COFFEE MUG CAKE
I was wanting a small serving of cake, but didn't want to make the whole box. This is what I came up with. It came out light and fluffy and hit the spot. I think it could be used with any boxed cake, but I used a Betty Crocker brand. Also, if you decide to use the real egg try beating the whole egg in a separate bowl and then pouring off about half.

Steps:
- Using a 10 to 16 ounce microwave safe coffee mug, spray the insides with the non stick spray.
- Add 7 TBS of the box cake mix. (Save the rest of the mix in a sealed container for later use.).
- Next add the oil and water to the cup and mix thoroughly.
- Finally, add the egg and mix well.
- Place in microwave and microwave on high for 3 minutes. The cake may rise above the top of the cup, but don't worry. When finished, check center with a toothpick. If pick comes out clean, then the cake is done.
- Allow to cool for several minutes and then turn cake out onto a dish or serve right in the coffee mug.
- Remember microwave strengths may vary and this might alter your time.

- Preheat oven to 350 degrees.
- Cream the butter with an electric mixer on high speed until smooth (about 1 minute). Add sugar and beat on high until thouroughly blended (another minute).
- In a separate bowl, mix the coffee powder, vanilla and egg yolks until the coffee is dissolved. Thoughoughly blend this into the butter/sugar mixture. Then add the flour and mix on high until well blened, about 1 to 2 minutes, scraping the sides of the bowl. Drop by the teaspoonful 1 1/2 to 2 inches apart onto a greased cookie sheet. Bake until lightly browned on the edges, about 16 to 18 minutes. Cool on the cookie sheet until they start to harden (about 3 to 5 minutes) and finish cooling on a wire rack. Store in an airtight container.

- Position racks in the upper and lower thirds of the oven; preheat to 350 degrees F. Line 2 baking sheets with parchment paper. Coarsely grind the coffee beans in a coffee grinder. Combine 1 tablespoon ground coffee in a small bowl with the turbinado sugar; set aside. Transfer the remaining coffee to a medium bowl and whisk in the flour, salt, baking powder and cinnamon.
- Beat the butter and brown sugar in a large bowl with a mixer on medium-high speed until light and fluffy, about 3 minutes. Beat in the egg. Reduce the mixer speed to low and beat in the flour mixture until combined.
- Roll tablespoonfuls of dough into balls, then roll each ball in the coffee-sugar mixture. Arrange 2 inches apart on the prepared pans.
- Bake, switching the pans halfway through, until the cookies are just set around the edges but the centers are still soft, about 18 minutes. Let cool 3 minutes on the pans, then transfer to racks to cool completely.
- Make the glaze: Whisk the confectioners' sugar and 2 teaspoons milk in a small bowl until smooth. Gradually stir in up to 2 more teaspoons milk until the glaze is thick but pourable. Spoon the glaze over the cookies. Let set, about 10 minutes.

- Preheat oven to 350°F. Coat a 9×13 baking dish with nonstick spray. Set aside.
- In a medium bowl prepare the cinnamon filling by whisking together the brown sugar, flour, and cinnamon until combined. Set aside.
- To prepare the crumb topping, mix together the melted butter, brown sugar, cinnamon, and flour in a medium bowl until it resembles coarse crumbs. Use your hands to mix to form larger crumb pieces. Set aside.
- For the cake, mix the butter, granulated sugar, and light brown sugar in the bowl of your stand mixer fitted with the paddle attachment on medium speed for 2 minutes until light and fluffy.

- Heat oven to 170C/150C fan/gas 3. Line 18 holes in 2 bun tins with fairy cake cases. Beat the sugar with the butter until light and creamy. Beat in the eggs, one by one, adding 1 tbsp flour at the same time. Beat in the rest of the flour along with the espresso. Spoon into the cake cases and bake for 17 mins, swapping the trays after 12 mins. Cool on a wire rack.

In a coffee cup add 1 tablespoon of butter and melt in microwave (about 20 seconds)..remove from microwave and add; white sugar, brown sugar, several drops of vanilla extract and stir until blended well...add egg yolk, stir again, then add the scant 1/4 cup of flour and salt, stir one more time before adding the 2 T. of chocolate chips and stir one last time. YOU MUST DO IT IN THIS ORDER...or it won't turn out right. (trust me I know..I did it my way, and oh brother what a mess...directions are for a reason...learned my lesson..lol!)~Picture to the left is the melted butter..before adding other ingredients.
- 2. Microwave for 50-60 seconds..if using a large base cup then 50 seconds, if using a shallow deep cup then 60 seconds. ~Picture to the left is of the batter once you add all the other ingredients except the chocolate chips..which you add right after blending as shown in the cup.
- 3. REmove from Microwave and cool for a couple of minutes....eat immediately, or add vanilla ice cream to the mug with chocolate syrup or whipping cream and a cherry on top.
- 4. I ate mine after about 2 minutes out of the microwave plain..it was soft, yet it was amazing..as I ate it and it started cooling it got the crunch just like a baked chocolate chip cookie ( I have a picture of a spoonful of the cooled crunchy cookie on it, below the main picture)...What a great find, I will do this again and again...it is that good!

- In a mixing bowl, cream butter, shortening and sugars.
- Dissolve coffee in water.
- Add to creamed mixture with egg and melted chocolate.
- Mix well.
- Combine flour, cinnamon and salt.
- Gradually add to creamed mixture (dough will be sticky).
- Shape into two 6 1/2 inch rolls.
- Wrap each in plastic wrap.
- Refrigerate for 4 hours.
- Unwrap and cut into 1/4 inch slices.
- Place 2 inches apaprt on ungreased baking sheets.
- Bake at 350 degrees for 10-12 minutes or until firm.
- Remove to wire racks to cool.
- In a small saucepan over low heat, melt chocolate chips and shortening.

COFFEE CHOCOLATE CHUNK COOKIES
Steps:
- For the cookies: Melt 1 stick of butter in a medium skillet over medium heat. Let it bubble up for 3 to 4 minutes, swirling the pan to keep the butter moving around. When the butter is a medium golden brown, remove the pan from the heat (the butter will continue browning in the pan over the next 30 seconds or so). Pour the butter and any solids in the bottom of the pan into a heatproof bowl and allow it to cool completely, about 30 minutes.
- Beat the remaining stick of butter, the brown sugar and granulated sugar in a large bowl with a mixer on medium-high speed until fluffy, 3 to 4 minutes. Reduce the speed to low and beat in the eggs and vanilla until smooth, scraping down the bowl if necessary to make sure everything is incorporated.
- With the mixer on medium-low speed, slowly drizzle in the cooled browned butter and mix until combined, about 1 minute.
- In a separate bowl, whisk the flour, instant coffee, baking soda and salt. With the mixer on low speed, slowly add the flour mixture to the dough and beat until totally incorporated, about 2 minutes. Stir in the chocolate chunks and pecans, if using, with a wooden spoon.
- Preheat the oven to 375˚ and line 2 baking sheets with parchment paper. Scoop heaping tablespoonfuls of dough onto the prepared pans, about 2 inches apart. Refrigerate until firm, about 15 minutes. Bake the cookies until golden brown, 9 to 10 minutes. Let cool 5 minutes on the baking sheets, then remove to a rack to cool completely.

- Lightly spray coffee cups (or tins) with nonstick spray.
- Combine flour, Splenda, baking powder, baking soda and cinnamon in mixing bowl.
