1 pound collard greens
1 cup refrigerated fully cooked barbecued shredded pork
1 package (8 ounces) cream cheese, softened
1 small onion, finely chopped
1/4 teaspoon salt
1/8 teaspoon pepper
1 package (16 ounces) egg roll wrappers
2 tablespoons butter, melted
Thai sweet chili sauce

Steps:

  • Trim collard greens, discarding thick ribs and stems. Coarsely chop leaves. In a large saucepan, bring 1/2 in. of water to a boil. Add greens; cook, covered, until they begin to wilt, 8-10 minutes. Drain, squeezing out as much water as possible., Preheat oven to 425°. Combine greens, pork, cream cheese, onion and seasonings until well blended. With one corner of an egg roll wrapper facing you, place 1/4 cup pork filling just below center of wrapper. (Cover remaining wrappers with a damp paper towel until ready to use.) Fold bottom corner over filling; moisten remaining wrapper edges with water. Fold side corners toward center over filling. Roll egg roll up tightly, pressing at tip to seal. Repeat until all filling is used., Place egg rolls on a parchment-lined baking sheet; brush with melted butter. Bake until golden brown, 15-20 minutes. Serve with sweet chili sauce. , Freeze option: Cover and freeze unbaked egg rolls on waxed paper-lined baking sheets until firm. Transfer to freezer containers; return to freezer. To use, bake egg rolls as directed.

1 1 1 cup chicken broth
Directions for the Pulled Pork
to to from the slow cooker. Once it is cool enough to handle, use two large forks to shred the meat.
Ingredients for the Alabama White BBQ Sauce
1/2 1/2 1/2 cup mayonnaise
2 2 2 teaspoons creole mustard
1/2 1/2 1/2 teaspoon prepared horseradish
1 1 1 clove garlic, minced
1/2 1/2 1/2 teaspoon black pepper
1 1 1 tablespoon white vinegar
Directions for the Alabama White BBQ Sauce
to to mayo, creole mustard, horseradish, garlic, black pepper, and vinegar in a medium bowl. Mix until well combined. Store the sauce in the refrigerator to allow all the flavors to develop.
Ingredients for the Egg Rolls
1 1 package 1 (1-pound) package refrigerated egg roll wrappers
1 1 can 1 (27-ounce) can seasoned collard greens, very well drained
1 1 1 pound pulled pork recipe
Vegetable oil for frying

Steps:

  • Directions for the Egg Rolls Place about 2 tablespoons of pulled pork in the center of an egg roll wrapper. Top with about 1 1/2 tablespoons of drained collard greens. Roll egg roll up by folding the bottom flap over the filling, then folding in the sides. Roll the wrap up tightly and secure the top by brushing the top flap with a little bit of water and sealing it well. Allow the egg rolls to rest to ensure they are sealed well before frying. Repeat until all of the ingredients have been used. Fry the egg rolls by heating 3-to-4 inches of vegetable oil in a Dutch oven or deep, heavy-bottomed skillet. Once the oil has reached about 350°F, carefully place 3-to-4 egg rolls into the oil. Cook for 2 or 3 minutes, turning occasionally, or until deep golden brown. Work in batches, keeping the cooked rolls in a 250°F oven to keep them warm. Serve warm with the Alabama White BBQ Dipping Sauce.

1 large bunch collard greens
1 pound ground pork
2 teaspoons salt
2 teaspoons ground cumin
2 teaspoons red chili flakes
2 teaspoons onion powder
1 teaspoon garlic powder
1 teaspoon dried Mexican oregano
1/4 teaspoon ground nutmeg
1 1/2 cups chicken stock

Steps:

  • Preheat oven to 400 degrees F.
  • Bring a large pot of salted water to a boil. Cook the collards for 3 to 4 minutes until soft and pliable. Drain and set aside. In a large bowl, mix together pork, salt, cumin, chili flakes, onion powder, garlic powder, oregano, and nutmeg in a bowl. Divide into 4 sections to form oblong patties. Wrap each patty in 4 collard leaves. Place patties seam side down in the baking dish and add enough stock to reach 1/4 of the way up the stuffed greens. Cover with heavy-duty aluminum foil and bake until pork is cooked through, about 35 minutes.

6 pounds fresh collard greens, tough stalks and ribs removed and leaves roughly torn to bite-sized pieces
1 cup packed dark brown sugar
1 cup tarragon vinegar
1/2 yellow onion, thinly sliced
1 cup pulled pork
4 cups pork broth

Steps:

  • Add the collard greens, sugar, vinegar, onion, pulled pork, pork broth and 1-gallon cold water to a stock pot.
  • Bring the liquid to a rolling boil over high heat, then reduce the heat to medium-low and simmer until the greens are very soft and tender, 45 minutes to 1 hour.
  • Use a slotted spoon or tongs to divide the collards among bowls and serve hot.

This is adapted from a recipe by Sunny Anderson of the Food Network. She first tasted a similar dish in Hawai'i, but uses collard leaves for a more southern/African flair. I changed the seasonings to be more Hawaiian/Pacific, and the preparation method to make it easier. You can grind your own semi-frozen boneless pork in a food processor if you can't find it pre-ground at the store. Different and tasty, plus carb-friendly!

