CARAMEL CUSTARD APPLE TART
Apples take centre-stage in this autumnal tart, while the custard adds a rich, creamy texture

Steps:
- Heat oven to 220C/fan 200C/gas 6. Roll the pastry on a lightly floured surface until just thicker than a £1 coin. Use to line a 23cm deep tart tin, allowing the spare pastry to hang over the edges. Line the tart with greaseproof paper and baking beans, then bake for 15 min until golden around the edges. Remove the beans and continue to cook for 5 mins until the base in golden brown. Remove the tart from the oven and leave to cool. Reduce the oven temperature to 160C/ fan 14C/gas 3.
- Meanwhile, tip the sugar into a large frying pan over a high heat. Cook the sugar until it dissolves, bubbles and caramelises. Carefully tip the apple wedges into the caramel and toss until coated. Splash in the brandy, if using, then cook the apples for 2-3 mins until just starting soften and the caramel has dissolved in the apple juices.
- Turn off the heat and remove the apples to a bowl. Pour the cream into the pan then, holding a sieve over the pan, strain in any juices from the apples. Gradually whisk the caramel sauce into the beaten yolks. Arrange the apples over the base of the tart, pour over the custard, then bake for 40 mins until the custard is just set. Leave the tart to cool, then use a knife to cut away the spare pastry and neaten the edges.

SALTED CHOCOLATE CARAMEL TART

- Make the tart shell:
- Preheat oven to 300°F. In the bowl of a food processor, pulse almonds until finely ground; remove and set aside. Add butter, sugar, and vanilla to food processor and pulse to combine well. Return ground almonds to food processor along with flour and salt and pulse briefly until a dough begins to form. Transfer dough (it will be crumbly) to a 10-inch tart pan with a removable bottom. Press the crumbs into the bottom and up the sides, using your knuckles to spread it as evenly as possible. Chill until firm, at least 30 minutes. Prick dough all over with a fork and bake until just golden brown, about 45 minutes. Set pan on a wire rack and let crust cool completely.
- Make the caramel:
- Place a pastry brush in a cup of water near the stove. In a medium saucepan, stir together the sugar, water, and corn syrup. Cook over medium-high heat, swirling gently but not stirring, and occasionally using the pastry brush to wash down any sugar crystals from the sides of the pan. Continue to cook until caramel reaches a dark amber color, swirling frequently as it darkens, 15 to 20 minutes total. Remove from heat and carefully add the cream all at once (it will bubble up). Add the butter, vanilla, and salt, and when the bubbles die down a bit, whisk caramel until smooth. Pour into tart shell and set aside to cool for 20 minutes. Then, refrigerate until chilled, at least 1 hour, or up to one day ahead.
- Make the ganache:
- After the caramel-filled tart has chilled for at least an hour, melt the chocolate gently in a bowl set atop barely simmering water in a saucepan. Stir until smooth and set aside to cool slightly. Stir the crème fraîche into the chocolate, followed by the butter and corn syrup. Stir to combine well. Spread over the cooled caramel tart and refrigerate until set, at least 30 minutes (or up to 3 hours). Let stand at room temperature for 30 minutes before serving, and garnish with flaky salt, if desired.

- Heat oven to 350°F. In medium bowl, mix flour, 1/2 cup butter and the powdered sugar. Divide dough into 24 equal pieces. Press each piece in bottom and up side of small muffin cup, 1 3/4x1 inch, ungreased or lined with foil or paper baking cups.

WALNUT CARAMEL TART

Steps:
- Heat oven to 190C/170C fan/gas 5. Put the flour in a food processor with the butter and sugar, and mix until it forms fine breadcrumbs. Add the egg yolk and 1-2 tbsp cold water, and pulse to make a firm dough.
- Have ready a 24cm tart tin. Briefly knead the pastry on a lightly floured surface, then roll out to a round about 5cm larger than your tin. Lift onto the tin with the help of your rolling pin, then press into the corners using your finger. Do not trim the pastry. Fill the pastry case with a round of baking parchment and baking beans. Chill for 10 mins. Blindbake for 10 mins, remove the paper and beans, then bake for 5 mins more.
- To make the filling, put the sugar in a large pan with 3 tbsp cold water. Heat gently, stirring to dissolve the sugar. When the sugar is completely dissolved, increase heat and bubble until the syrup has turned a rich caramel colour. Remove from the heat and stir in the butter until it has dissolved, then stir in the cream. Return to the heat and boil hard, stirring until the sauce is thick enough to leave a gap on the base of the pan when you draw your spoon across it. Stir in the walnuts.
- Fill the pastry case with the nut mixture, levelling it with a fork. Return to the oven for 8-10 mins until the filling is bubbling. Cool for 10 mins before removing carefully from the tin. Serve warm or cold.

- In 10-inch heavy skillet, heat 1 cup of the sugar over medium heat 6 to 8 minutes, stirring constantly, until sugar is melted and golden brown. Stir in butter until melted. Remove from heat.

