2 cups brown rice (Wash the rice with cold water in the inner cooking pan. Rub the grains of rice gently between the pa)
1 (14 ounce) can light coconut milk (Used Thia Kitchen)
water
2 -4 tablespoons green curry paste (I used Tiger Tiger)
1 lime, sliced
scallion, sliced
basil
cashews, toasted, rough chopped (optional)

Steps:

  • Add rice to cooker, stir in coconut milk, 2 sliced lime and curry paste the fill water or broth to marking that corresponds to the number of cups of brown rice used under "Brown Rice", or use the plastic measuring cup used to measure the rice and add 1-1/2 to 2 times the amount of liquid to rice. The rice should be completely submerged and leveled to ensure even cooking.
  • Close lid securely, plug in the rice cooker and press the cooking switch to start.
  • When cooking completes, allow the rice to "rest" for 15 minutes before opening the lid. On some advanced models, this is done automatically. Open the cooker and use the nonstick rice spatula to fluff remove lime slices and serve your brown rice with garnishes.
  • Top with cashews.
  • Garnish with remaining lime slices, green onions and or fresh basil.

1 tablespoon unsalted butter
1/4 cup finely diced Spanish onion
2 cups long-grain rice
One 13- to 14-ounce can unsweetened coconut milk
1 1/2 teaspoons kosher salt
1/4 teaspoon freshly ground black pepper
1 cup cashews
4 green onions, thinly sliced
1 teaspoon allspice berries
1 teaspoon whole cloves
1 teaspoon whole fennel seeds
2 teaspoons (or more if you like your curry spicier) hot Madras curry powder
3 tablespoons canola oil
8 boneless, skinless chicken thighs, cut into 1-inch pieces
Kosher salt and freshly ground black pepper
1 small Spanish onion, thinly sliced
2-inch piece fresh ginger, peeled and grated
2 tablespoons tomato paste
6 cups chicken stock
1 cup unsweetened coconut milk
2 cinnamon sticks
1/2 mango, chopped
1/2 cup dried coconut
2 green onions, green and pale green parts only, thinly sliced
1/4 cup chopped fresh cilantro leaves
1/4 cup chopped fresh mint
Honey, to taste

Steps:

  • For the coconut green onion rice: Melt the butter in a medium saucepan over high heat. Add the onion and cook until soft, about 2 minutes. Add the rice and stir to coat the grains in the butter. Add the coconut milk, salt, pepper and 1 cup of water and bring to a boil. Stir once, cover, reduce the heat to medium-low and cook until tender, about 16 minutes.
  • Preheat the oven to 300 degrees F.
  • Spread the cashews on a baking sheet and toast in the oven until lightly golden brown, about 8 minutes. Let cool and finely chop in a food processor.
  • Remove the rice from the heat and let sit, covered, for 5 minutes. Remove the lid, fluff the rice with a fork and fold in the green onions and half of the cashews. Let sit 5 minutes more before serving.
  • For the chicken curry: Heat a small saute pan over low heat. Add the allspice, cloves and fennel and toast, shaking the pan occasionally, until you can smell the spices, about 5 minutes. Remove from the heat and let cool slightly. Transfer the spices to a coffee or spice grinder and finely grind. Combine the ground spices with the curry powder in a small bowl.
  • Heat the oil in a large Dutch oven over medium-high heat until it begins to shimmer. Season the chicken with salt and pepper and then with 1 tablespoon of the curry spices, tapping off any excess. Brown the chicken on all sides, about 8 minutes, and remove to a plate.
  • Add the onion to the Dutch oven and cook until soft, about 4 minutes. Add the ginger and cook for 30 seconds, then add the remaining curry spices and cook for 1 minute. Add the tomato paste and cook for 1 minute. Add the chicken stock, coconut milk, salt and pepper and cook until reduced slightly, about 10 minutes. Add the cinnamon sticks and mango and cook until reduced slightly, about 10 minutes. Reduce the heat to low, add the chicken and cook until tender, about 15 minutes. Remove the chicken to a bowl and discard the cinnamon stick and mango pieces. Add the dried coconut and the remaining 1/2 cup cashews and cook until slightly thickened, about 10 minutes more. Remove from the heat, return the chicken to the pot and fold in the green onions, cilantro and mint and season with salt, pepper and honey, if needed.
  • To serve: Spoon the rice into bowls and ladle some chicken curry over.

Everybody is always talking about yellow and red curry. I'm a green curry man, especially with fresh seafood. The aroma of the lemongrass, garlic and chilies just makes anything it touches sing.

