COMPANY CASSEROLE
Good 1 dish meal for potlucks--very versatile--you can use your imagination and add many other ingredients to make it different. I often add mushrooms and do with bread crumbs.

Steps:
- Cook noodles; drain and set aside.
- Brown meat; drain.
- Add tomato sauce to beef; remove from heat.
- In a separate bowl, mix cream cheese, cottage cheese, sour cream, onions and peppers.
- Butter a casserole dish and spread 1/2 the noodles in the bottom.
- Cover noodles with 1/2 the cheese mixture, then 1/2 the meat mixture, then 1 more layer of noodles, then cheese mixture and then meat mixture.
- Pour 2 tablespoons butter over top; press down slightly.
- Bake at 375° for 1 hour to 1 hour 15 minute.
- If drier casserole is desired, cook 15 minutes longer.

This was a much requested recipe of my mother's. Now that mom is no longer with us, we have this often in her honor.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9 x 13 inch baking dish.
- In a large bowl combine hash browns, potato soup, celery soup, sour cream, milk and onion. Mix well and then season with salt, pepper and dill weed. Spoon into prepared dish and sprinkle with cheese and paprika.
- Bake in preheated oven for 1 to 1 1/2 hours, or until well browned and bubbly.

Steps:
- Preheat the oven to 350 degrees, and greased a baking dish.
- Peel the film at the corner of the Simply Potatoes package to vent and heat on high for 3 minutes in the microwave. Carefully remove the film (be careful not to burn yourself with steam) and stir. Microwave on high for 1 more minute.
- In a large bowl, mix the potatoes, goat cheese, cream cheese, and butter. Stir together until well-blended.
- Carefully stir in the crumbled bacon, bell pepper, green onions, and pepper. Taste at this point and see if you want to add the salt. Stir in 1/3 cup of the cheddar and parmesan cheese until well combined.
- Transfer to a prepared baking dish and sprinkle with the remaining cheese.
- Bake, uncovered, for 20 to 25 minutes or until heated through.

- Cover potatoes with water in lg pot.
- Cook until tender.
- Drain and mash.
- Add sour cream, cream cheese, and 3 T butter; mix well, add salt.

Reduce heat; cover and cook for 20-25 minutes or until potatoes are tender. , Drain potatoes and place in a bowl; mash. This is a great recipe to use at Thanksgiving or Christmas because it can be made ahead and heated through when needed. I usually make a half recipe because we are a family of 5. I got this recipe from Company's Coming.

Steps:
- Cook potatoes as usual in salted water until tender. Drain. Push through potato ricer.
- Add cream cheese in pieces. Add next 5 ingredients. Beat until smooth and fluffy. Scrape into a 2 qt casserole.
- Place dabs of butter here and there over the top of the potatoes. Sprinkle with paprika. Cover and heat in 350 F oven until heated through (about 30-45 minutes, depending whether you've made it ahead and have taken it from the fridge).
COMPANY'S COMING CASSEROLE
Steps:
- In a large skillet, brown beef with onion. Drain any grease. Season with garlic salt and pepper. Stir in tomato sauce, Italian seasoning, sugar and wine or water. Cook for a few minutes and remove from heat.
- Use a mixer to beat together the cream cheese, sour cream and cottage cheese.
- Spoon 1/2 of the noodles into a 9 x 13" casserole dish that has been sprayed with cooking spray. Cover noodles with the cheese mixture, then the rest of the noodles. Pour the meat-tomato mixture over the top. Sprinkle with parmesan cheese, croutons and then dot the top with butter.
- Bake in a preheated 350 degrees F oven for 35 to 45 minutes.

- Prick potatoes in several places. Microwave on HIGH 6 to 8 min. or until tender, turning over and rearranging after 3 min. Cool 5 min.

MAKE-AHEAD MASHED/SMASHED POTATOES
My mom clipped the basic recipe out of a newspaper (a very small clipping -so the name of the newspaper and column are not included, unfortunately) several years ago. It has since become the only mashed potato recipe we use, especially since the pickiest eaters race to get up the next morning to eat all of the leftovers! Mashed potatoes seem to be one of those foods that really brings out strong opinions, so I am including all of the various variations that please the various preferences in our house, and you should feel free to adjust to suit your tastes too! We always use fat free sour cream and low-fat cream cheese with excellent results, but the full-fat ingredients should also work just fine. These can be made up to 3 days in advance and kept in the refrigerator.

- Scrub the potatoes while bringing a large pot of water to a boil on the stove. If you don't like the skins in your mashed potatoes, you can also peel them at this point if you would like.
- Add potatoes and simmer 30 minutes, or until potatoes are soft and ready to be mashed.
- Mash the potatoes and season with salt and pepper.
- Add the cream cheese and sour cream and mix well.
- Sprinkle with any other herbs, spices, or seasonings you like.
- Final decision-- if you like your potatoes more on the smashed/chunky side, enjoy. If you want them smooth and completely mashed, then use mixer to whip them to your desired consistency.
- When ready, bring to room temperature, tent with foil, and reheat in 350-375 degree oven until hot, about 40 minutes. Reportedly, it can also be reheated in microwave or crockpot, but we have only ever tried it in the oven, so if you use another method, would love to hear how it works out.
