1 cup coconut milk (, shaken)
1/3 cup creamy peanut butter ((or almond butter))
1/2 tablespoon chili garlic sauce
1/2 tablespoon Worcestershire sauce
3 teaspoons lime juice
3 teaspoons brown sugar
1/4 teaspoon coriander
1/4 teaspoon cumin
3 tablespoons vegetable olive oil (, divided)
12 ounces boneless, skinless chicken thighs (, cut into small bite-sized pieces)
salt and pepper (, to taste)
2 cups small broccoli florets
1 cup sliced carrot rounds
1 tablespoon minced fresh ginger
chopped Thai basil (, for garnish)
cooked white rice (, for serving)

Steps:

  • In a medium bowl, whisk together the coconut milk, peanut butter, chili garlic sauce, Worcestershire sauce, lime juice, brown sugar, coriander, and cumin. Set aside.
  • In a large nonstick skillet, warm 2 tablespoons vegetable oil over medium-high heat. Once oil is shimmering, season the chicken with salt and pepper and add to the skillet. Cook, undisturbed for 1 minute to develop a crust. Then saute for 4 minutes. Transfer to a plate and keep warm.
  • Add the remaining vegetable oil to the skillet; toss in the broccoli and carrots. Saute for about 3 minutes until vegetables are tender.
  • Add the cooked chicken back to the skillet, along with any accumulated juices, and the ginger. Cook for about 30 seconds until fragrant.
  • Give the sauce a stir and pour it into the skillet. Toss to coat only for 15-20 seconds to warm through. Remove from heat.
  • Serve immediately with cooked white rice and a sprinkle of chopped Thai basil.

3/4 cup flaked coconut
3/4 cup crushed corn flakes
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
4 (4 ounce) boneless skinless chicken breasts
2 eggs, lightly beaten
1/3 cup melted butter
cooking spray
3 cups light bodied red wine (Chianti works well)
1 cup dried plum
1/3 cup sugar
2 tablespoons red wine vinegar

Steps:

  • For the Coconut Chicken: Preheat the oven to 400 degrees. In a shallow dish, mix together the coconut, corn flake crumbs, salt, pepper, and garlic. In another shallow dish lightly beat the two eggs. Prepare a shallow baking pan by spraying it with cooking spray.
  • Dip each chicken breast in the egg and then the coconut mixture coating all surfaces of the breast. Place each piece on the baking dish, drizzle with melted butter, and bake for 25-30 minutes. Use an internal probe thermometer to be sure the internal temperature of the chicken reached 165 degrees. While the chicken is baking, prepare the plum sauce.
  • For the Plum Sauce: Combine all ingredients in a large sauce pan and bring to a simmer over medium heat. Let this simmer for about 20 minutes or until the plums become soft. Let this cool slightly and then use a food processor or blender to puree the mixture. Serve with coconut chicken.

1 (15 ounce) can cream of coconut
1 cup hot water
3 tablespoons vegetable oil
4 skinless, boneless chicken breast halves
1 tablespoon lemon juice
1 teaspoon ground ginger
1 teaspoon chili powder
salt and pepper to taste
2 onions, chopped
3 cloves garlic, peeled and crushed

Steps:

  • Mix the cream of coconut with the hot water until smooth and well blended, and set aside.
  • Heat the oil in a large skillet over medium-high heat, and place the chicken breasts into the hot oil. Pan-fry the chicken breasts until they have begun to brown but are still pink inside, about 5 minutes per side. Remove the chicken breasts to paper towels, and sprinkle them with lemon juice, ginger, chili powder, salt, and pepper.
  • Place the onions and garlic into the skillet over medium heat, and cook and stir until they are soft and translucent, about 5 minutes. Return the chicken breasts to the skillet on top of the cooked onions and garlic, and pour the coconut cream mixture over the chicken. Reduce the heat to medium-low, and simmer until the chicken is cooked through and the sauce has thickened, about 35 minutes.

1 cup canned unsweetened coconut milk (not low-fat)
1 tablespoon vegetable oil, plus more for grates
4 boneless, skinless chicken breast halves, (6 to 8 ounces each)
Coarse salt and ground pepper
2 jalapeño chiles
1 tablespoon fresh lime juice
Cooked white rice (optional)
Lime wedges, (optional)

Steps:

  • In a small saucepan, bring coconut milk to a gentle simmer; cook, stirring occasionally, until thickened and reduced to 1/2 cup, about 20 minutes.
  • Meanwhile, heat grill to high; oil grates. Rub chicken all over with oil; season generously with salt and pepper. Place chicken and jalapenos on grill; cover. Cook, turning occasionally, until chicken is cooked through and jalapenos are blackened all over, 12 to 16 minutes.
  • Transfer chicken to a platter; keep warm. Peel jalapenos, rubbing off the blackened skins with a paper towel; transfer to a blender. Add reduced coconut milk, lime juice, and 1/2 teaspoon salt. Blend on high speed until smooth.
  • Slice chicken crosswise into 4 or 5 pieces, and place on plates; spoon coconut sauce over the top. Serve with rice and lime wedges, if desired.

