A friend from church gave me this apple coleslaw recipe that her grandmother handed down to her. The flavors complement each other well, while the fruit creates a refreshing change of pace from the usual coleslaw. -Jan Myers, Atlantic, Iowa

4 cups shredded cabbage
1 large apple, chopped
3/4 cup raisins
1/2 cup chopped celery
1/4 cup chopped onion
1/4 cup mayonnaise
2 tablespoons lemon juice
1 tablespoon sugar
1 tablespoon olive oil
1/2 teaspoon salt
1/8 teaspoon pepper

Steps:

  • In a serving bowl, combine the cabbage, apple, raisins, celery and onion. In a small bowl, combine the remaining ingredients. Pour over cabbage mixture and toss to coat. Cover and refrigerate for at least 30 minutes.

1/4 cup cider vinegar
1 cup mayonnaise
1/3 cup poppy seeds
1/3 cup honey
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1 medium cabbage, cored, finely shredded
2 large carrots, peeled, julienne
1 bunch scallions, thinly sliced
1/2 cup finely minced parsley leaves, optional
4 Fuji apples, peeled, cored, julienne

Steps:

  • Prepare the Poppy Seed Dressing. In a medium bowl, combine all the ingredients together until well blended. Set aside.
  • Prepare the salad. In a large bowl, combine the cabbage, carrots, scallions, parsley, and apples. Pour in the reserved dressing and toss until well blended. Refrigerate at least 1 hour before serving, mixing the salad at least once to evenly distribute the dressing.

1 tablespoon butter
1 medium onion, halved and thinly sliced
1 Gala or Fuji apple, halved, cored, and sliced
1 head red cabbage (2 pounds), cored, quartered, and thinly sliced
Coarse salt and ground pepper
3 tablespoons cider vinegar
4 teaspoons sugar
1/2 cup water

Steps:

  • In a large Dutch oven or heavy pot, melt butter over medium. Add onion and apple; cook, stirring, until onion softens, 4 to 6 minutes. Stir in red cabbage and season with salt and pepper. Add vinegar, sugar, and water. Bring to a boil; reduce to a simmer, cover, and cook until cabbage is tender, 20 to 25 minutes. Season with salt, pepper, and sugar.

2 cups finely shredded cabbage
1 medium carrot, grated
1/2 sweet green pepper, chopped
1 apple, chopped
2 green onions, chopped
salt and pepper
1/4 cup plain yogurt
2 tablespoons light mayonnaise
1 teaspoon fresh lemon juice
1/4 teaspoon dried dill (or 2 tbsp fresh dill, chopped, I often omit this if there are people who don't like dill)

Steps:

  • In serving bowl, combine cabbage, carrot, green pepper, apple and onions.
  • Yogurt Dressing:.
  • Combine yogurt, mayonnaise, lemon juice and dillweed, mixing well.
  • Pour over salad and toss to mix.
  • Season with salt and pepper to taste.
  • Make Ahead: Salad can be covered and refrigerated for up to one day.
  • Nutrition Bonus: One serving is a very high source of vitamins A and C, and a high source of folacin.

12 ounces carrots, peeled and finely grated
2 apples
1 tablespoon lemon juice
1 large orange
3 tablespoons olive oil
4 tablespoons sunflower oil
3 tablespoons lemon juice
1 garlic clove, minced
4 tablespoons plain yogurt
1 tablespoon fresh mixed herbs, chopped, such as tarragon, parsley, chives
salt & freshly ground black pepper

Steps:

  • Place the carrot in a large serving bowl.
  • Quarter the apples, remove the core and slice thinly. Sprinkle with lemon juice to stop discoloration then add to the carrots.
  • Using a sharp knife, remove the peel and pith from the orange and then separate into segments. Add these to the carrot and apple mixture.
  • To make the dressing, place all the ingredients in a jar with a tight fitting lid and shake vigorously to emulsify.
  • Just before serving, pour the dressingover the salad and toss well.

2 pounds green cabbage, cored and cut in 1-inch strips
4 tablespoons butter
3 onions, sliced 1/4-inch thick
3 large tart apples, peeled, cored and sliced 1/4-inch thick
2 or 3 celery stalks, thinly sliced
1/2 teaspoon caraway seed
6 scallions, thinly sliced

Steps:

  • Bring a large pot of well-salted water to a boil. Add the cabbage and cook for about 30 seconds, until barely wilted. Drain in a colander under cold running water until cool, and pat dry.
  • In a wide, heavy-bottomed pot, melt butter over medium heat. Add onions, season well with salt and pepper, and cook until softened, about 5 minutes.
  • Turn up the heat and add apples. Continue to cook, stirring constantly, allowing onions and apples to brown a bit, until apples are cooked through, 5 to 8 minutes. Stir in celery and caraway, then transfer to a large mixing bowl.
  • Add cabbage and toss gently. Adjust seasoning and transfer to an oven-proof serving dish. If not serving immediately, keep at room temperature for 2 to 3 hours, or refrigerate and bring to room temperature, before heating in a 400-degree oven for 10 minutes. To serve, sprinkle with the scallions.
