Wonderful moist cake, made with apples straight from the orchard. I usually use Jonathan's or Grimes Golden, but these are hard to find.

2 eggs
2 cups sugar
1/2 cup vegetable oil
2 cups all-purpose flour
4 cups diced apples
1 teaspoon vanilla
1/2 teaspoon salt
1/2 teaspoon baking soda
2 teaspoons cinnamon
1/2 teaspoon nutmeg
1/2 cup brown sugar
1/2 cup white sugar
1 cup water or 1 cup apple juice
1 teaspoon vanilla
1/4 cup butter

Steps:

  • Beat eggs until fluffy and light.
  • Gradually add sugar, oil and vanilla.
  • Sift together flour, nutmeg, cinnamon, salt, and soda.
  • Stir in apples.
  • Bake at 350 degrees for 45 minutes.
  • Make topping: Mix sugars and water in pan bring to boil.
  • Boil til clear.
  • Add vanilla.
  • Finish with butter.
  • Pour over warm cake.

Utterly delectable! The best Apple Cake I have ever made or tasted! I always use Granny Smiths, but any other tart apple would probably taste as good!

5 apples, peeled, cored, and cubed
1/3 cup granulated sugar
1 teaspoon cinnamon
2 cups granulated sugar
4 eggs
1/2 cup apple juice or 1/2 cup orange juice
1 cup vegetable oil
1 tablespoon vanilla extract
3 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt

Steps:

  • Preheat the oven to 350°F Grease an 11 x 9" cake pan.
  • Combine sugar and cinnamon in a small bowl. Set aside.
  • In a large bowl, beat together the sugar, eggs, apple juice, oil and vanilla until well blended.
  • In a separate bowl, combine the flour, baking powder and salt. Add the dry mixture to the egg mixture and mix well.
  • Spread half of the batter into the prepared pan. Evenly sprinkle the chopped apple over the batter. Evenly sprinkle half of the cinnamon sugar over the apples. Then, spread the rest of the batter evenly over the cinnamon and finish with sprinkling the rest of the cinnamon sugar over the second layer of batter.
  • Bake for 50 to 60 minutes. Serve warm or cold.

1/2 cup shortening
2 cups sugar
2 eggs
2 teaspoons vanilla
2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon cinnamon
1 teaspoon nutmeg or 1 teaspoon mace
1 teaspoon ginger
6 cups peeled diced tart apples

Steps:

  • Cream shortening and sugar. Add eggs and vanilla. Combine dry ingredients and add to mixture. Stir in apples. Spoon into greased 11 x 13 pan. Bake at 350 for 45-50 minutes or until the toothpick comes out clean.

My mom used to make this during the holidays. A very long time family tradition, been around for many generations. This is a very sweet, rich dessert, moist and a bit crumbly because of the chunks of apples and pecans. Not the 'normal' birthday cake-like texture. Great with a big glass of milk or hot cup of coffee. The mix ends up being very thick and a little stiff to mix, but don't worry... it is totally worth it. Warning: This apple cake is addictive! Thanks Mom, we all miss you dearly!

2 cups sugar
3 cups flour (plain)
1 cup pecans (chopped)
4 cups Red Delicious apples (diced)
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon nutmeg
1 teaspoon cinnamon
1 1/2 cups canola oil
1 teaspoon vanilla extract
2 eggs, beaten

Steps:

  • PREHEAT OVEN TO 350 DEGREES:.
  • Mix all dry ingredients with Chopped Apples.
  • Add Canola Oil, (I make this at least 3 times a year and YES you put in 1 and one half cups of canola oil, this is a correct measurement), Vanilla Extract and beaten Eggs.
  • Mix well. Batter will be stiff and a bit difficult to mix, but it is totally worth it!
  • Bake approximately 1½ hours in lightly greased (10 x 14 ) pan. Start checking cake after about an hour, since everyone's stove heats a little differently. You can use a toothpick or whatever you usually do to check your baking.
  • Option: Of course you can make this in a muffin pan too but you would have to adjust the cooking time.
