2 sticks (1/2 pound) salted butter, softened
1 1/2 cups brown sugar, packed
1/2 cup white sugar
2 whole large eggs
1 tablespoon vanilla extract
1 1/2 cups all-purpose flour
2 teaspoons kosher salt
1 teaspoon baking powder
1/2 teaspoon baking soda
1 1/2 cup oats (either quick or regular)
1 cup chocolate coated candies, such as M&M's
3/4 cup chocolate chips (milk or semisweet)
1/2 cup pecans, chopped
2 1/4 cups rice cereal, such as Rice Krispies
Cold milk, for serving

Steps:

  • Preheat the oven to 375 degrees F.
  • Cream the butter with both sugars in a mixing bowl until fluffy. Add the eggs one at a time, beating well after each addition. Add the vanilla and beat.
  • Combine the flour, salt, baking powder and baking soda. Add to the mixing bowl and mix until combined. After that, add in the oats, chocolate candies, chocolate chips and pecans in whatever quantity you prefer. Add the cereal at the very end, mixing until just combined. Do not over mix!
  • Use a cookie scoop to scoop balls of dough onto a cookie sheet. Bake until golden brown, about 20 to 25 minutes, and then allow to cool on a rack.
  • Serve with glasses of cold milk.

2 1/4 cups flour
1 1/2 tsp cornstarch
1 tsp baking powder
1 tsp salt
1 cup butter
3/4 cup brown sugar
1/2 cup white sugar
1 egg
1 egg yolk
1 tsp of vanilla
20-40 drops of blue food coloring
1 cup white chocolate chips
1 cup semisweet chocolate chips
2 bars of Hershey's chocolate

Steps:

  • In a small bowl, whisk together the flour, cornstarch, baking powder, and salt. Set aside.
  • Melt the butter on the stove or in the microwave. Let cool slightly, then add the brown sugar and white sugar and cream together.
  • Add the egg and egg yolk, plus the vanilla, and mix until combined.
  • Add blue food coloring to your liking.
  • Mix the dry ingredients in with the wet ingredients until a dough forms, then add the white chocolate and semisweet chocolate chips.
  • Form about ten balls of dough, and stuff each with a few pieces of Hershey's chocolate. Chill for at least two hours or overnight.
  • When the cookies are done chilling, bake at 350 degrees for 20-25 minutes.

These are very crisp, crunchy cookies that are full of chocolatey goodness. A big hit in our house. For this recipe I recommend weighing your oats, I found that when using a measuring cup I get way too many oats as opposed to using the weight on the carton. I also used a medium cookie scoop to measure out the cookies (probably 1/8th of a cup). Since it makes 66 cookies I recommend making some dough balls and freezing them until firm, then putting them in a freezer bag to bake at a later time. Then you can just pull out what you need and bake them. Prep time is an estimate.

  • Drop spoonsfuls of dough at least 2 inches apart on cookie sheet.
  • Bake for 15-17 minutes or until golden.
  • Let cool for a few minutes on sheet and then put on wire rack to cool.

Steps:

  • Cream together the butter and the sugar.
  • Beat eggs into the mixture a little at a time, then mix in the vanilla extract.
  • Sift the flour and baking powder together and fold into the mixture. Finally, add the chocolate chips or your own choice of ingredient if you are doing so.
  • Put dough into the fridge to cool for at least one hour
  • When chilled and firmer in texture, take the dough from the fridge and roll out, cut into rounds with a cookie cutter.
  • Place the cookies on a well greased baking sheet and bake in the oven at 200C for 6-8 minutes.

2 teaspoons baking powder
2 teaspoons baking soda
1 1/2 teaspoons kosher salt

1 cup packed light brown sugar
1 cup granulated sugar
2 teaspoons pure vanilla extract
2 large eggs plus 2 egg yolks
2 cups mixed red and green candy-coated chocolates, such as M and M's
2 cups rolled oats
2 cups roughly chopped pretzel rods
1 1/3 cups chopped peppermint puffs
1 1/3 cups white chocolate chips

Steps:

  • Position oven racks in the top and bottom thirds of the oven and preheat to 350 degrees F.
  • Whisk together the flour, baking powder, baking soda and salt in a bowl until evenly combined. Combine the butter, brown sugar and granulated sugar in a large bowl and beat with an electric mixer on medium-high speed until light and fluffy, about 3 minutes. Beat in the vanilla, then add the eggs and yolks 1 at a time, beating well after each addition. Add the flour mixture and beat on low until the dough just comes together. Add the chocolate candies, oats, pretzels, peppermint puffs and white chocolate chips and stir with a large spoon until evenly mixed.
  • Scoop eight 1/3-cup portions of dough, roll into balls and divide between 2 baking sheets, spacing the cookies evenly apart. Press the dough balls into thick disks with the palm of your hand. Bake, rotating the baking sheets top to bottom and front to back halfway through, until the cookies are golden brown at the edges and barely brown in the very middle, 18 to 20 minutes. Cool the cookies on the baking sheets for 1 minute, then transfer them to a wire rack to cool completely. Repeat with the remaining dough.

3/4 cup unsalted butter or margarine, softened
1 cup sugar
2 eggs, slightly beaten
1 teaspoon vanilla
2 1/2 cups all-purpose flour
1 teaspoon baking powder

Steps:

  • Put 3/4 cup of butter or margarine (that's a stick and a half) into your mixing bowl. Measure 1 cup of sugar. Pour sugar over butter. With fork, squash butter and sugar together until they are blended. Crack shells of two eggs and pour eggs over mixture in bowl. Measure 1 teaspoon vanilla and pour over mixture. With fork, blend everything in the bowl together. Measure 2 1/2 cups all-purpose flour and pour over mixture in bowl. Measure 1 teaspoon baking powder and sprinkle over flour. Measure 1 teaspoon of salt and sprinkle over flour and baking powder. Mix everything together either with the fork or with your hands. Put dough in icebox to chill (at least one hour). After chilling the dough, roll it out to 1/4" thick. Cut with your favorite cookie cutter. Place on a prepared cookie sheet, lined with parchment paper, or a baking mat. Bake at 400°F for about 10-12 minutes. If you'd like, you can sprinkle colored sugar on the cookies before baking, or decorate with frosting after cooled. Enjoy!
