Perfect Prime Rib roast with a spiced coffee marinade will be sure to impress your holiday guests.

1 Prime Rib Roast
For the rub:
1/2 red wine
2 Tb ancho chili powder
1/4 cup finely ground espresso
1 tsp hot paprika
2 tsp dry mustard
2 tsp kosher salt
1 tsp ground black pepper
1 tsp ground roasted coriander
1/2 tsp garlic powder
1 1/2 tsp dried oregano
1 tsp ground ginger
For the Gravy:
1/2 c red wine
2 c beef broth
1/2 c water
3 Tb cornstarch (FOR PALEO: Substitute tapioca/cassava flour)

Steps:

  • Combine the rub ingredients in a small bowl and whisk until they form a gorgeous paste. Place the roast in a large zip-top bag. Pour the thick paste over the roast and slather it all over. Press as much air as possible from the bag and seal it tight. Refrigerate overnight. The next day, place your roast on the counter and let it come to room temperature for about an hour before roasting.
  • Heat your oven to 450 degrees.
  • Place your roast in a shallow roasting pan on a rack, fat side up. Insert an oven-safe thermometer into the thickest part, making sure that the tip is snuggly located in meat. (Never place a thermometer in fat or against bone.)
  • Roast it in your oven for 15 minutes.
  • Turn the heat down to 325 degrees. Roast for an additional 2 hours for it to be cooked to medium, or until the thermometer reads 135-140 degrees.
  • Transfer the roast to a platter and allow it to rest for 15 minutes before carving it. To make a gravy from the beautiful drippings, skim off any excess fat and then place your roasting pan over your stove burner. Add in 1/2 cup of red wine and 2 cups of beef broth and whisk over medium heat until it comes to a boil. Whisk together in a small dish, 1/2 cup water and 3 tablespoons of cornstarch. Add them to the pan and whisk while the gravy thickens, about 5 minutes.
  • Slice your beautiful roast and serve with the rich gravy.
  • Let the "Ooo's!" and "Ahhh's!" ensue as you bring it to the table.

Steps:

  • Combine all spices in a bowl.
  • Preheat oven to 425 degrees F.
  • Preheat a cast iron pan over high heat. Brush each side of the steak with oil and then season each side liberally with salt and pepper. Rub 2 tablespoons of the coffee rub onto 1 side of each steak. Cook the steak, rub side down until golden brown, about 3 to 4 minutes. Flip the steak over, cook for 2 minutes and then transfer to a baking sheet and cook in the oven to medium-rare doneness, about 8 to 10 minutes. Remove and let rest 5 minutes before slicing.

1/2 cup kosher salt
4 cups brewed French roast coffee
1 standing rib roast, 3-bones, about 6 pounds
1/4 cup dark brown sugar
1 1/2 teaspoons ground sage
1 1/2 teaspoons Hungarian paprika
2 tablespoons chopped fresh parsley
1 1/2 teaspoons garlic powder
1/2 teaspoon ground white pepper
1/4 cup plain bread crumbs
1/4 cup freshly ground French roast coffee, or espresso
1 1/2 teaspoons kosher salt
Freshly ground black pepper

Steps:

  • For the brine: In a large bowl, add the water, salt, and coffee. Stir to dissolve the salt and add the rib roast. If the liquid does not cover all of the meat, flip the roast halfway through the marinating time. Or, consider pouring the marinade into a large plastic bag, adding the rib roast, and then sealing tightly so that the roast is completely surrounded by the brine. Refrigerate for 8 hours or overnight.
  • Preheat the oven to 325 degrees F.
  • For the rub: In a small bowl, mix together the brown sugar, sage, paprika, parsley, garlic powder, white pepper, bread crumbs, coffee grounds, salt, and a nice grind or two of freshly ground black pepper.
  • Remove the roast from the refrigerator and discard the brining liquid. Pat the roast dry with a paper towel. Using your hands, coat the roast on all sides with the rub, gently massaging it into the flesh. Let it rest on the counter to come to room temperature, about 1 hour.
  • Place in a roasting pan and put it in the oven. Cook until medium-rare, 125 degrees F, about 1 hour and 40 minutes. Remove from the oven and cover lightly with aluminum foil while the meat rests, 15 minutes. Slice between the ribs and serve.

1 prime rib roast, 10 to 12 lb.
4 Tbs. coffee and spice rub
Kosher salt, to taste

Steps:

  • Tie kitchen string around the roast in between each bone. Rub the roast on all sides with the coffee and spice rub and salt. Let stand at room temperature for 1 hour. (The roast can be seasoned up to 8 hours in advance and refrigerated; remove from the refrigerator 1 hour before cooking.) Preheat a gas grill on the rotisserie setting. Place the roast on the rotisserie spit, making sure it is threaded through the center of the roast; tighten with clamps according to the manufacturer's instructions. Place the spit on the rotisserie, centering the roast in front of the heat source; adjust if needed. Place a baking sheet underneath the roast to catch the drippings. Cover the grill and roast until an instant-read thermometer inserted into the center of the roast, away from the bone, registers 130°F for medium-rare, 2 1/2 to 3 hours. Remove the roast from the spit and place the meat on a carving board. Cover tightly with aluminum foil and let rest for 20 to 30 minutes. Carve the roast into thin slices and arrange on a warmed platter. Serve immediately.

I had never made prime rib before, but this slow-roasted recipe is so easy. It originated from my mother-in-law who makes prime rib often; with a lot of research, I have made a few changes and prefer my recipe with the alterations.

½ cup soy-based liquid seasoning (such as Maggi®)
½ cup Worcestershire sauce
3 cloves garlic, minced, or more to taste
9 pounds bone-in prime rib, cut and retied to the bone

Steps:

  • Mix liquid seasoning and Worcestershire sauce together with garlic in a bowl. Pour over prime rib in a container. Marinate, turning every 30 minutes, 1 to 2 hours.
  • Preheat the oven to 450 degrees F (230 degrees C).
  • Place prime rib on a baking rack set inside a large baking dish.
  • Bake in the preheated oven until all juices are sealed in, about 45 minutes. Reduce temperature to 325 degrees F (165 degrees C) and continue roasting until an instant-read thermometer inserted into the center reads 130 to 140 degrees F (54 to 60 degrees C), about 2 hours more. Let sit 30 minutes to 1 hour before slicing.
