- Scoop into a bowl and top with your favorite toppings.

Steps:
- Cut the bananas in half horizontally.
- Insert popsicle sticks in the middle of the banana halves. Transfer bananas to a parchment paper-lined baking sheet, and freeze until solid.
- In a tall glass or mixing cup, add chocolate and coconut oil. Microwave in 30-second intervals for 1 minute and a half, and mix until smooth.
- Place coconut onto a plate. Dip the bananas into the chocolate coating, then roll or sprinkle on toppings.
- Place bananas in freezer until the coating has hardened.

- Place all ingredients in a food processor and process until smooth.
- Chill in refrigerator for a few hours.
- Transfer the mixture to an ice cream maker and freeze according to manufacturer's directions.
- Place in airtight containers and freeze to desired consistency!
- NOTE: To enjoy this throughout the week, simply separate it into serving size airtight serving containers and freeze. Pull them out of the freezer to soften about 30 minutes before you are ready to serve, and enjoy!