1 lb ground pork (not sausage)
collard greens (1 large bunch)
1/2 teaspoon sea salt
1 teaspoon tamari soy sauce
2 teaspoons chili powder
2 teaspoons onion powder
2 teaspoons smoked paprika (or regular paprika plus few drops liquid smoke)
1 1/2 teaspoons crushed red pepper flakes
1 teaspoon garlic powder
1/4 teaspoon ground nutmeg
1/4 teaspoon blackstrap molasses
1 1/2 cups chicken stock

Steps:

  • Mix pork, soy sauce and all spices together in large bowl. Form into 4 oblong patties. Set aside.
  • Rinse collards well and remove thick bottom part of stems but leave the leaves as intact as possible.
  • Starting at the side where the stem was removed, place 1 pork patty on a raw collard leaf; roll up and wrap 3 more leaves around each patty.
  • Tear up remaining collard leaves not used for wrapping meat into bite-size pieces. Place on the bottom of a large heavy pot. Add broth and top with the pork bundles.
  • Cover pot with lid. Bring to a boil, then reduce heat and simmer on low for 40-60 minutes, or until pork is cooked and collards are tender. Serve with rice or cornbread.

2 bunches collard green, large leaves preffered
1 ½ cups chicken broth
2 tablespoons Gourmet Garden™ Jalapeño Stir-In Paste
1 cup jasmine rice, rinsed well
4 strips bacon
½ medium yellow onion, diced
1 teaspoon paprika
1 teaspoon garlic powder
2 cups shredded chicken
½ teaspoon kosher salt
½ teaspoon apple cider vinegar

Steps:

  • Bring a large pot of water to boil. Prepare an ice bath in a large bowl and set nearby.
  • While the water comes to a boil, prepare the collard greens. Working 1 leaf at a time, cut out the stem, stopping halfway up the leaf so that the whole leaf stays intact.
  • Blanch the greens in the boiling water for 2 minutes, then plunge the leaves in the ice bath to stop the cooking. Drain and lightly squeeze out any excess water. Pat the leaves dry with paper towels.
  • In a large high-walled skillet, whisk together the chicken broth and Gourmet Garden™ Jalapeño Stir-in Paste. Add the rice, cover, and bring to a simmer. Reduce the heat to low and simmer for 10-14 minutes, or until liquid is absorbed and rice is tender. Fluff the rice with a fork, then transfer to a medium bowl. Wipe out the pan.
  • Add bacon strips to the same pan over medium heat and cook for 5 minutes, until browned. Flip and cook on the other side for 3 minutes more, until brown and crispy. Remove the bacon from the pan, leaving any rendered fat behind, and drain on paper towels. Once cool enough to handle, chop the bacon.
  • Add the onion, paprika, and garlic powder, and cook over medium heat, stirring occasionally, for 8-10 minutes, until softened and golden brown. Add the rice, chopped bacon, chicken, salt, and apple cider vinegar. Stir well, then cook for 5 minutes, until heated through. Remove the pan from the heat.
  • Lay a collard green on a cutting board, overlapping the two sides in the center to remove the gap where the stem was. Scoop a heaping ¼ cup of the rice mixture just above the bottom of the leaf. Fold the bottom over the filling, fold in the sides, then roll up tightly, tucking in the sides of the leaf as you go. Repeat with the remaining filling and collard greens.

6 ounces salt pork
8 cups water
salt to taste
2 bunches collard greens
½ cup cider vinegar
4 teaspoons white sugar

Steps:

  • Place the pork, water and salt in a medium size pot. Bring to a boil over medium high heat. Skim off any fat that rises to the top. Reduce temperature to low and let simmer for 30 minutes.
  • Meanwhile, prepare greens. Discard damaged or yellow parts of leaves. Cut away the tough ends from each leaf. Place greens in a colander, and wash thoroughly until rinse water is clear of dirt. Fold each leaf in half at its center vein, fold over once or twice more, then cut in half.
  • Stir prepared greens into the simmering liquid. Let simmer all together for approximately 1 hour over low heat. Ladle into shallow bowls, and add sugar and cider vinegar to each bowl. Serve.

I've been in the south for almost 4 years, after living all my life in the north. My gram used to make collard greens with salt pork, but down here in the south they use ham hocks, necks, and fatback, soooooooo I decided I was going to try the southern thing with a little twist of my own. They came out better then any I have EVER had, and I have had them quite a few times in restaurants around here. GREAT flavor, and just the right amount of everything makes this one dish you will be making more than once. Try em, you will be coming back for more for sure :)

6 1/2 lbs collard greens, cleaned, and big stems removed (2 big bunches)
6 cups water
2 tablespoons salt
2 lbs smoked pork neck bones, about 6 good size pieces
2 medium onions, cut in half, then cut into slices
3 tablespoons garlic, chopped (I used garlic in the jar)
2 cups knorr chicken broth (1/2 box)
15 pepperoncini peppers
6 ounces pepperoncini pepper juice, from jar

Steps:

  • Clean greens in cold water, and tear off lg. stems.
  • Break up leaves into bite-size pieces, and put in a lg. roasting pan.
  • Add the water, and bring to hard boil.
  • Add the salt, neck bones, onions, garlic, chicken broth, peppers and juice. Boil on med-high for 1 hours When soft, drain well and serve.
  • Note:
  • You can add vinegar if you like it.
