Nonstick baking spray, for pan
2 1/2 cups all-purpose flour, plus more for dusting
1/2 teaspoon salt
2 teaspoons baking powder
2 sticks unsalted butter, room temperature
2 1/2 cups sugar
6 large eggs
1 teaspoon vanilla extract
1 teaspoon coconut extract
1 cup canned unsweetened coconut milk
Pineapple Glaze, recipe follows
1/2 cup flaked coconut
2 cups powdered sugar
4 tablespoons pineapple juice

Steps:

  • Preheat oven to 350 degrees F.
  • Spray a Bundt pan with nonstick baking spray and dust with flour.
  • In a small bowl, whisk together the flour, salt, and baking powder.
  • In a large bowl, using a hand mixer, cream the butter and sugar together until light and fluffy, about 5 minutes. Beat in the eggs, 1 at a time. Once incorporated, add the extracts. Stir in the coconut milk and beat until combined. Slowly beat in the dry ingredients until the mixture is smooth.
  • Pour the batter into the prepared pan and bake until a cake tester comes out clean, about 1 hour 10 minutes. Cool cake 5 minutes before turning it out onto a rack. Let cool completely on the rack.
  • Once the cake has cooled, ladle the glaze over the cake, and top with flaked coconut. Let glaze set before serving. Transfer the cake to a platter or serving dish and slice.
  • In a mixing bowl, whisk the powdered sugar and the pineapple juice together until smooth.

4 eggs
2 c sugar
1 c buttermilk
1 c vegetable oil
2 c flour
2 tsp coconut extract
1/2 tsp salt
2 tsp baking powder
1 1/2 c flaked coconut
GLAZE
1 c sugar
1/2 c water
1 tsp coconut extract

Steps:

  • 1. Preheat oven to 325 degree F. Grease a bundt pan - I use bakers secret spray. Set aside. In a medium sized mixing bowl, whisk eggs and sugar together, until well blended.
  • 2. Add the buttermilk, oil, extract, salt, baking powder, flour and coconut. Whisk until blended.
  • 3. Pour into prepared bundt pan and bake for 40 - 45 minutes or until a pick comes out clean. While cake is baking, prepare glazed to be poured over cake while it's still hot.
  • 4. Glaze: In a small saucepan, add water, sugar and extract and bring to a boil, then turn heat to simmer and continue simmering for 5 minutes, or until slightly thicken, will not be very thick. Set aside until cake comes from oven.
  • 5. Once cake is finished baking, pour glaze over the cake and leave it set for about 5 minutes. ( Take a narrow, thin knife and go around the inside edges of cake.) Turn out onto serving platter. Can decorate with some added coconut or leave as is and perhaps just serve with some fresh whipped cream. Enjoy!

1 cup margarine, softened
2 cups sugar
3 cups self-rising flour
4 eggs
1 teaspoon vanilla extract
1/2 cup coconut milk
1/2 cup milk
2 1/2 cups sugar
1 cup water
4 egg whites
2 teaspoons coconut extract
2 (6 ounce) bags frozen coconut

Steps:

  • Place margarine in a mixing bowl. Fluff with mixer.
  • Add sugar, small amounts at a time.
  • Add eggs one at a time.
  • Add flour a little bit at a time alternating with the milk.
  • Add the vanilla.
  • Spray cake pans with Pam and dust lightly with flour. Cake will make 4 layers. If you only have 2 cake pans [like me -- ], you can bake in 2 shifts (2 pans at a time).
  • Bake at 350F for 25 minutes.
  • After taking the final pans out of the oven, let cool. You can begin cooking the frosting here.
  • For frosting:.
  • Put sugar in a 3-qt. sauce pan. Add water. Stir a little to dissolve sugar.
  • Bring to a boil and stop stirring.
  • Lower heat to medium, bring to soft ball stage, until it just begins to spin a thread while it cooks. Remember, do NOT stir the frosting while cooking. The process will take about 15-20 minutes.
  • Meanwhile, beat egg whites until stiff.
  • Pour cooked syrup (mixture in saucepan) into the egg whites in a thin stream while you beat it with a spoon. Beat for a few minutes to cool it a little.
  • Add coconut and coconut flavoring.
  • When it starts to cool a little, it is ready to frost the cake. Wait 10-15 minutes for this to occur.
  • While frosting, keep this in mind: frosting tends to separate (the syrup has higher density and will fall to bottom of bowl). Make sure that you keep the frosting homogenous (mixed) while frosting. Frosting is very thin, so it will fall off of the cake. Make sure to frost on the platter that you will serve the cake on. Also, keep reapplying the frosting that falls off until almost all is reabsorbed.
  • Fresh coconut will stick to sides and syrup will absorb into cake.
  • This is the most moist, delicious, yummy cake in the world! Perfect for an anniversary or holiday!

Steps:

  • Preheat the oven to 325°F. Arrange an oven rack in the center of the oven. Thoroughly grease and lightly flour two 6-cup bundt pans.
  • In a medium-size mixing bowl, whisk together flour, baking powder, and salt. Set aside.
  • In a large mixing bowl, beat the butter and sugars together, on medium speed, until light and fluffy. Add the eggs, vanilla, and coconut extract beat until smooth. Add the milk, beat on low speed to combine. Add the flour mixture and beat just until combined. Stir in the coconut.
  • Pour the batter into the prepared pans. Bake for 50-55 minutes, until golden on top and light brown on the edges. A toothpick inserted should come out with moist crumbs. Cool in the pan on a wire rack for 15 minutes.
  • After 15 minutes, place the cooling rack on top of the cake, hold the sides firmly and invert the pan over the rack. The cake should drop smoothly out of the pan. Tap firmly on the pan with a wooden spoon, if necessary to free the cake from the pan. Let the cake cool completely before glazing.
  • To make the glaze, melt the butter in a small glass bowl. Add the powdered sugar, milk, and coconut extract. Whisk together until smooth. The glaze should pour off the spoon in a white stream. Add a teaspoon more milk to thin it, or 1-2 tablespoons more powdered sugar to thicken it, if necessary.
  • Drizzle the glaze over the cake. Sprinkle generously with coconut. Store at room temperature, loosely covered, preferably not airtight. This cake will keep nicely and stay very moist for 3-4 days.

