8 ounces process cheese (Velveeta), cubed
6 tablespoons butter, divided
1/2 cup crushed butter-flavored crackers (about 13 crackers)

Steps:

  • Prepare vegetables according to package directions; drain. Place half in an ungreased 11x7-in. baking dish. In a small saucepan, combine cheese and 4 tablespoons butter; cook and stir over low heat until melted. Pour half over vegetables. Repeat layers., Melt the remaining butter; toss with cracker crumbs. Sprinkle over the top. Bake, uncovered, at 325° for 20-25 minutes or until golden brown.

1 large onion, chopped
1 green bell pepper, chopped
1 red bell pepper, chopped
2 carrots, chopped
2 (10 ounce) packages frozen corn kernels, thawed
1 ½ cups dry potato flakes
2 teaspoons salt
¼ teaspoon ground black pepper
¼ teaspoon ground cayenne pepper
3 cups water
2 cups milk
1 cup half-and-half
½ cup shredded Cheddar cheese

Steps:

  • In a large saucepan, melt butter over medium high heat. Cook onion, red and green bell peppers, and carrots until tender.
  • Stir in thawed corn, potato flakes, salt, ground peppers, and 3 cups water. Bring to boil. Reduce heat. Cover, and simmer for 10 minutes.
  • Stir in milk and half and half. Warm only. Do not boil. Serve sprinkled with grated cheese.

61 ounces black beans, rinsed and well-drained) (4 cans)
4 ounces light cream cheese (cubed)
2/3 cup chopped cilantro (divided)
2 plum tomatoes (diced)

Steps:

  • Preheat oven to 350 degrees F.
  • Toss together cheddar cheese, flour and pepper in a medium bowl and set aside.
  • Stir together milk, hot sauce, corn, black beans and 1/3 cup cilantro in a 9x13-inch baking dish.
  • Place cubed cream cheese over the corn mixture.
  • Layer cheddar cheese mixture over corn mixture in baking dish and mix to combine and distribute ingredients.
  • Cover and bake 30 minutes.
  • Uncover and bake 5 minutes longer.

1/4 cup granulated sugar
2 eggs, well beaten
1 cup whole milk
1 (15.25-oz.) can whole kernel sweet corn, drained
1 (14.75-oz.) can creamed-style sweet corn
1/2 teaspoon salt
1/2 teaspoon ground black pepper

Steps:

  • Preheat oven to 350 degrees.
  • In a sauce pan, heat the butter slowly over medium-low heat, swirling the pan until it's just melted. Set it aside while you measure out the rest of the ingredients.

1 (19 ounce) can cream-style corn
1 1/2 teaspoons baking powder

  • Place a small saucepan over medium heat. Cook the half-n-half and cream cheese until the cream cheese has melted and the mixture thickens, about 5 mins. Remove from heat and set aside. (I prep the veggies while the cream cheese cooks.)
  • In a large mixing bowl, stir together corn, bell pepper, jalapeno, sugar, salt, and pepper. Add the cream cheese mixture and butter to the bowl. Stir until evenly combined.
  • Transfer corn mixture to a 2-quart baking dish. Spread into an even layer. Sprinkle the top of the casserole with parmesan cheese. Bake for 40 minutes, or until the casserole is bubbling and cheese is melted. Carefully remove from the oven. Allow to sit for 5 minutes before serving.
