ACORN SQUASH WITH WILD RICE STUFFING



Acorn Squash with Wild Rice Stuffing image

This two-for-one dish of wild rice stuffing and roasted acorn squash is a sure crowd-pleaser. You can cut the stuffed halves into quarters so they don't take up as much room on the plate. Wild rice takes about as much time to cook as long-grain brown rice, which you can use as a substitute. You can also make the rice ahead and refrigerate. Reheat with a splash of water before adding to the sausage mixture.

Number Of Ingredients 14

2/3 cup uncooked wild rice
1 teaspoon olive oil, divided
4 (1-lb.) acorn squashes, halved lengthwise and seeded
3/4 teaspoon kosher salt, divided
2 (3-oz.) sweet Italian turkey sausage links, casings removed
1 cup chopped yellow onion
1/2 cup chopped celery
3 ounces fresh shiitake mushrooms, chopped
1 tablespoon minced garlic
1 teaspoon fresh thyme leaves
1 (6-oz.) pkg. fresh spinach
2 tablespoons chopped fresh flat-leaf parsley
1 tablespoon fresh lemon juice
1/2 teaspoon black pepper

Steps:

  • Cook rice according to package directions. Preheat oven to 425°F.
  • Brush 1/2 teaspoon oil over cut sides of squashes; top with 1/2 teaspoon salt. Place squashes, cut sides down, on a parchment paper-lined baking sheet. Bake at 425°F for 20 minutes or until almost tender. Remove from oven.
  • Heat remaining 1/2 teaspoon oil in a large skillet over medium. Add sausage; cook 3 minutes, stirring to crumble. Add onion and celery; cook 5 minutes. Add mushrooms; cook 4 minutes. Add garlic and thyme; cook 1 minute. Add spinach, stirring until wilted. Remove pan from heat; stir in cooked rice, remaining 1/4 teaspoon salt, parsley, juice, and pepper.
  • Spoon about 1/2 cup rice mixture into each squash half. Bake at 425°F for 10 minutes or until squash halves are tender and lightly browned.

Baking winter squash cut side down in a small amount of water really makes it tender, and eliminates tough spots. This recipe came from a sticker on a squash I bought several years ago.

1 acorn squash
1 cup water
1/2 teaspoon salt (optional)
1 tablespoon orange marmalade
1 teaspoon butter, melted

Steps:

  • Preheat oven to 400 degrees Fahrenheit.
  • Cut squash in half and remove all seeds and strings. (Scrape the inside of the squash with the edge of a spoon).
  • Place squash halves upside down in a shallow pan. Pour water in pan to a depth of 1/4 inch (may use more or less water depending upon size of pan used).
  • Bake for 35 minutes. If any water remains, drain it off.
  • Turn squash over. Sprinkle cut side of squash lightly with salt if desired. Mix together the marmalade and melted butter and spoon over cut side of squash pieces.
  • Place under broiler for 5 minutes or until lightly browned.

1 medium acorn squash, halved and seeded
1 tablespoon butter
2 tablespoons brown sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Turn acorn squash upside down onto a cookie sheet. Bake in a 350 degrees F (175 degrees C) oven until it begins to soften, approximately 30 to 45 minutes.
  • Remove squash from the oven and turn onto a plate so that the flesh is facing upwards. Place butter and brown sugar into the squash, and place remaining squash over the other piece. Place squash in a baking dish (so the squash won't slide around too much) while baking.
  • Place squash in the 350 degrees F (175 degrees C) oven and bake another 30 minutes.

2 acorn squash, halved and seeded
salt and pepper to taste
¼ cup butter, diced
6 tablespoons firmly packed brown sugar
½ teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place squash in a shallow baking pan, cut side down.
  • Bake in preheated oven for 30 minutes, or until tender.
  • Turn cut side up; season with salt and pepper, dot with butter and sprinkle with brown sugar and cinnamon.
  • Bake for 20 minutes more.
