I found this recipe in one of my cocktails cookbooks and got a chance to make it today....YUM!

Number Of Ingredients 6

Ingredients

8 fl ounces strong cold coffee
4 Tbsp heavy cream -or- 2 tbsp evaporated milk
8 fl ounces cold soda water
2 scoops chocolate ice cream
GARNISH
chocolate covered coffee beans, roughly chopped

Steps:

1. Pour the coffee into tall glasses. Add the heavy cream or evaporated milk. Add the soda water and stir. Place a scoop of ice cream into the mixture. Garnish with some of the chocolate covered coffee beans. Serve with a long spoon or straw.
2. VARIATIONS: Substitute chocolate mint, vanilla, coffee, or cinnamon ice cream. Garnish with chocolate shavings, whipped cream dusted with cinnamon, fresh mint leaves.

1/2 cup chocolate syrup, such as Fox's U-Bet Chocolate Syrup
8 scoops French vanilla ice cream
2 cups cold club soda
Whipped cream, for garnish
Maraschino cherries, for garnish

Steps:

In four 16-ounce glasses, squirt 1 tablespoon of the chocolate syrup in the bottom of the glasses. Scoop out 2 scoops of ice cream in each and top with another tablespoon of the chocolate syrup. Fill each glass with club soda, and top with whipped cream and a cherry.

2 (7 ounce) bottles club soda, well chilled (no subsitutes)
1 pint vanilla ice cream, softened (or use coffee-flavored ice cream)
sugar (optional)
cinnamon

Steps:

In a large bowl or glass pitcher combine the brewed coffee and chilled club soda; stir in ice cream.
Sprinkle with cinnamon.
Serve immediately.
Delicious!

2 1/2 cups cold carbonated water
4 scoops ice cream, of your choice
additional whipped cream (optional)

Steps:

For each serving, place 3 tablespoons chocolate syrup in a 16-oz. glass. Stir in 1 tablespoon of whipped cream and 1-1/4 cups water until foamy. Add two scoops of ice cream. Top with additional whipped cream if desired.
