nonstick cooking spray, for greasing
½ cup all purpose flour
¼ cup sugar
¾ teaspoon baking powder
2 tablespoons coconut oil, melted
6 tablespoons non-dairy milk
½ teaspoon Kroger® Pure Vanilla Extract
2 tablespoons Simple Truth™ Rainbow Sprinkles

Steps:

Grease a 6-8-ounce mug with nonstick spray.
Add the flour, sugar, and baking powder to the mug and stir with a fork to combine.
Add the coconut oil, nondairy milk, and Kroger Pure Vanilla Extract, and stir vigorously with the fork until the batter is smooth.
Fold in the Simple Truth Rainbow Sprinkles, then use a paper towel to wipe any excess batter from the edges of the mug.
Microwave on high for 2½-3 minutes, or until the mug cake has risen above the rim of the mug and is cooked through.
Let cool for 3-4 minutes before serving.

3 tablespoons Betty Crocker™ Super Moist™ yellow cake mix
1 tablespoon water
2 tablespoons unsweetened applesauce
1 tablespoon egg
1 teaspoon confetti candy sprinkles, plus extra for garnish
3 tablespoons Betty Crocker™ Rich & Creamy rainbow chip frosting
1 maraschino cherry

Steps:

Lightly spray microwavable mug (8 to 10 oz) with cooking spray.
In small bowl, beat cake mix, water, applesauce and egg. Fold in 1 teaspoon sprinkles; immediately pour into mug.
Microwave uncovered on High 1 minute. Cake is done when toothpick inserted in center comes out clean. Let stand 5 seconds.
Top with frosting, additional sprinkles and cherry. Serve immediately.

2 tablespoons store-bought vanilla frosting

Steps:

Add all ingredients except the sprinkles and frosting into a microwave safe mug. Stir with a fork vigorously until batter is smooth and there are no lumps.
Stir in 1 tablespoon of the sprinkles.
Microwave for 90 seconds to 2 minutes. Cake will rise and top will be firm to the touch. Let cool 2 minutes.
Spread frosting on top, sprinkle with more sprinkles and serve.

In a large microwave-safe mug (350 mL / 12.5 oz capacity or larger), stir together plain flour, baking powder and caster sugar until well combined. Add milk, oil and vanilla essence and stir until well combined. Stir through sprinkles.
Microwave for 90 seconds (based on an 1100 watt microwave) or until the cake has risen well. You can stick a fork through the centre of the cake to see if it is cooked through. Microwave in further 10 second bursts if needed but be very careful not to overcook! Serve with ice cream and sprinkles, if desired.