1 broiler/fryer chicken (3-1/2 to 4 pounds), cut up
3/4 cup all-purpose flour
3 tablespoons canola oil
2 cans (16-1/2 ounces each) whole plums, pitted
1/2 cup honey
1 tablespoon white vinegar
1 to 2 garlic cloves, minced

Steps:

  • Coat chicken pieces with flour; brown in oil in a large skillet over medium heat. Transfer to a greased 13-in. x 9-in. baking pan. , Drain plums, reserving syrup; remove pits and coarsely chop plums in a food processor. Pour into a measuring cup; add enough syrup to equal 2 cups. Place in a saucepan. Add honey, vinegar and garlic; bring to a boil. Cook and stir for 2 minutes. Pour over chicken. , Bake, uncovered, at 350° for 45 minutes or until chicken juices run clear.

I couldn't find a recipe for coconut chicken that is typically served at a Chinese buffet, so I made my own. This is baked, not fried. I like to serve this with rice and edamame. My husband and picky 2 year old love this!

1 (14 ounce) can coconut milk, divided
1 clove garlic, minced
1 tablespoon soy sauce
1 tablespoon lime juice
1 ½ pounds skinless, boneless chicken breast halves, cut into strips
1 cup sweetened shredded coconut
1 cup panko bread crumbs
½ teaspoon salt
½ teaspoon ground black pepper
½ cup all-purpose flour
1 egg, beaten
½ cup reduced-fat mayonnaise

Steps:

  • Pour half the coconut milk, the garlic, soy sauce, and lime juice into a resealable plastic zipper bag, and shake to thoroughly combine the marinade. Place the chicken strips into the bag, squeeze several times to coat the chicken with marinade, and refrigerate at least 3 hours. Reserve the rest of the coconut milk.
  • Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil and grease with olive oil.
  • Place the shredded coconut into a blender or food processor and pulse several times until the coconut is ground into crumbs. Mix it with panko crumbs, salt, and black pepper in a bowl. Place the flour into a second bowl, and the egg into a third shallow bowl. Shake excess marinade from chicken strips, and dip them into the flour to thoroughly coat; then dip into egg, and finally into the coconut crumb mixture. Place the coated strips onto the prepared baking sheet.
  • Bake the chicken strips in the preheated oven until golden brown, about 30 minutes.
  • Mix the reserved coconut milk and mayonnaise in a small saucepan, and bring to a simmer over medium-low heat; serve the sauce drizzled over the chicken strips or on the side for dipping.

1 kg chicken thighs (what ever is your favourite) or 1 kg chicken wings (what ever is your favourite)
1 (400 g) can plum sauce (maybe found in jars )
1/2 cup soy sauce

Steps:

  • place chicken in a baking dish.
  • mix plum sauce with soy sauce (soy sauce is to taste so keep checking to see how you like it).
  • add sauce to cover the chicken
  • put in the oven and cook until chicken is cooked (around 40 - 50 minutes)
  • serve with rice or as my nan did warm vegies and potatoes.

1 1/2 cups soda crackers, finely crushed
1/3 cup mayonnaise
4 boneless skinless chicken breasts
6 tablespoons ketchup
6 tablespoons plum sauce
2 teaspoons soy sauce

Steps:

  • FOR FINGERS ~ Preheat oven to 400°F & grease a rimmed baking sheet well.
  • Cut each chicken breast crosswise into 4 or 5 strips, then pat dry.
  • Place cracker crumbs in shallow dish, & put mayaonnaise in a bowl.
  • Add chicken strips to mayo & turn to coat all over.
  • Transfer chicken strips, one at a time, to cracker crumbs, patting crumbs all over the chicken strip.
  • Arrange chicken strips in single layer on prepared baking sheet, & bake 15 minutes.
  • Turn strips over & bake another 10 to 12 minutes more or until golden & no longer pink inside.
  • FOR DIPPING SAUCE ~ While fingers are baking, In a small serving bowl, stir together ketchup, plum sauce & soy sauce.
  • Place in center of serving platter, & when fingers are baked, arrange them around the bowl.
