- Spread the bread with cream cheese, then sprinkle with chives. Layer on the cucumber, season well and top with the other bread slices. Cut into traingles, fingers or squares and scrape a thin layer of butter onto one cut edge of each, then dip into the chopped chives to serve.

- Grate cucumber, wrap tightly in paper towel, and squeeze out excess liquid. Combine cucumber, cream cheese, chives, sour cream, salt, and pepper in a food processor, and process until combined, about 60 seconds. Transfer to a container, cover, and chill at least 1 hour or up to 2 days.
- Remove from refrigerator, garnish with chives, and serve with carrots, celery, and cucumber.

A must for cool people - or those who like cucumbers! This is a very versatile sandwich spread or dip, which is so easy to whip up at the last minute; it makes VERY elegant sandwiches and is a wonderful accompaniment for smoked salmon, prawns (shrimp) or tuna. I have also used it to spread on savoury scones and crackers. If you plan to make this a day before you need to use it, you might like to salt the cucumbers first - as they do release water into the spread.

- Allow the cream cheese to come to room temperature for about 10 to 15 minutes, to soften it slightly.
- Add all the ingredients, EXCEPT the cucumber, and mix thoroughly. Season to taste with salt and pepper, then add the diced cucumber and gently fold through the mixture.Check the seasoning once more.
- Serve as a sandwich spread or as a dip for crudites; also wonderful with crackers and scones. This spread is deleicious when served with smoked salmon and blinis.
- Store in an airtight container in the fridge for up to 2 days.

- Peel and seed the cucumber: put in a food chopper and chop until very VERY VERY fine.
- In a small bowl, combine all the ingredients.

- Peel the cucumber and cut in chunks. If it's got a lot of big seeds, scoop some out and discard. Put it in a food processor and chop fine. If it's really moist, or you didn't seed it, then you may want to squeeze off some of the excess juice.
- Put the onion in the processor and chop. Add the rest of the ingredients. Process, scrape down the sides, and process again until smooth.
- I like it best on soft, white bread. But it's also great on crackers.
