- In a large bowl, whisk together the mayonnaise, sour cream, lemon juice, vinegar, honey, salt, and pepper.
- Add the green cabbage, red cabbage, and carrot, and toss to coat. Cover and chill until ready to serve.

SERIOUSLY GOOD HOMEMADE COLESLAW
With a generous amount of acidity from apple cider vinegar and Dijon mustard, our coleslaw recipe is anything but dull. Instead, it is packed with fresh, lively flavors that wake up anything you serve with it. Unlike some of the more traditional or popular recipes for coleslaw, we skip the addition of sugar to our coleslaw dressing. Try this as a topping to sandwiches, served next to ultra-savory meats, like braised beef or pork. Or, mound some on top of your next hot dog or hamburger. Sugar: We find that the cabbage and carrots are sweet enough. If you disagree, add a teaspoon or two of sugar (or honey) to the dressing before mixing with the cabbage and carrot.

Steps:
- Quarter the cabbage through the core, and then cut out the core. Cut each quarter crosswise in half and finely shred. Place the shredded cabbage in a very large bowl (you will have 6 to 8 cups).
- Add the shredded carrot and parsley to the cabbage and toss to mix.
- In a separate bowl, stir the mayonnaise, vinegar, mustard, celery seeds, salt, and pepper together. Taste for acidity and seasoning, then adjust as desired. If the dressing tastes too tart and you prefer a sweeter coleslaw, stir in the optional sugar.
- Pour two-thirds of the dressing over the cabbage and carrot then mix well. (Clean hands are the quickest tool).
- If the coleslaw seems dry, add a little more of the dressing. Eat right away or let it sit in the refrigerator for about an hour to let the flavors mingle and the cabbage to soften.

SWEET AND TANGY COLESLAW

- In a small saucepan combine the sugar and vinegar and heat, stirring occasionally, until sugar is dissolved. Set aside to cool completely before proceeding.
- Assemble remaining ingredients in a large, non-reactive mixing bowl and pour cooled sugar-vinegar mixture over all. Toss well to combine, cover with plastic wrap, and refrigerate overnight before serving.
- When ready to serve, season with salt, freshly ground black pepper, and Essence, to taste, and toss thoroughly to combine.

COLESLAW - NOT SWEET BUT VERY TASTY
I don't like sweet coleslaw nor does anyone in my immediate family, so I found a recipe in BH&G cookbook and since the book has been packed away for moving, I had to make up my own.

- Shred the cabbage (how you like it, I usually do mine fine) and carrot. Dice the onion. In a separate bowl, mix the mayo, vinegar, sugar and celery seed. Mix dressing with cabbage, carrot and onion and allow to marinate in the fridge for an hour up to a day or so and enjoy.
- I don't/have not substituted any alternative sweeteners other than honey or xylitol for the sugar as a great deal of the "other" sweeteners happen to be neuro-toxins. The honey does give it a different flavor of sorts, but was still OK. the Xylitol version tasted just the same and can be perfect for the diabetic in your family.
- For a little more bite, you can up the vinegar content and/or up the celery seed content.

SWEET 'N' CREAMY COLESLAW

- In a large saucepan, combine the sugar, flour, cornstarch, mustard, salt and pepper. Gradually stir in vinegar and water. Add egg and milk. Cook and stir until mixture comes to a boil. Cook 2 minutes longer or until slightly thickened. Cool to room temperature, stirring several times., In a large bowl, combine the brown sugar and cream. Stir in mayonnaise. Add cooked dressing; mix well. In several large bowls, combine the cabbage, carrots, celery and green onions. Add dressing and toss to coat.