2 tablespoons dark rum (optional)
1 cup canned unsweetened coconut milk
1 cup unsweetened shredded coconut

Steps:

  • Preheat the oven to 350 degrees F. Butter your bundt pan (12-inch) and set aside. I like using baking spray to grease my bundt pans.
  • In a small bowl, sift together the flour, salt, and baking powder. Don't skip the sifting, please.
  • In the bowl of your stand mixer or a large bowl with a hand mixer, cream the butter and sugar together until light and fluffy, approximately 5 minutes.
  • Beat in the eggs, one at a time, scraping down the sides of the bowl as necessary. Add the vanilla extract and dark rum, mix to combine.
  • Add in the coconut milk and mix to combine. Slowly add the dry ingredients and mix until the batter is smooth. Fold in the shredded coconut until combined.
  • Pour the batter into the bundt pan and bake for 45-50 minutes, or until a cake tester comes out clean.
  • Cool the cake for at least 20 minutes in the pan before turning the cake onto a wire rack to finish cooling.
  • Serve with powdered sugar dusting.
  • The bundt will keep at room temperature in an airtight container for three days or in the freezer for three months. It's also fabulous toasted.

1 large egg
1 teaspoon coconut flavoring

1 ½ cups cake flour (not self-rising)
1 cup heavy cream
12 (1 ounce) squares good quality white chocolate
2 tablespoons sweetened shredded coconut, toasted

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Butter and flour a 9-inch round cake pan.
  • Cream sugar and butter together in a large mixing bowl until light and fluffy; scrape down the sides of the bowl. Add egg, coconut flavoring, baking powder, and salt; beat for 1 minute and scrape the bowl. Beat in coconut milk until combined. Stir in flour until combined. Scrape down the sides of the bowl, then beat for 3 minutes.
  • Pour batter into the prepared pan and spread until smooth. Drop the pan from 2 inches above the counter a few times to eliminate any large air pockets.
  • Bake in the preheated oven until the sides of the cake pull away from the pan and a toothpick inserted in the center comes out clean, about 30 minutes. Cool on a wire rack for 5 minutes.   • Meanwhile, bring cream to a full boil, watching carefully to prevent scorching. Remove pan from the heat and add white chocolate; stir until chocolate melts and mixture is smooth. Place in the refrigerator until thoroughly chilled, about 30 minutes.
  • Remove chocolate mixture from the refrigerator and beat with an electric mixer until light and fluffy. Frost the cooled cake and sprinkle with toasted coconut.

  • Toast Coconut:.
  • Start by spreading coconut on a microwave-safe plate. Microwave the coconut in 30-second bursts, gently stirring to redistribute each time. When the coconut is as brown as you like - stop. It's done. It took me 7 1/2 minutes to get to this point, but depends on the wattage of your microwave.
  • Cake:.
  • Beat together sugar, oil, eggs, and coconut extract until well mixed.
  • In a separate bowl, mix together buttermilk, baking powder, and baking soda.
  • Beat together the buttermilk mixture into the sugar, oil, and egg mixture until well blended.
  • Gradually beat the flour mixture into the wet mixture until well mixed.

  • Pour into a greased baking pan and bake for about 30-45 minutes or when a toothpick is inserted into the center comes out clean. (I used a greased bundt pan).
  • Combine drizzle ingredients in a medium saucepan over medium-high heat until all the ingredients are incorporated.
  • Once the bread comes out of the oven, poke holes all over the bread and immediately pour drizzle over the bread and let soak inches.
  • Once the cake has cooled, pour on the glaze and sprinkle with toasted coconut.

1 small box instant vanilla pudding, dry not prepared
4 eggs
½ cup sour cream
½ cup sugar
¾ cup oil
¾ cup water
1 teaspoon coconut extract

4 cups powdered sugar
1 teaspoon vanilla
¼ teaspoon salt

Steps:

  • Preheat oven to 350 degrees F.
  • Grease and flour a bundt pan and set aside.

Steps:

  • In a large mixing bowl, beat butter, coconut oil, and sugar till creamy. Add eggs, sour cream, and coconut and vanilla extracts. Beat for 2-3 minutes. Add flour, baking powder, soda, and salt. Stir into creamed mixture. Add coconut and mix well.
  • Pour into a well greased and floured 12 cup Bundt pan. (I like to use Baker's Joy.)
  • Bake at 350° for 55-60 minutes or until a toothpick comes out clean. Let cool in pan for 10 minutes.
  • Combine glaze ingredients in a small saucepan and heat just till sugar melts. Brush over the bottom of the cake while it is still in the pan. Invert cake onto a cooling rack, and brush remaining glaze over all sides of the cake. Cool completely.
  • Whisk together icing ingredients till smooth, adding enough coconut milk till you get a consistency like heavy cream. Drizzle over the cake and sprinkle with toasted coconut.
