  • Whisk 1 1/4 cups brown sugar, 1 egg and 2 egg whites in a bowl. Whisk in 1/4 cup vegetable oil; stir in 1 1/2 cup rolled oats, 1 cup whole-wheat flour, 1/2 cup wheat germ and 1 teaspoon each baking soda and salt. Add 1/2 cup chocolate chunks and 1/4 cup each raisins and walnuts. Drop large spoonfuls onto lined baking sheets and gently flatten; bake at 350 degrees F, 12 to 15 minutes.

Iced oatmeal cookies remind me of home, family and baking on a cold winter's day. I love them because they are classic cookies--oatmeal, cinnamon and raisins--that have been dressed up for the holidays like mountains with freshly fallen snow.

1 cup (125 grams) all-purpose flour (see Cook's Note)
1 teaspoon baking soda
1 teaspoon ground cinnamon
Kosher salt
1 1/2 sticks (12 tablespoons; 170 grams) unsalted butter, at room temperature
2/3 cup packed (135 grams) dark brown sugar
2 tablespoons pure maple syrup
1 tablespoon pure vanilla extract
1 large egg, at room temperature
2 1/2 cups (250 grams) old-fashioned rolled oats
1 cup (130 grams) raisins
1 cup (120 grams) confectioners' sugar
2 to 3 tablespoons whole milk

Steps:

  • Whisk together the flour, baking soda, cinnamon and 1 1/2 teaspoons salt in a small bowl until combined.
  • Beat the butter and brown sugar in a large bowl with an electric mixer on medium-high speed until light and fluffy, about 3 minutes. Add the maple syrup, vanilla, egg and 1 tablespoon warm water and beat on high speed until creamy, about 3 minutes more. Add the flour mixture and mix on low speed, scraping the sides and bottom of the bowl to combine completely. Add the oats and beat on low speed until combined. Fold in the raisins until evenly distributed. Let sit, uncovered, at room temperature for 1 hour to let the oats hydrate.
  • Position a rack in the center of the oven and preheat to 350 degrees F. Line a rimmed baking sheet with parchment paper.
  • Using a 1 1/2-ounce scoop (about 3 tablespoons), arrange 9 scoops of cookie dough on the prepared baking sheet, leaving about 2 inches between each.
  • Bake until the cookies are lightly golden around the edges, 15 to 20 minutes. Let cool on the baking sheet for 10 minutes, then transfer to a wire rack to cool completely. Let the baking sheet cool slightly, then continue baking the remaining cookie dough.
  • Whisk together the confectioners' sugar, milk (2 tablespoons for a thicker glaze, 3 tablespoons for a thinner glaze) and a large pinch of salt in a small bowl until smooth and creamy.
  • Lightly dip the top third of each cooled cookie in the glaze. Transfer the cookies glaze-side up to a wire rack set inside a rimmed baking sheet to dry completely. Your cookies should look like snow-capped mountains with bits of unglazed cookie showing through.
  • The cookies will keep in an airtight container at room temperature for up to 5 days.

These cookies will remedy whatever kind of bad day you have had. They're the cookies you eat when you forgot a homework assignment, when your coworkers call in sick on a snow day, or when you're exhausted after moving all your stuff to a new apartment. They're craveable as well as comforting. They also make a great blank canvas: You can add up to 1 1/2 cups of inclusions -- some of my favorites are chocolate chunks, dried fruit, coarsely chopped nuts, and/or candied ginger.

