2 teaspoons lemon juice
2 teaspoons cream of coconut
1 teaspoon maraschino juice
crushed ice

Steps:

Mix in a blender on low speed for 15 seconds.
Strain into a cocktail glass.

Ingredients

4 large egg yolks
One 14-ounce can sweetened condensed milk
1/2 cup bottled Key lime juice (you can use regular lime juice in a pinch)
1 tablespoon grated lime zest
2 tablespoons blanco tequila
1 teaspoon coconut extract
One 9-inch store-bought graham cracker crust
Whipped Cream, for garnish, recipe follows
1 cup heavy cream
3/4 cup powdered sugar

Steps:

Preheat the oven to 350 degrees F.
Whisk the egg yolks in a medium bowl until smooth. Add the sweetened condensed milk, Key lime juice, lime zest, tequila and coconut extract. Stir until smooth, then pour into the premade crust.
Bake on the middle rack until the center of the pie is just set, 20 to 25 minutes. Remove from the oven and let cool for 1 hour, then refrigerate for another hour until chilled.
Cut into slices and serve, garnished with Whipped Cream.
Whip the heavy cream to just shy of soft peaks. Add the powdered sugar and whip until fully incorporated and the cream is at soft peaks.

2 ounces coconut puree, thawed or unsweetened coconut cream
2 ounces anejo tequila, such as Herradura
1 ounce lime juice
1/2 ounce triple sec
Dash of simple syrup
Crushed ice
Lime slice, for garnish

Steps:

Combine the coconut puree, tequila, lime juice, triple sec and simple syrup in a cocktail shaker with crushed ice. Shake for 10 seconds. Strain into a martini glass and garnish with a lime slice.

Setting out to duplicate the coconut margaritas we had in Costa Rica, my first attempt was awful! I surfed the internet for a good recipe with little luck. I then took what I'd learned from my first nasty try and the ideas I picked up online and after about 5 or 6 attempts I came up with this. Enjoy!

2 cups ice
¾ cup sweetened coconut cream
4 ½ fluid ounces tequila
1 ½ fluid ounces triple sec
¼ cup sweetened flaked coconut

Steps:

Fill a blender with ice; add the coconut cream, tequila, and triple sec; blend at high speed until smooth. Scatter the coconut onto a plate. Wet the rims of four glasses. Dip the glass rims in the coconut. Serve the margaritas in the prepared glasses.
