CHOCOLATE COCONUT SNOWBALLS

Chocolate Coconut Snowballs image

This recipe is from the back of an old bag of "M & M's" Semi-Sweet Chocolate Baking Bits. I am glad I saved it, because these are great cookies and the recipe is no longer available, even on their website. This recipe is one of thirty or so varieties that I make every Christmas and it is always a favorite. *Added 12/30/07: I don't add the M & M baking bits AFTER the dough is refrigerated. I never understood why that was necessary and since I stopped doing it I've noticed no difference. I couldn't find the M & M's this year, so used a 10 oz. bag of Hershey Kissables and they came out just as good.* --K

Provided by swissms

Categories     Dessert

Time 47m

Yield 40 cookies, 20 serving(s)

Number Of Ingredients 11

2 1/2 cups unbleached all-purpose flour (12 1/2 ounces)
1 teaspoon grated lime zest
3/4 cup superfine sugar (5 1/2 ounces)
1/4 teaspoon table salt
16 tablespoons unsalted butter, cut into sixteen 1/2-inch pieces, at cool room temperature (2 sticks)
2 teaspoons vanilla extract
2 tablespoons cream cheese, at room temperature
1 tablespoon cream cheese, at room temperature
3 tablespoons lime juice
1 1/2 cups confectioners' sugar (6 ounces)
1 1/2 cups sweetened flaked coconut, pulsed in food processor until finely chopped, about fifteen 1-second pulses

Steps:

  • Cookies:.
  • In bowl of standing mixer fitted with flat beater, mix flour, lime zest, sugar, and salt on low speed until combined, about 5 seconds. With mixer running on low, add butter 1 piece at a time; continue to mix until mixture looks crumbly and slightly wet, about 1 minute longer. Add vanilla and cream cheese and mix on low until dough just begins to form large clumps, about 30 seconds.
  • Use hands to roll dough into 1-inch balls. Place on parchment-lined baking sheets, spacing about 1 1/2 inches apart. Bake one batch at a time in 375-degree oven until lightly browned, about 12 minutes. Cool to room temperature.
  • Glaze:.
  • Whisk cream cheese and 2 tablespoons lime juice in medium bowl until combined and no lumps remain. Whisk in confectioners' sugar until smooth, adding remaining lime juice as needed until glaze is thin enough to spread easily.
  • Dip tops of cookies into glaze and scrape away excess, then dip into coconut. Set cookies on parchment-lined baking sheet; let stand until glaze dries and sets, about 20 minutes.

  • Add all of your ingredients to a food processor or high speed blender. Blitz until you have a dough.
  • Place the dough on a tray or plate on top of some baking or parchment paper and pop in the freezer for 10 minutes. This step is not 100 % necessary but I find it makes it easier to make smooth, even, balls - particularly if the weather is hot - like it is here at the moment! If the climate you are in is hot the dough can become a little sticky and hard to roll.
  • Remove the dough from the freezer. Roll into balls then roll the balls into another layer of desiccated coconut.

Cover tightly with aluminum foil or plastic wrap and chill for at least 45 minutes and up to 2-3 days.