227 grams (8 ounces) unsalted butter, at room temperature
213 grams (1 cup) packed brown sugar
66 grams (1/3 cup) granulated sugar
113 grams (2 large) eggs
5 grams (1 teaspoon) vanilla extract
210 grams (1 3/4 cups) all-purpose flour
6 grams (1 teaspoon) baking soda
2 grams (1/2 teaspoon) baking powder
4 grams (1 teaspoon) fine sea salt
2 grams (1 teaspoon) ground cinnamon
199 grams (2 cups) old-fashioned oats

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C), with racks in the upper and lower thirds. Line two baking sheets with parchment paper.
  • In the bowl of a stand mixer fitted with the paddle attachment (or in a large bowl, using a hand mixer), cream the butter and sugars on medium-low speed until light and fluffy, 4 to 5 minutes.
  • Add the eggs one at a time, mixing on medium speed until each one is fully incorporated. Add the vanilla and mix to combine. Scrape the bowl well.
  • In a medium bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon. Add to the butter mixture and mix on low speed just until incorporated, 1 to 2 minutes. Add the oats and mix on low speed to combine, 30 seconds to 1 minute. Scrape the bowl well.
  • Use a No. 16 (1/4-cup) scoop to portion the cookie dough onto the prepared baking sheets --stagger the cookies, leaving 1 1/2 inches between them to allow for spreading.
  • Bake the cookies, rotating the sheets from front to back and top to bottom at the halfway mark, until evenly golden brown, 14 to 16 minutes. Transfer the cookies to wire racks to cool.

1/2 teaspoon ground allspice
1/2 teaspoon ground cinnamon
1/8 teaspoon ground mace
3/4 cup unsalted butter, at room temperature
1/2 cup sugar
3/4 cup packed light brown sugar
2 large eggs, at room temperature
1 teaspoon vanilla extract, at room temperature
2 3/4 cups rolled oats
3/4 cup raisins
3/4 cup chopped pecans

Steps:

  • Position the racks in the top and lower third of the oven and preheat to 350 degrees F.
  • In a large bowl, whisk together the flour, baking soda, salt, allspice, cinnamon, and mace.
  • In another large bowl, combine the butter and sugar and, with a hand-held electric mixer, mix on low speed until just incorporated. Raise the speed to high and mix until light and fluffy. (Occasionally turn the mixer off, and scrape the sides of the bowl down with a rubber spatula.)
  • Add the brown sugar and mix until incorporated. Add the eggs to the butter mixture, one at time, waiting for the first one to be fully incorporated before adding the last. Mix in the vanilla.
  • Reduce the mixer's speed to low. Add the flour mixture, little by little, until a smooth dough is formed (scrape the bowl down occasionally). Turn off the machine, stir in the oats, raisins, and pecans with a rubber spatula.
  • Line 2 baking sheets with parchment paper. Using a spoon, drop heaping tablespoons of the dough onto the sheets, spaced about 2 inches apart.
  • Bake the cookies in batches, turning the pans once, until golden brown, but still soft and spongy, about 15 minutes per batch. Let the cookies cool slightly on the baking sheets, and then transfer to racks to cool completely. Store in a sealed container.

1 cup toffee pieces (Skor is good)
1 1/2 cups oatmeal

Steps:

  • Cream the butter, add the white and brown sugar.
  • Scrape down the bowl, add egg and vanilla.
  • Mix together the flour and the baking soda and add to the creamed mixture.
  • Add the oatmeal, cherries, chocolate, and toffee.
  • Using plastic wrap, divide into 3 logs and wrap.
  • Chill and slice 1/2" thick.
  • Bake on parchment (or wax papered) covered baking sheet at 350* for 8-10 mins.
  • Cool on rack.

1 cup vegetable oil

1 cup corn flakes, crushed
1/2 cup coconut
1/2 cup walnuts or 1/2 cup pecans, chopped
3 1/2 cups flour
1 teaspoon baking soda
1 teaspoon salt

Steps:

  • Preheat oven to 350°.
  • Cream together butter and sugars until light and fluffy.
  • Add egg, oil and vanilla. Mix well.
  • Add oats, cornflakes, coconut and nuts. Stir well.
  • Add flour, baking soda and salt. Stir until blended.
  • Drop by teaspoonfuls on cookie sheet and flatten with a fork dipped in water.
  • Bake 10-13 minutes or until done.
  • Options: chocolate chips can be added instead of the walnuts. Dried fruit (eg. dried cranberries or blueberries) can be substituted for the coconut.