2 cups long grain rice, rinsed under cold water until water runs clear
1 tablespoon coconut oil
One 13-ounce can full fat coconut milk, well shaken
2 cups water
2 teaspoons kosher salt
1 teaspoon granulated sugar
1/4 cup unsweetened shredded coconut
1 tablespoon coconut oil
2 tablespoons green curry paste
Two 13-ounce cans coconut milk
2 tablespoons brown sugar
1 teaspoon fish sauce
8 ounces cremini or shiitake mushrooms, stems removed and sliced
8 ounces sugar snap peas
1 red bell pepper, seeded and julienned
1/2 bunch Tuscan kale, stem removed and sliced
8 jumbo prawns or jumbo shrimp, peeled and deveined
Kosher salt and freshly ground black pepper
Four 5-ounce red snapper fillets, skin on
2 tablespoons vegetable oil
Fresh mint, for garnish
Thai basil, for garnish
Lime wedges, for garnish

Steps:

  • Preheat the oven to 350 degrees F.
  • For the coconut rice: Add the rice into a pot (one you have a matching lid for!). Spoon in the coconut oil and mix with the rice; this creates a nice fat barrier to ensure well-separated grains of rice. Add the well-shaken can of coconut milk, water, salt and sugar to the pot. Give it a good stir and cover with a lid. Bring to a boil and then immediately bring to a gentle simmer. Cover and simmer for 10 minutes. Bring it off the heat with the cover still on and let the rice rest for 15 minutes.
  • For the curry: Place the unsweetened shredded coconut onto a small sheet tray. Place into the oven to toast for 5 minutes, or until golden brown.
  • Melt the coconut oil in a Dutch oven or heavy-bottomed pot over medium heat. Add the green curry paste and stir to combine. Toast it in the coconut oil for 5 minutes, until fragrant to bloom the spices, whisking frequently. Add the coconut milk, brown sugar and fish sauce and stir to combine. Add the mushrooms and cook for 5 minutes. Add the snap peas, bell pepper and kale and continue to cook for another 2 to 3 minutes. Sprinkle the prawns with salt, then add into the curry to poach in the liquid. Cover and cook for 2 minutes. Season the curry with salt if necessary.
  • Sprinkle the snapper on both sides with salt and pepper and score the skin. Heat a large nonstick sauté pan with the vegetable oil over high heat. Place the fish into the pan skin-side down to sear. Reduce the heat to medium-high. Cook for 4 minutes, until the skin is crispy, then flip and cook for another 4 minutes.
  • Plate a scoop of coconut rice, followed by sauce, prawns and fish, skin-side up. Garnish with the fresh mint, Thai basil, toasted coconut and lime wedges.

Serve hot or at room temperature, on it's own or as a side to satay chicken or vegetarian cuisine. Inspired by a Zatarain's recipe. Note: This is not an overly hot and spicy dish, as written, but very delicious. We like it light to medium spicy so the other ingredients' delicate flavors aren't lost in the heat; it's just a matter of taste. If you like more heat and spice, adjust the seasonings as needed (you can use hot madras curry, and hot peppers for the mild ones). Enjoy!

Steps:

  • Melt butter in medium saucepan on medium heat. Add curry powder and sugar; cook and stir 30 seconds.
  • Pour water and coconut milk into saucepan. Bring to boil. Stir in rice, turmeric, garlic, onion, chicken base (or salt), and molasses; return to boil.
  • Reduce heat to low; cover and simmer 15-20 minutes or until rice is tender (add diced red and green bell pepper the last 5 minutes of cooking).
  • Remove from heat. Let stand 5 minutes, then fluff rice with a fork and serve topped with roast peanuts, snipped coriander, and fresh lime wedges.
  • May be served hot or at room temperature.

4 shallots
2 bay leaves
1 stalk curry leaf
2 1/2 cups rice (basmati or jasmine rice preferred)
1/4 cup peas (frozen)
3 cups coconut milk

2 tablespoons mint (chopped)
2 -3 green chilies (chopped)
lime wedge (for garnish)

Steps:

  • Heat oil, add shallots, bay leaves, curry leaves and rice, and stir over medium heat until the rice turns translucent.
  • Add the coconut milk, salt and peas and bring to a boil until most of the liquid is absorbed.
  • Reduce heat to very low, cover, and cook for a few more minutes, being vigilant that the rice does not scald at the bottom.
  • Remove bay and curry leaves and stir in the cilantro, mint and chilies.
  • Fluff up with a fork, garnish with lime wedges if desired and serve immediately.
