1 cup all-purpose flour
1 cup lime-flavored seltzer water
1 teaspoon ground ginger
1 teaspoon salt
1 teaspoon pepper
2-1/2 cups sweetened shredded coconut
1-1/4 cups panko bread crumbs
1 pound uncooked shrimp (31-40 per pound), peeled and deveined
2 boneless skinless chicken breasts (6 ounces each), cut into 3/4-inch cubes
Oil for deep-fat frying
Salt and pepper to taste, optional
MAUI MUSTARD:
1 can (8 ounces) crushed pineapple, well drained
1/2 cup red pepper jelly
3 tablespoons stone-ground mustard

Steps:

  • In a shallow bowl, whisk together first 5 ingredients. In another shallow bowl, combine coconut and panko. Dip shrimp in batter to coat. Dip in coconut mixture, patting to help coating adhere. Repeat with chicken., In a deep cast-iron or electric skillet, heat oil to 350°. Fry shrimp, a few at a time, until golden brown, 3-4 minutes. Drain on paper towels. Repeat with chicken. If desired, sprinkle lightly with salt and pepper., For mustard, mix together pineapple, pepper jelly and stone-ground mustard. Combine shrimp and chicken; serve with Maui mustard.

Cooked Thai fusion style, this coconut chicken and shrimp curry comes with potatoes and peas. Chicken thigh fillets and frozen shrimps are used to cut down prep and cooking time.

2 stalks lemongrass (white portion only, peeled and thinly sliced)
3 shallots (peeled and quartered)
4 cloves garlic (peeled)
1 one-inch knob ginger (thinly sliced)
1 one-inch knob galangal (thinly sliced)
1 one-inch knob turmeric (thinly sliced)
4 stalks cilantro (root ends only)
1 pair kaffir lime leaves
2 bird's eye chilies
400 grams chicken thigh fillets
400 grams potatoes
2 tablespoons coconut oil (or other palm oil)
fish sauce
1 ½ cups coconut cream (divided)
2 cups chicken broth
400 grams medium to large shrimps (peeled and deveined (thawed if bought frozen!))
⅓ cup sweet peas

Steps:

  • Dump the curry paste ingredients into a food processor (or use a mortar and pestle for a more traditional method) and process into a coarse paste.
  • Pat the chicken thigh fillets with paper towels to remove surface moisture.
  • Cut the chicken fillets into two-inch cubes.
  • Peel the potatoes and cut into 1 ½-inch cubes.
  • Heat the oil in a wide shallow pan (a wok is ideal).
  • Dump in the curry paste and cook over medium-low heat until the solids begin to separate from the oil.
  • Spread the chicken on the bottom of the pan and cook without disturbing for a minute.
  • Stir the chicken and cook, tossing often, just until no longer pink.
  • Add the potatoes to the chicken.
  • Drizzle in about two tablespoons fish sauce.
  • Pour in half of the coconut cream and all of the broth, and stir.
  • Bring to a gentle boil, lower the heat, cover and simmer for 15 minutes.
  • Taste the sauce and add more fish sauce, as needed.
  • Stir in the shrimps, peas and the remaining half of the coconut cream.
  • Over medium heat, boil gently for five minutes or just until the shrimps are cooked through.
  • Taste the sauce one last time, and add more fish sauce if needed.

EASY COCONUT SHRIMP OR CHICKEN



Easy Coconut Shrimp or Chicken image

This recipe is super easy and very tasty. The chicken is great, but the shrimp is excellent! We usually serve with a honey/mustard sauce.

1 cup yogurt
2/3 cup coconut
2/3 cup breadcrumbs
1/2 cup chopped pecans
1 lb chicken breast, cut in strips or
1 lb shrimp, cleaned and deveined

Steps:

  • Prepare chicken or shrimp.
  • Heat oven 400° for SHRIMP.
  • Heat oven to 450° for CHICKEN.
  • Spray cookie sheet with cooking spray.
  • Mix together coconut, bread crumbs, and pecans.
  • Coat shrimp or chicken with yogurt.
  • Roll the shrimp or chicken in the coconut mixture patting on so it is well coated. Place on cookie sheet and spray lightly with cooking spray.
  • Bake shrimp at 400° for about 8 minutes, reduce heat to 350° and bake for another 8 -10 minutes or until golden.
  • Bake chicken at 450° for about 15 minutes, reduce heat to 350° and bake for another 15 minutes or until golden.
  • Serve with honey/mustard sauce.

  • Heat the oil in a Dutch oven over medium heat. Pat the chicken dry, and season with some salt and pepper. Add the chicken, smooth side down, to the pan and cook until brown, about 4 minutes. Transfer the chicken to a plate. Add the onion and garlic to the pot, and cook until the vegetables are softened, about 5 minutes. Steps:

  • In a large mixing bowl combine ½ cup panko crumbs, ¼ cup dried coconut, chives, cilantro, fish sauce, Sriracha, lime juice, egg, garlic, and ginger.
  • Add shrimp pieces to the panko mixture and stir until just combined.
  • Lightly grease your hands with cooking spray.
  • Shape the mixture into 4 balls. Set aside.
  • In a separate dish combine remaining panko crumbs and coconut.
  • Roll shrimp balls in the panko mixture.
  • Press to form each ball into a 4-inch patty.

