPS
Whenever we get back to the Boston area, it's a priority to to have a meal at Legal Seafoods. I recently "re-discovered" this recipe buried in old newspaper clippings. I had tried to recreate it in the past but now know I was missing the most important ingredient - buttermilk. I made it again after posting the recipe so I have edited the original description. It's even better than I remembered, you might want to try just a dash (or more) of cayenne pepper. It's delightful !

- Preheat oven to 400°F.
- Place scallops in a bowl, season with salt and pepper, add thyme and buttermilk and toss to coat.
- Place scallops, with buttermilk, evenly in the bottom of an oven proof dish, sprinkle with cracker crumbs and top with melted butter.

Whenever we get back to Mass., we make a beeline for a Legal Seafood Restaurant. After loosing this recipe I finally found it again in a pile of newspaper clippings. I had tried to recreate it several times but was always missing the buttermilk. This is our favorite way to eat scallops.