CARAMEL APPLE TART
Steps:
- Prepare the pie crust according to package instructions. Roll the dough out between 2 pieces of waxed paper to 1/4-inch thickness. Invert a heavy bottom 10-inch nonstick skillet over the dough, trace the outside edge of the pan and trim the excess. Put the pie dough on a sheet tray, cover it in plastic wrap and refrigerate.
- Preheat oven to 375 degrees F.
- Slice each apple in 2 and place the halves in a bowl of water with a bit of lemon juice to keep them from browning. In a small bowl, combine the sugar with 2 teaspoons of pumpkin pie spice and the salt.
- Put the same skillet used to measure out the pie crust, over medium-high heat, and add the butter. Sprinkle 3/4 of the sugar mixture over the melted butter. Arrange the apple halves flat side down in the pan. Sprinkle the remaining sugar over the apples. Cook until the caramel syrup turns a deep golden brown color, about 15 minutes. Carefully arrange the chilled pie crust over the top of the cooked apples and use a spatula to tuck in the edges.
- Put the skillet in the oven and bake until the crust is cooked and is slightly brown in color, about 15 to 20 minutes. Remove the skillet from the oven and let it stand for around 5 minutes, then invert the pie onto a serving platter.
- In a medium bowl, using a hand mixer on medium speed, whip the heavy cream with the confectioners' sugar and the remaining 1/2 teaspoon of pumpkin pie spice until soft peaks form. Serve the warm tart on individual plates with a dollop of whipped cream.
CARAMEL BUTTER TARTS

- BUTTER TARTS: Preheat oven to 375° F. For pastry, combine flour and salt and cut in lard until coarse and crumbly. Whisk lemon juice and egg and mix into dough until it just comes together. If needed, add 4-6 tablespoons of cold water to help bind the pastry. Wrap and keep at room temperature while preparing filling.
- For filling, soak currants in hot water for 10 minutes and drain. Set aside. Cream together butter and sugar and stir in eggs. Mix in vanilla, vinegar and cinnamon. Whisk in corn syrup and maple syrup.
- On a lightly floured surface, roll out pastry to just shy of ¼-inch thick. Cut 6-inch rounds from pastry and line ungreased muffin tins, pressing in to ensure pastry gets into corners. Sprinkle a few currants in each shell and pour filling over, coming only halfway up. Bake tarts for 18 to 22 minutes, until filling is set. Allow to cool before removing from tin.
- To serve, place butter tart on plate and drizzle with Caramel Sauce (directions follow).
- Butter tarts will keep up to a week in an airtight container (if they last that long).
- CARAMEL SAUCE: Bring sugar, corn syrup, lemon juice and water to a boil over high heat in a covered heavy-bottomed saucepot. Do not stir! Remove lid once boiling and let sugar cook, brushing sides of the pot right against sugar with cool water once or twice, until an amber colour. Remove from heat and slowly whisk in cream (watch out for steam). Stir in butter and vanilla. Let cool for 20 minutes before serving.
- Caramel sauce can be prepared ahead and chilled until ready to serve. Simply heat in microwave to warm. Carmel sauce will keep up to a week refrigerated. Yield: approximately 1 1/2 cups.

- Chocolate tart dough: In bowl of electric mixer fitted with paddle attachment, cream butter and confectioners' sugar until combined, about 1 minute. Add egg yolk and vanilla and beat until smooth. Sift in flour and cocoa powder and beat on low speed until just combined. Scrape dough onto a sheet of plastic wrap and form it into a disk. Wrap and chill until firm, about 1 hour, or up to 3 days.
- Preheat oven to 325 degrees F. On lightly floured surface, roll tart dough to an 18 by 12-inch rectangle, 3/16-inch thick. Using a 2 1/2-inch round cutter, cut out 24 rounds of dough and press them into mini muffin tins or 2-inch tart pans, trimming away any excess dough. Prick the dough all over with a fork. - Caramel filling: Place 1/2 cup water in a large saucepan. Add sugar and corn syrup and cook mixture over medium-high heat, swirling the pan occasionally until you have a dark amber caramel, about 10 minutes. Carefully whisk in butter, cream, and creme fraiche (mixture will hiss and bubble up), whisking until smooth. (Caramel can be made up to 5 days ahead and refrigerated, then warmed over low heat or microwaved before pouring into tart shells.)
- Divide caramel while still warm among cooled tart shells and let sit until caramel is set, at least 45 minutes.
- Chocolate ganache glaze: In saucepan, bring cream to a boil. Place chopped chocolate in a bowl. Pour hot cream over chocolate and let sit for 2 minutes, then whisk until smooth. Pour some of the still-warm glaze over each tart. Let glaze set at room temperature for at least 2 hours before serving. Sprinkle with salt, if desired, just before serving.

- Place cookies into plastic bag and smash until fine crumbles form, or use a food processor and make it as fine as possible.
- In a large bowl, combine cookie crumbs and melted butter and mix until it clusters.
- In a cupcake tin, put a spoonful of the crumb mixture and form into crusts.
- Freeze for 2 hours.
- In a medium saucepan, heat sugar and water until amber brown. Do not stir!
