SOUTHERN LIVING'S CREAM CHEESE POUND CAKE
From the Big Book of Christmas Baking, courtesy MrZ, who describes it as being both "moist and delicious". Use real butter in this recipe. It will make a difference.

Steps:
- Preheat oven to 300°F.
- Use an electric mixer to mix both butter and cream cheese until creamy.
- Gradually add sugar and beat for 5 minutes, then add eggs one at a time, allowing each to incorporate before adding more. Stir in vanilla.
- Sift flour and salt and add gradually to the mixer, beating until well blended.
- Pour batter into a well greased and floured bundt pan or tube cake pan.
- Place 2 cups water in an ovenproof container on the rack in the oven next to the cake.
- Bake cake at 300 for an hour and 45 minutes, or until a toothpick can be removed cleanly.
- Place pan on a wire rack and cool for 15 minutes, then remove the cake from the pan and complete cooling on the wire rack.

TRUE POUND CAKE
Follow step-by-step, photo illustrated instructions to make this True Pound Cake. Consisting of one pound each of Eggs, Flour, Sugar and Butter, this recipe is referred to as the "True" recipe for making pound cake. Dating back to the 1700's, this version is a bit more dense than today's pound cakes, but well worth adding to your recipe box.

Steps:
- Butter and eggs should be at room temperature before mixing.
- Weigh out one pound, or 3 ¾ cups of All-Purpose Flour
- Remove 7 Tablespoons of the flour and place back in bag.
- Add 7 Tablespoons of Corn Starch to the flour.
- Sift the flour and corn starch together, 3 to 4 times, set aside.
- Sift the Confectioners Sugar into another small mixing bowl.
- In a large mixing bowl, beat the softened butter on high speed until light and fluffy, about 5 minutes.
- Gradually add sugar to butter, beating continuously, until it's well incorporated, light and fluffy.
- Add eggs, one at a time, beating briefly, but well, after each addition.
- Scrape down the sides of the bowl as needed.
- Gradually add flour, beating briefly, but well, after each addition, until mixture is smooth.
- Add flavoring, beat just until incorporated.
- Use a spatula to scrape down the sides of the bowl and fold together a time or two.
- Grease and flour pan, making sure you don't leave any lumps of flour in the corners.
- Spoon the mixture evenly into the prepared pan. Level top gently with a spoon.
- Gently spread batter up the sides and center cone of the pan, pulling batter from the middle.
- Place cake on middle rack in a COLD oven.
- Bake at 275ºF for 2 hours, or until done. Test by inserting a wooden toothpick into center of cake. Cake is done when it comes out with just a few moist crumbs attached.
- Remove pan from oven and let cool on a wire rack, for 20-30 minutes.
- Carefully flip pan over and remove cake.
- Let cake cool completely before slicing.
- Enjoy!
SOUTHERN COFFEE CAKE
This is from the book, Heavenly Hash. It sounds delicious. The author of the recipe says, "Do not hesitate to make this the morning of use, it is very easy to do. Everyone raves about it." With a total of ten eggs in this recipe, they had better!

Steps:
- Combine first layer ingredients in mixing bowl. Mix well and spread batter evenly in a well greased 9x13 inch pan.
- Combine second layer ingredients in a mixing bowl.
- Mix and beat very well.
- Pour the mixture on top of the first layer and spread evenly.
- Bake at 350 for 35-40 minutes.
- When cool, sprinkle the top with powdered sugar if desired.

MOIST CHOCOLATE POUND CAKE
This rich, supremely chocolatey, moist pound cake is so simple and yet so impressive, especially when frosted with my Salted Caramel Frosting, which perfectly complements the dense sweetness of the cake. If you have any leftovers, don't refrigerate, just leave tightly covered at room temperature.

- Cream butter, sugar and vanilla in a large bowl for five minutes. Add eggs, one at a time, beating well after each addition.
- Dissolve coffee granules in hot water, combine with buttermilk, set aside.
- Combine flour, cocoa, salt and baking powder; add alternately with buttermilk to creamed mixture, beating just until blended. Pour batter into a greased and floured Bundt or tube pan.
- Bake at 325 degrees for 1 hour and 20 minutes, or until the cake tests done. Remove from oven and cool 20 minutes, then remove from pan.
- Cool completely before frosting, or sprinkling with confectioners' sugar.
- NOTE: to make a buttermilk substitute, add 1 tablespoon vinegar to a measuring cup, add milk until it reached the 1 cup mark. Let stand for 5 minutes, and use as buttermilk!

- 1. Prepare Pecan Streusel: Combine 1st 3 ingredients in a bowl. Cut in butter with pastry blender or fork until mixture resembles small peas. Stir in 3/4 cup pecans - set aside
- 2. Prepare Pound Cake: Preheat oven to 350 degrees. ** Bake 1 cup of pecans in a single layer in a shallow pan 5 - 7 minutes or until lightly toasted and fragrant, stirring half-way through . Remove and reduce oven temp to 325. Cool pecans 20 minutes (these will be combined in step 5 with sugar and additional cinnamon)
- 3. Beat butter at med speed with heavy duty electric stand mixture until creamy. Gradually add granulated sugar beating until light and fluffy. Add eggs 1 at a time until just blended after each addition
- 4. Stir together flour and baking soda. Add to mixture alternately with sour cream beginning and ending with flour mixture. Beat at low speed until just blended after each addition. Stir in vanilla
- 5. Pour half of batter into a greased and floured 10 inch (12 cup) tube pan *** Combine TOASTED pecans, brown sugar and cinnamon and sprinkle over batter. Spoon remaining batter over pecan mixture and sprinkle with pecan streusel
- 6. Bake 325 for 1 hour and 20 minutes to 1 hour and 30 minutes or until a long wooden pick instered in the enter comes out clean. Cool in pan on wire rack 10-15 minutes. Remove from pan to wire rack and cool completely (at least an hour)
- 7. *** I used a Bundt pan - watch closely ** I did not do this - I used part of the streusel
