1 1/2 pounds shrimp (or about 16 large,) peeled and deveined with the tails on
1 teaspoon coarse salt, plus more to taste
1/2 teaspoon freshly ground black pepper
1/2 cup cornstarch
3 tablespoons coconut oil, divided
2 large cloves garlic, minced
2 tablespoons Thai roasted red chili paste
1 tablespoon chili garlic sauce (optional, for added heat)
2 tablespoons smooth peanut butter
1 cup canned unsweetened coconut milk
3 tablespoons low-sodium soy sauce or gluten-free tamari
1 tablespoon rice vinegar
Juice of 2 limes (about 4 tablespoons), plus additional lime wedges for garnish
1/4 cup thinly sliced green onions, white and light green parts only, divided

Steps:

  • Season the shrimp with the salt and pepper and then dredge them in the cornstarch, shaking to remove any excess. In a large skillet over medium heat, add 2 tablespoons of the coconut oil and swirl to coat the pan. Saute the shrimp until bright pink and opaque, about 2 minutes per side. Set aside on a plate.
  • Add the remaining tablespoon of coconut oil to the pan. Saute the garlic until softened and very fragrant, about 1 minute. Add the Thai chili paste, chili garlic sauce, and peanut butter and whisk until thoroughly combined.
  • Whisk in the coconut milk and bring the mixture to a simmer, whisking often, until the sauce becomes smooth. Reduce the heat to low and cook for 1 minute.
  • Remove the pan from heat, and stir in the soy sauce, rice vinegar, lime juice, and 2 tablespoons of the green onions. Season to taste for additional salt, and then add the shrimp. Toss in the sauce until thoroughly coated, garnish with the remaining green onions, and serve warm with the lime wedges.

2 teaspoons paprika
3/4 teaspoon garlic powder
3/4 teaspoon onion powder
Kosher salt and freshly ground black pepper
3 large eggs

1 cup crushed pork rinds, such as Pork Panko breadcrumbs
3/4 pound large shrimp, peeled and deveined, tails on
About 1 1/4 cups coconut oil
1/2 cup sweet Asian chili sauce
1/2 cup mayonnaise
Lemon wedges, for serving

Steps:

  • Line a baking sheet with parchment paper.
  • Whisk the almond flour, paprika, garlic powder, onion powder, 1 teaspoon salt and pepper in a wide, shallow bowl. Lightly beat the eggs with a splash of water in a second wide, shallow bowl. Combine the coconut and pork rind breadcrumbs in a third wide, shallow bowl.
  • Sprinkle the shrimp with salt and pepper.
  • Toss the shrimp in the flour mixture to coat them, working one a time. Shake off the excess flour and dip it into the egg wash. Let the excess egg drip off, and then toss the shrimp in the coconut-panko mixture until thoroughly coated. Put the shrimp on the prepared baking sheet and repeat with the remaining shrimp.
  • Heat the coconut oil in a large skillet over medium-high heat until very hot and a piece of shredded coconut dropped into it sizzles immediately. Add about half of the shrimp, making sure the skillet is not too crowded, and pan-fry, turning once, until the shrimp are cooked through and golden brown all over, 2 to 3 minutes per side. Transfer to a paper-towel-lined plate and sprinkle with salt. Repeat with the remaining shrimp.
  • Combine the Asian chili sauce with the mayonnaise in a small bowl. Set aside.
  • Squeeze half of a lemon over the hot shrimp and serve with the dipping sauce and lemon wedges on the side.

Steps:

  • Heat the coconut oil over medium-high heat in a large frying pan. Add the garlic and ginger and cook for 1 minute.
  • Add the coconut milk, lime juice, honey, sriracha, and soy sauce to the pan and bring it to a boil. Let it boil, stirring several times, until the sauce begins to thicken, about 5 minutes. Reduce the heat so the sauce is simmering gently.

