Number Of Ingredients 9

2 cups flour
3 teaspoons baking powder
1/3 cup margarine
1 egg, beaten
1/4 cup milk
1/2 cup cold coffee
1/2 teaspoon almond extract
1/2 teaspoon vanilla extract
liquid sugar substitute equivalent to 1 cup sugar

Steps:

  • Sift together the flour and baking powder. Fold in the margarine and set aside.
  • In a separate bowl, place the egg, milk, cold coffee, almond, vanilla and sugar substitute and mix well. Add in the flour mixture and beat until the batter is smooth.
  • Pour the batter into a greased 13 x 9 inch pan.
  • Bake for 30 minutes at 325 deg F.
  • Tips:
  • To check if the cake is done, insert a toothpick or knitting needle through the center. If the toothpick or needle comes out clean, you'll know your cake is ready.

1/4 c non-fat milk or milk
1/2 tsp almond extract
1/2 tsp vanilla extract
1 c sugar or spenda sugar (24 packets)

Steps:

  • 1. Sift together the flour and baking powder. Fold in the margarine and set aside. In a separate bowl, place the egg,milk,cold coffee,almond extract,vanilla extract and sugar or Splenda sugar and mix well. Add in the flour mixture and beat until the batter is smooth.
  • 2. Pour the batter into a greased 13x9 inch pan. Bake for 30 minutes at 325F. Tips:

1/4 cup butter, softened
3/4 cup Splenda granular
1/4 cup unsweetened applesauce
1/4 cup skim milk
2 eggs
1 teaspoon vanilla
2 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
3 cups strawberries, sliced
1/4 cup Splenda brown sugar blend
1/2 cup walnuts, chopped and toasted

Steps:

  • Preheat oven to 350°F.
  • Combine neufchatel, butter and Splenda granular. Beat until light and fluffy.
  • Stir in unsweetened applesauce, skim milk, eggs and vanilla.
  • Sift together flour, baking powder, baking soda and salt; add to neufchatel mixture and mix until smooth.
  • Spread the batter in a greased and floured 13x9 inch baking pan. (The batter is VERY thick. It works best to put little blobs of it across the whole pan and then spread them with a knife.).
  • Spread berries evenly over batter.
  • Mix Splenda brown sugar and nuts; sprinkle evenly over strawberries.
  • Bake 40 minutes. Serve warm or cold.