12 shrimps ( , butterflied )
1/8 tsp. ground white pepper
1/4 tsp. salt
1/4 tsp. sugar
1/4 cup cornstarch
1 egg
1 tbsp. coconut milk
1/3 cup desiccated coconut
1/ cup breadcrumb

Steps:

  • Peel and devein the shrimp, but keep the tail. Use a knife to cut the back and spilt the shrimp. Slightly flatten the meat gently.
  • Marinate shrimp with salt, pepper and sugar. Set aside.
  • In a small bowl, mix egg with coconut milk.
  • Spread cornstarch, then mix breadcrumb and coconut well.
  • Dip the shrimp in starch, egg and mixture of breadcrumb and coconut. Heat oil until hot. If you stick in one chopstick, fine bubble forms immediately (the temperature should be around 160 degree C). Place 5-6 shrimp in for each batch. Fry for 8-12 seconds or until golden brown. Rinse under cold running water until any ice crystals melt. Once onions are softened, stir in coconut milk and honey. Cook, stirring occasionally, 5 to 7 minutes.
  • Meanwhile, remove and discard skin from chicken, then pull off meat and tear or cut into bite-size chunks. Slice peppers into thick pieces. Coarsely chop cilantro. Stir shrimp, chicken, peppers and peas into coconut-milk mixture.

1 pound peeled and deveined large shrimp, pat dried with a paper towel
1 Tbsp. olive oil or avocado oil
2 Tbsp. honey
3 garlic cloves, minced

¼ tsp. red chili flakes
¼ tsp. kosher salt
2 Tbsp. butter for cooking shrimp
2 Tbsp. butter
1 medium shallot, finely chopped
2 scallions, thinly sliced, white and green parts separated

Steps:

  • In a bowl, toss the shrimp with olive oil, honey, garlic, ginger, red chili flakes, and salt. Set aside to marinate for 15 minutes at room temperature.
  • Melt butter over medium-high heat in a large non-stick skillet. When the butter is hot, add the shrimp with a pair of tongs. Leave the liquid from shrimp inside the bowl. Cook the shrimp for 1-2 minutes per side or until pink on the outside. Remove immediately to a clean bowl. Shrimp will be raw on the inside. If you have leftover liquid in the pan from the shrimp, drain it before adding butter in the next step.
  • Reduce the heat to medium and add butter to the skillet. Add shallots, white parts of scallions, and chili flakes. Cook for a few minutes until soft and fragrant. Stir in coconut milk and fish sauce. Season with salt to taste. Simmer until thickened, about 3-5 minutes.

1/2 lb medium shrimp in shell (21 to 25 per lb), peeled and deveined
1 oz dried shrimp*
1/2 cup salted roasted cocktail peanuts
1/2 cup salted roasted cashews
2 medium onions, chopped
1 green bell pepper, chopped
1 lb fresh tomatoes, chopped
4 bottled red malagueta peppers** or 1- to 2-inch fresh red Thai chiles
1 3/4 cups chicken stock or reduced-sodium chicken broth (14 fl oz)
1 cup well-stirred canned unsweetened coconut milk (8 fl oz)
1/2 cup chopped fresh cilantro
2 tablespoons dendê oil***, optional

Steps:

  • Whisk together 2 tablespoons olive oil, 2 tablespoons lime juice, half of garlic, 1 teaspoon salt, and 1/2 teaspoon pepper in a large bowl. Add chicken and toss to coat, then marinate, chilled, 30 minutes.
  • Whisk together 1 tablespoon olive oil, 1 tablespoon lime juice, remaining garlic, and remaining 1/4 teaspoon pepper in another bowl. Add peeled shrimp and toss to coat, then marinate, covered and chilled, until ready to use (not more than 1 hour).

Steps:

2 tablespoons fresh cilantro leaves, finely chopped
1 orange, zested and juiced

8 shrimp, peeled, deveined, and tail removed

4 cloves garlic, sliced thin
1/2 cup rice wine vinegar
1 1/2 cups coconut milk
5 tablespoons peanut butter
Kosher salt and freshly ground black pepper, to taste
1/2 teaspoon dried red pepper flakes
Fresh Vegetable Salad, recipe follows:
2 cups Napa cabbage, washed and julienned
1 small red pepper, julienned thin
1 small yellow pepper, julienned thin
1 small red onion, julienned thin
1 cup snap peas, julienned thin
2 tablespoons finely chopped fresh cilantro leaves
Juice of 1 orange
2 tablespoons rice wine vinegar
2 tablespoons peanut oil
1 tablespoon red wine vinegar
Kosher salt and freshly ground black pepper, to taste

Steps:

  • Combine the chiles, cilantro, orange zest, orange juice, rice wine vinegar, Mirin, salt, pepper, chicken and shrimp. Toss all to coat well. Cover and place in the refrigerator to marinate for 2 hours.
  • Meanwhile, to make the coconut peanut sauce: Heat a saucepot over medium heat and add the peanut oil. Add the chiles and garlic and toast until dark brown but not burnt. Add the rice wine vinegar and reduce by half. Add the coconut milk and bring to a simmer. Whisk in the peanut butter and mix well to combine. Season with salt, pepper, and red pepper flakes. Remove from the heat and set aside.
  • Preheat a grill or grill pan.
  • Grill the chicken for 3 to 4 minutes on each side and shrimp 2 minutes on each side, or until pink and opaque. Remove the chicken and shrimp from the grill. Let the chicken rest for a minute, then assemble the skewers with 2 pieces of chicken and 2 shrimp on each skewer. Serve the skewers over vegetable salad, with a bowl of coconut peanut sauce for dipping.
  • Just before serving, combine the cabbage, red pepper, yellow pepper, red onion, snap peas, cilantro, orange juice, rice wine vinegar, peanut oil, and red wine vinegar in a large bowl. Taste the salad, then season with salt, and pepper, to taste.