Steps:

  • Place shrimp into a large bowl and add flour, paprika, ½ tsp. salt, and pepper. Toss until coated.
  • Whisk together egg and milk in a medium-sized shallow bowl.
  • Place shredded coconut, Panko breadcrumbs, and ¼ teaspoon of salt in a second, medium-sized, shallow bowl. Toss to combine.
  • Remove flour-coated shrimp from the bowl and dip in egg bowl. Let excess egg run off and then coat completely in shredded coconut/panko breadcrumbs. Place on a baking sheet or plate and repeat with remaining shrimp.

When you're in the mood for something loving with a tropical feel, this does the trick every time! Try to use Jamaican chilli sauce that's made with scotch bonnet or habaneiro peppers. The result is a mild creamy stew with the subtle heat of the chilli just about coming through. You could use a different type of chilli sauce but it wont have the same flavour or special heat that the scotch bonnet provides A delightful alternative soothing way to serve plain white fish.   • fry the onions and green pepper in the butter until softened.
  • add the coconut cream and once melted add the fish, prawns, chilli sauce and 1/2 cup of water.
  • cook for 5 minutes or until the fish is just cooked through.
  • add the cornflour and egg yolk mixture and stir constantly until thickened (you may need to add more water if the mixture is too thick, you want the consistency of a medium thick bechemel sauce).
  • add the coriander salt and pepper, taste and adjust seasoning if necessary and cook for 1 minute more.
  • Serve over white rice with wedges of lime to squeeze over.

The best recipe I have found for coconut shrimp. The dipping sauce is a perfect Indonesian- inspired condiment. Ketchup manis is a sweet indonesian sauce. You can substitute 3 Tbs. soy sauce mixed with 1 Tbs. brown sugar if you can't find ketchup manis in your local asian food store.

1 cup cornstarch
4 egg whites, lightly beaten
1 1/4 cups unsweetened dried shredded coconut
2 1/2 cups peanut oil (for frying) or 2 1/2 cups vegetable oil (for frying)
3 tablespoons ketchup, manis
1/8 teaspoon dried red chili pepper
1 garlic clove, chopped
1 teaspoon fresh ginger, grated
1 tablespoon fresh lime juice
2 tablespoons sugar

Steps:

  • Wash and dry the shrimp on paper towels.
  • Put cornstarch, egg whites and coconut into three separate bowls.
  • Dip shrimp into the cornstarch.
  • Shake off the excess.
  • Dip into the egg white.
  • Dip into the coconut, pressing into the shrimp.
  • Heat oil and fry the shrimp until golden brown ( only a couple of minutes).
  • Note: The shrimp can be coated 1 hour before frying and kept in the refrigerator. After frying, they can be kep warm in a preheated oven at 300 degrees for up toe 30 minutes.
  • Place all of dipping sauce ingredients in a food processor or blender and puree until fairly smooth. The mixture may also be chopped and mixed by hand.

1 lb medium or jumbo shrimp
1 large egg
1/3 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup Panko breadcrumbs
1/2 cup sweetened or unsweetened shredded coconut
2 cups vegetable oil (if frying)
1/3 cup sweet chili sauce
1/3 cup orange (apricot or pineapple marmalade)

Steps:

  • Remove shells and de-vein the shrimp. You can leave the tails if you like.
  • Pat the shrimp dry with a paper towel.
  • Beat egg in a small bowl; place flour with salt and pepper in another bowl and coconut and Panko breadcrumbs in third bowl.
  • Dip each shrimp in flour first, then egg and then coconut breading. Place on a plate.
  • If you want to fry the shrimp: heat up oil in a saucepan. Fry 4 to 5 shrimp at a time, not to crowd the pot. Fry on each side until golden. Remove onto a paper towel-lined plate.
  • If baking: preheat oven to 425 degrees F, place shrimp on a baking sheet lined with parchment paper and bake for 10 minutes. Flip each shrimp and bake for 4 to 5 minutes more. You can bake them in the air fryer: preheat it to 400 degrees F and bake shrimp for 5 minutes, flip and bake for 2 to 3 minutes more.
  • Mix chili sauce with marmalade and serve with shrimp.

