Steps:
- Mix coffee, sugar and half & half.
- Fill 4 tall glasses about halfway.
- Add 1 scoop of ice cream to each, then fill up with club soda.
- Top with whipped cream.

ICE CREAM SODAS
Steps:
- Pour 3 tablespoons of Raspberry or Chocolate Syrup or 1 teaspoon vanilla plus 3 tablespoons heavy cream in a tall ice cream soda glass. Whisk with a fork, then slowly, while still whisking, add the club soda until the glass is three-quarters full. Add 2 scoops of ice cream, add soda to the top of the glass, and serve with a spoon and a straw.
- Combine the cocoa, salt, sugar and 1 cup of water in a medium saucepan and bring to a boil. Add the coffee granules, and simmer for 5 minutes. Pour the syrup into a bowl and add the vanilla. Cover and refrigerate until ready to use.
- Combine the raspberries, sugar, and lemon in a container. Cover and refrigerate for at least 2 hours, or overnight. Strain the syrup into a pitcher, pushing down on the berries to extract all the liquid.
COFFEE ICE CREAM
Steps:
- Combine the cream, milk, sugar, and coffee in a medium, heavy saucepan. Bring to a gentle boil over medium heat. Remove from the heat.
- Beat the egg yolks in a medium bowl. Whisk 1 cup of the hot cream into the egg yolks. Gradually add the egg mixture in a slow, steady stream, to the hot cream. Cook over medium-low heat, stirring occasionally, until the mixture thickens enough to coat the back of a spoon and reaches 170 degrees F. on an instant-read thermometer, about 5 minutes. Remove from the heat and strain through a fine mesh strainer into a clean container. Cover with plastic wrap, pressing down against the surface to keep a skin from forming. Chill in the refrigerator for 2 hours.
- Remove from the refrigerator and pour into the bowl of an ice cream machine. Freeze according to the manufacturer's instructions. After the ice cream is made, transfer to an airtight container. Cover tightly and freeze until ready to serve. Garnish with chocolate curls.

- Place very hot water in a med-sized pitcher & stir in coffee (finely ground to a powder texture) until dissolved.

- Place 3 tablespoons chocolate syrup in each of four 16-oz. glasses. Add 1/4 cup milk and 1 cup carbonated water to each; stir until foamy. Add two scoops of ice cream to each glass. Top with whipped cream if desired.

What's nice about this dessert is you can customize it for each person with whichever ice cream / sauce they prefer. It would be great for a crowd. I estimated the serving size to the sauces, but am not sure if it's right as I have not tried this yet - but wanted to put the recipe here for safekeeping.

Steps:
- Freeze a banana in the freezer overnight.
- Put the milk, half & half, and whipping cream in a medium sauce pan, and sprinkle with the gelatin, let stand one minute.
- Heat it and stir until smooth, then stir in the sugar.
- Let cool in fridge for a little while, its better to put it in the freezer for a half hour first-until its like thin pudding.
- Take out and add vanilla, cocoa powder, then sprinkle with cinnamon and instant coffee, until it's as strong as you want.
- Food process the frozen banana, then add in the rest of the mixture until smooth. (If no food processor, cut up and put in blender).
- Pour mixture in ice cream machine, for 20-25 minutes, or until its thick enough.
- Eat it!
