Here's what you need: cauliflower, coconut oil, coconut milk, lime juice, lime, fresh cilantro

1 head cauliflower, chopped
1 tablespoon coconut oil, or preferred cooking oil
¼ cup coconut milk
1 tablespoon lime juice
1 lime, zested
fresh cilantro, for garnish

Steps:

  • In a food processor, pulse the cauliflower until it reaches your desired "rice" consistency.
  • In a large skillet over medium heat, heat oil, then add cauliflower rice and let cook for 5 minutes., stirring occasionally.
  • Add coconut milk, lime juice and lime zest, combine well and allow to cook until the liquid has evaporated.
  • Garnish with cilantro.
  • Enjoy!

2 cups chopped cauliflower
3 Tbsp coconut milk powder
2 Tbsp coconut oil
2 Tbsp water
1 Tbsp fresh cilantro, chopped
1 tsp fresh lime zest

Steps:

  • Combine the chopped cauliflower, coconut milk powder, coconut oil, and water in a microwave safe dish. Microwave on high for 7 minutes. Stir and test the consistency - if too hard cook it for another minute or two. Stir in the cilantro and lime zest before serving.

1 1/2 lbs large shrimp, deveined and peeled
2 tablespoons olive oil
1/3 cup sliced then chopped green onion
3 garlic cloves, minced
1/4 teaspoon ground cumin
salt, to taste
pepper, to taste
2 tablespoons fresh lime juice
1/4 cup finely chopped cilantro
1/2 teaspoon lime zest
2 cups coconut rice (see recipe)

Steps:

  • Heat olive oil in a 12 inch skillet over medium high heat. Add green onions and garlic and saute until garlic is light golden, about 30 seconds.
  • Add shrimp, sprinkle cumin evenly over top, season with salt and pepper to taste and saute until shrimp is opaque and cooked through, about 3 minutes.
  • Remove from heat and toss with lime juice, cilantro, and lime zest. Serve with warm coconut rice. (I added mango and black beans to mine).

This was found on a web site from our local market. I haven't made it yet, but think this will be one of those dessert things my Sweet EddieBear can eat lots of.

1 cup jasmine rice
26 ounces light coconut milk
2 1/4 cups whole milk
1 cup sugar
2 1/2 teaspoons lime zest, fresh
coconut, toasted for garnish

Steps:

  • In a medium bowl, soak rice for 20 minutes in enough water to cover. Drain and place in a heavy 3 quart saucepan. Add coconut milk, whole milk and sugar and bring mixture to a boil. Reduce heat and simmer, uncovered, for 25 minutes or until thickened, stirring occasionally. (Mixture will thicken as it cools).
  • Remove from heat and add lime zest. Serve at Room temperature or chilled, garnished with toasted coconut.