1 pound (500 g) jumbo shrimp (peeled and deveined, tails intact)
Salt and pepper
1/2 cup all-purpose flour ((plain flour))
1/2 cup all-purpose flour ((plain flour))
1 teaspoon baking powder
1/2 teaspoon garlic powder
1 egg
1/2 cup beer ((substitute with mineral water or soda water -- you may need a little extra))
1 cup shredded coconut (sweetened or unsweetened)
1 cup Panko bread crumbs

Steps:

  • Line a large baking sheet with parchment paper. Set aside.
  • OPTIONAL: To butterfly shrimp, insert a knife about three-quarters of the way into the shrimp at the top. Cut a slit down the centre of the shrimp's back to the tail. Use your fingertip to open the flesh of the shrimp slightly. They don't need to be flat. Season with salt and pepper, set aside.
  • In one shallow bowl, add 1/2 cup flour for dredging. In another shallow bowl, whisk the batter ingredients together until combined. The batter should resemble pancake consistency. If too thick, add a little extra beer or mineral water, whisking between each addition. In the third bowl, mix together the shredded coconut and bread crumbs.
  • Dredge in the flour (shake off excess), dip in the batter (shake off excess) and coat in the breadcrumb/coconut mixture. Lightly press the coconut onto the shrimp.
  • Place onto prepared baking sheet and repeat with remaining shrimp. Arrange shrimp in a single layer and freeze until firm (about 30-45 minutes).
  • In a dutch oven or deep skillet, heat vegetable oil (about 2-3 inches deep in the pot) until nice and hot.
  • Fry the FROZEN shrimp in batches for about 2-3 minutes on each side or until golden brown and crispy. Drain them on a paper towel lined plate.
  • Serve immediately with sweet chili sauce.

4 tablespoons vegetable oil (, divided)
2 cloves garlic (, minced or pressed)
1/4 teaspoon kosher salt

1/2 red bell pepper (, seeded and sliced)
1/2 orange bell pepper (, seeded and sliced)
1/2 yellow bell pepper (seeded and sliced)
1 cup coconut milk
4-6 tablespoons high quality fish sauce (, start with 4 tablespoons and add more to taste)
2 tablespoons peanut butter
2 tablespoons red curry paste
2 tablespoons lime juice (, about 1/2 large lime, juiced)
1 tablespoon brown sugar
2 teaspoons ground ginger
2 tablespoons basil leaves (, chopped)
2 tablespoons cilantro (, chopped)
1 green onion (, chopped)
Red jalapeno pepper (, thinly sliced (optional))

Steps:

  • Place the shrimp in a bowl with 1 tablespoon of the oil, garlic, kosher salt and red chili flakes. Toss to coat and let marinate for 10 minutes.
  • Heat a 12-inch skillet over medium high heat with 1 tablespoon of oil. Add the onion and peppers and cook until softened, about 5 minutes. Transfer the peppers and onion to a bowl.
  • Add 1 tablespoon of oil to the skillet and cook half of the shrimp for 2 minutes, then flip and cook for another 2 minutes or until opaque. Transfer the shrimp to a plate. Add the remaining tablespoon of oil and cook the remaining shrimp then add to the other shrimp.
  • In another bowl or 4-cup measuring cup mix the coconut milk, fish sauce, peanut butter, red curry paste, lime juice, brown sugar and ground ginger and stir well.
  • Transfer the cooked onion and peppers to the skillet and pour the coconut milk mixture of the peppers. Bring to a boil then reduce to simmer and cook until reduced by half, about 5 minutes.
  • Add the shrimp to the skillet with the basil and cilantro and toss to coat. Serve over rice or noodles. Garnish with more cilantro and basil, chopped green onion and sliced red jalapeño of desired.

Steps:

  • For sauce:
  • Mix all ingredients in small bowl. Do ahead Can be made 1 day ahead. Cover and chill.
  • For shrimp:
  • Whisk first 4 ingredients in medium bowl. Add egg and club soda; whisk just until combined but still lumpy. Let stand 15 minutes.
  • Meanwhile, pour enough vegetable oil into heavy large saucepan to come halfway up sides of pan. Attach deep-fry thermometer to pan; heat oil over medium heat to 375°F.
