CITRUS GELATO

Steps:
- Whisk the sugar, salt and yolks in a heavy medium stainless steel or enamel saucepan. Gradually whisk in the cream. Then whisk in the milk, buttermilk and citrus zests. Using a wooden spoon, stir the custard constantly over medium heat until it thickens enough to coat the back of the spoon and a thermometer registers between 180 and 185 degrees F, 8 to 10 minutes.
- Immediately scrape the custard into a 4-cup measuring cup; mix in the rum. Refrigerate uncovered until cold, about 3 hours, stirring occasionally to prevent a skin from forming. Cover until ready to freeze (can be made 1 day in advance).
- Freeze the custard in an ice cream machine according to manufacturer's instructions.
- While the custard is freezing in the ice cream machine, peel and trim the ends from the zested orange. Using a paring knife, cut along the membrane on both sides of each segment. Free the segments onto a cutting board. Cut the segments into 1/2-inch pieces. During the last 10 minutes of freezing time, add the orange segments.
- Transfer to a container; cover and freeze until ready to serve.
ORANGE GELATO
Steps:
- Finely grate the zest from the oranges and squeeze the juice. There should be about 3 tablespoons zest and 2/3 cup juice.
- In a medium saucepan, combine the water and the sugar. Cook over medium heat, stirring, until the sugar dissolves, about 3 minutes. Remove from the heat.
- In a large bowl, whisk the egg yolks until very light. Slowly add the hot sugar syrup in a thin stream, whisking constantly. Pour into a large saucepan and cook over low heat, stirring with a wooden spoon until slightly thickened.
- Strain the mixture into a medium bowl, and set it in a larger bowl partialy filled with ice water. Stir in the orange juice and zest. Let cool, stirring occasionally. (Or chill overnight in refrigerator.)
- In a large chilled bowl, using an electric mixer with chilled beaters, whip the cream until stiff peaks form. Fold the cream into the cooled orange custard mixture. Freeze in an ice cream freezer according to manufacturer's instructions. Transfer to a covered container and place in freezer until serving time. If the gelato becomes too firm, place it in the refrigerator for 30 minutes before serving.

Steps:
- In a double boiler over simmering water, combine 2 cups of cream (saving one cup for later) ,coffee beans and espresso.
- Cook, stirring occasionally, until bubbles form around the edge and the cream tastes strongly of coffee, at least 30 minutes.
- In a large bowl, whisk the egg yolks just until blended.
- In a thin stream, gradually whisk the hot cream mixture into the egg mixture.
- Place bowl over a pan of barely simmering water and cook, whisking constantly, until the mixture thickens enough to coat the back of a spoon.
- Remove from heat, stir in the sugar, and set the bowl inside a slightly larger bowl filled with ice; whisk until cool.
- Cover with plastic wrap and refrigerate for at least two hours.
- Pour the mixture through a fine-meshed sieve and stir in the remaining 1 cup of cream.
- Freeze in ice cream maker using manufacture's instruction.

Steps:
- Dissolve coffee powder in the 1/2 cup hot water.
- Whisk egg yolks and sugar in a large bowl to blend.
- Bring milk to a low boil in saucepot on stove.
- Gradually whisk in milk into the yolks mixture, to temper.
- Return to saucepot and whisk in the dissolved coffee mixture.
- Stir over medium heat until custard thickens slightly and leaves path or a ribbon mark against the back of a spoon.
- This should take about 8 minutes.
- Remove from heat and refrigerate until cold, or over night covered.
- Process in ice cream maker according to manufacturers direcions.
- Transfer to a covered container and place in the freezer.

COFFEE GRANITA A LA ORANGE
A granita is, essentially, an Italian ice, coffee flavored, in this particular case. On the richness scale, it's on the opposite end of the spectrum from ice cream since it contains no eggs or cream. A bit of sugar, yes, but in modest proportion. The method for making a granita is decidedly low tech: you simply stir the liquid periodically as it freezes, resulting in the granita's granular texture; the word, by the way, comes from the Italian grana, meaning grainy. I like to serve this as is, in small chilled bowls or cups, but it is frequently served with a dab of lightly sweetened whipped cream. Put a plate of biscotti on the table, fresh hot coffee too, and you have the perfect dessert.

Steps:
- In a medium-size bowl, stir the hot coffee, sugar, and orange zest until the sugar dissolves.
- Cool.
- Stir in the vanilla.
- Transfer the liquid to a shallow bottomed bowl or square metal cake pan and place in the freezer.
- Wait about 30 to 40 minutes, until the sides start to freeze, then stir the mixture gently with a wooden spoon, especially around the edges.
- Put the granita back in the freezer and repeat the stirring every 20 to 30 minutes, until the mixture is grainy-frozen.
- Transfer to well-chilled bowls - the chilled bowls are important, especially in summer, to prevent it from melting; in fact, chill your spoons too.
- Serve, garnished with whipped cream if desired.
