Steps:
- Add all ingredients, except coconut flakes and honey, in a cocktail shaker with ice.
- Pour honey onto a plate.
- Lay out coconut on a plate.
- Dip the rims of chilled glasses into honey and roll in coconut.
- Shake and pour into chilled martini glasses to serve.
- NOTE: For a non-alcoholic version, omit the vodka and the banana Schnapps and substitute the ice with 1 banana. Puree the mixture in a blender.
COCONUT MOJITO
Steps:
- Gather the ingredients.
- If you like, rim a double old-fashioned glass with lime sugar: In a shallow dish, combine the finely grated lime zest with the sugar. Wet the glass rim with a piece of lime then roll the rim in the lime sugar, shaking off any excess.
- In a cocktail shaker, combine the torn mint leaves, fresh lime juice, and raw sugar. Muddle well to dissolve the sugar.
- Add the rum and cream of coconut, and fill the shaker with ice.
- Shake vigorously for at least 30 seconds.
- Strain into the rimmed glass over fresh ice.
- Top with soda and garnish with the mint sprig and lime slice.
