COCONUT LIME RICE WITH PINEAPPLE AND CASHEWS



Coconut Lime Rice with Pineapple and Cashews image

This dish is as delicious as it is beautiful and sure to wow any guest!

Number Of Ingredients 8

1/4 cup pineapple juice
1 3/4 cup coconut milk (full fat)
1 cup dry rice (rinsed and drained)
1 juice lime
1 zest lime
1/3 cup raw and unsalted cashews
1 cup pineapple chunks
1/4 cup (packed) fresh and cut cilantro

Steps:

  • Add the first 3 ingredients to a pot, bring it to a boil. Cover and let it simmer for 25 minutes until cooked.
  • Once rice is cooked add the lime juice and the rest of the ingredients leaving some to garnish at the end.
  • Place the rice mix on two pineapple bowls and finish it garnishing with some cilantro, lime zest, a few more pineapple chunks and cashews.
  • Enjoy!

1 ½ cups uncooked long-grain white rice
1 cup water
1 (8 ounce) can crushed pineapple, undrained
¾ cup coconut milk
¼ teaspoon red pepper flakes
1 lime, zested and juiced

Steps:

  • Rinse rice well until water runs clear. Place drained rice in the pot of electric pressure cooker (such as Instant Pot®). Add water, pineapple chunks and juice, coconut milk, and red pepper flakes. Place the lid on the pot and lock in place.
  • Turn the cooker on and choose the "Manual" setting and high pressure. Set the timer for 3 minutes. Allow pressure to release naturally after the cooking time has ended, about 20 minutes. Stir in lime zest and juice.

1 1/2 cups uncooked long grained rice, rinsed and drained
1 20 oz.can crushed pineapple chunks
1 13.5 oz.can unsweetened coconut milk (I like Chaokoh)
3 tablespoons sweetened coconut flakes
1 tablespoon Thai red curry paste
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon ground ginger
1/2 teaspoon salt
1/8 teaspoon pepper
Garnish
3 tablespoons lime juice, more or less to taste
1/2 cup salted roasted cashews
1/2 cup chopped cilantro
freshly cracked salt and pepper to taste

Steps:

  • 1.Drain pineapple juice from crushed pineapple in a measuring cup. Add coconut milk to equal 3 cups liquid, adding water if necessary. 2.Add liquid to a large pan and bring to a gentle simmer then stir in all remaining ingredients EXCEPT Garnishes. Bring to a boil then cover and reduce heat to low (dial should be a little above lowest setting). Simmer for approximately 20 minutes or until rice is tender, stirring at 15 minutes, adding water if necessary. 3.When rice is tender, remove from heat and let rest 5 minutes, covered. 4.When ready to serve (not before), stir in lime juice, cilantro and cashews. 5.Taste and season with freshly cracked salt and pepper and additional lime juice to taste if desired.

zest and juice 1 lime
small pack coriander , roughly chopped

Steps:

  • Cook the rice following pack instructions. Add the coconut about 5 mins before the end of the cooking time. Stir in the lime zest and juice, and the coriander. Serve immediately.

I was bored one night and thought that coconut lime rice sounded good, so I made my own recipe. I was very much surprised! This wonderful rice will make your toes curl! Toss the cooked rice with diced mango and chopped cilantro.

1 cup basmati rice
1 tablespoon coconut oil
1 teaspoon butter
¼ cup flaked coconut
1 cup coconut milk
1 cup chicken broth
salt, to taste
1 lime, zested and juiced
ground black pepper, to taste

Steps:

  • Rinse rice until the water runs clear; drain. Heat coconut oil and butter in a large skillet over medium-high heat. Cook and stir rice and coconut flakes for 3 to 4 minutes. Stir in the lime juice, then add the coconut milk, chicken broth, salt and lime zest. Bring to a low boil, then cover and reduce heat to low. Cook for 20 minutes. Remove from heat and keep covered for 5 minutes. Fluff with fork and season with pepper.
