Ingredients

1 can (40 ounces) sweet potatoes, drained or 1-1/2 pounds fresh sweet potatoes, cooked
9 tablespoons brown sugar, divided
1 tablespoon vanilla extract
1/2 teaspoon salt
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cardamom
2/3 cup milk
2 tablespoons butter, melted

Steps:

In a bowl, beat sweet potatoes, 6 tablespoons brown sugar, vanilla, salt, nutmeg and cardamom. Add milk; mix well. Spoon into a greased 1-qt. casserole. Drizzle with butter; sprinkle with remaining brown sugar. Bake at 350° for 40 minutes or until top is lightly browned.

My husband likes this, and he normally does not like sweet potatoes, specifically the sweet Thanksgiving ones. This really does not have to be baked. It did taste much better after chilling and then reheating than it did initially. Recommend allowing time to meld the flavors.

Ingredients

5 medium sweet potatoes, peeled and cut into 3/4-inch pieces (3.5 - 4 lbs)
3/4 cup light coconut milk
2 teaspoons cardamom, ground
1 teaspoon vanilla extract
1 teaspoon coconut extract (could add another 1/2 tsp perhaps)
1/4 cup honey
1 tablespoon brown sugar
1/2 teaspoon salt
1/8 teaspoon black pepper
1/8 teaspoon cayenne pepper
1/3 cup chopped pecans

Steps:

Bring large pot of water to a boil over high heat. Add sweet potatoes. Return to boiling. Cook until soft, about 10 minutes. Drain and put in a large bowl.
Add coconut milk, cardamom, vanilla, coconut extract, honey, brown sugar, salt, black pepper and cayenne; in other words, everything except the peanuts. Mix until smooth.
Put in a 9x9 dish. Sprinkle pecans over it.
Bake at 325 for 45 - 50 minutes or until edges are slightly browned. Cool on a rack for 10 minutes and serve.

Preheat oven to 400 degrees F. Cut the sweet potatoes into halves, drizzle some oil and coat well. Place them cut side down, on a parchment paper lined baking sheet and roast for 35 to 40 minutes until fork tender.
Meanwhile, heat olive oil in a large cooking pot over medium heat. Add shallots, sauté 5 minutes until translucent, stirring in between. Add ginger, cayenne pepper, cardamom, nutmeg, salt and pepper. Continue to cook for a minute, stirring often, making sure not to let the spices burn.
Take the potatoes from the oven, let cool, peel and remove any brown ends. In a medium bowl, mash the roasted sweet potatoes using a potato masher until really smooth with no lumps.
Add the mashed sweet potatoes and stir in all the aromatics and spices. Then add water, rosemary sprig and bring it to a boil. Let it simmer for 5 to 10 minutes.

For the dhal, gently fry the garlic and all the seeds (don't forget the cardamom) in the oil until they are a deep golden brown. Tip in the split peas and give them a good roll around in the garlicky oil then pour in 1l of water and turn the heat up.
