COCONUT ALMOND FRENCH TOAST

Coconut Almond French Toast image

This is one of my favorite ways to doctor french toast. Measurements are approximate, but I definitely find that 1 egg usually = 2 pieces of french toast with regular store bread. If you really need cinnamon in your french toast then by all means...

Time 20m

Yield 2 serving(s)

Number Of Ingredients 11

4 slices bread
1/4 cup shredded coconut
1/4 cup sliced almonds
2 eggs
2 tablespoons sugar
1/4 cup milk
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract
2 tablespoons oil
1 teaspoon confectioners' sugar
1/4 cup maple syrup

Steps:

  • Put Shredded coconut and almonds into a dinner plate, Mix them up a bit, shake the plate lightly to spread them evenly across the plate then sprinkle the sugar on top. Set near the stove.
  • Break Eggs into shallow pan (e.g. a glass pie plate). Break each of the yolks with a fork and pour ~1/4 tsp vanilla extract into each yolk. Do the same for the almond extract and mix them up. Pour in the milk and beat it all up until it's nicely combined.
  • Heat 1 tbsp oil in skillet over medium heat until it ripples.
  • Dredge a slice of bread in the egg mixture, then in the coconut mixture and add it to the oil in the pan. Flip when bottom is nicely browned, and brown the other side. Remove to Serving plate and dust with confectioners sugar (a small sieve works well for this). Repeat with second 2 slices of bread.
  • Serve with warm maple syrup, fresh squeezed guava, and some mocha java.

Time 55m

Yield 5 servings

Number Of Ingredients 24

One 2-pound loaf challah bread
Coconut Cream Cheese Filling, recipe follows
French Toast Batter, recipe follows
2 to 4 teaspoons canola oil
1/2 cup raspberry puree
1 cup strawberries, diced
4 bananas
1/2 cup granulated sugar
1/2 cup shredded coconut
Serving suggestions: ground cinnamon, confectioners' sugar and maple syrup
8 ounces cream cheese, at room temperature
1/4 cup mascarpone, at room temperature
1 cup shredded coconut
1/4 cup honey
1/2 teaspoon coconut extract
1/2 teaspoon vanilla extract
6 eggs
1 1/4 cups whole milk
1/4 cup heavy cream
1/4 cup brown sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon almond extract
1/2 teaspoon vanilla extract
1/2 teaspoon ground nutmeg

Steps:

  • Cut the bread into 5 thick slices, each about 2-inches thick. Split the top of each slice open in the middle, creating a pocket. Stuff each pocket with 1/2 cup of the Coconut Cream Cheese Filling. Dip each piece of stuffed toast into the French Toast Batter, coating completely.
  • Add 2 teaspoons of the oil to a pan set over medium heat. Place some pieces of the toast into the hot pan and cook until brown on both sides and heated through in the middle, 3 to 4 minutes per side. Repeat for the remaining toast, adding more oil as needed to the pan.
  • Transfer the raspberry puree to a squeeze bottle. Drizzle some raspberry puree in a circle on each serving plate. Sprinkle some strawberries on top. Cut the French toast slices in half on the bias and shingle 2 halves on each serving plate.
  • Cut the bananas in half lengthwise and then split in half again widthwise. Place the bananas cut-side up on a sheet tray. Sprinkle the bananas with the granulated sugar to coat. Using the torch, melt the sugar until golden in color. Carefully place 3 pieces of banana on each plate next to the French toast.
  • Sprinkle the coconut on the plates, then dust each with cinnamon and confectioners' sugar and serve with maple syrup.
  • In a large mixing bowl, using an electric mixer, whisk together the cream cheese and mascarpone. Add in the shredded coconut, honey, coconut extract and vanilla extract, and mix until combined.
  • Crack the eggs into a large mixing bowl and beat with a wire whisk. Add the milk, cream, brown sugar, cinnamon, almond extract, vanilla extract and nutmeg, and mix together until combined. Refrigerate until needed.

COCONUT FRENCH TOAST

Coconut French Toast image

This is a rich and hearty vegan version of french toast that uses coconut milk instead of regular milk and eggs. This recipe and others may be found on my blog, http://olivesfordinner.blogspot.com/.

Categories     Breakfast

Time 35m

Yield 3-4 serving(s)

Number Of Ingredients 6

1 (13 ounce) can unsweetened coconut milk
1 cup soymilk
3 tablespoons garbanzo flour
1 tablespoon cornstarch
2 tablespoons olive oil or 2 tablespoons canola oil
1 loaf Italian bread, sliced (sandwich bread will work too)

Steps:

  • If using an italian loaf of bread, slice into 1 to 1.5-inch thick slices and leave out to dry during the day. The dry bread will soak up the coconut mixture better than fresh bread.
  • Before bed, empty the entire can of coconut milk into a medium-sized bowl. Whisk until well emulsified. Add the soymilk, garbanzo bean flour and cornstarch and stir until the ingredients have blended together. Empty the mixture into a large glass pyrex dish, enough for all of the bread pieces to fit. Dunk the bread in, making sure all pieces are well-covered with the mixture, cover with saran wrap and place into the refrigerator.
  • In the morning, heat 2-3 TB of olive oil or canola oil in a large flat saute pan or griddle over medium heat for 2-3 minutes. Add the slices of french toast and saute for 10 minutes. Flip and saute the other side for 10 minutes more. Dial up the heat to medium-high and flip again, for 5 minutes more on each side or until a nice browning has been achieved.
  • Toppings: If you like sweet french toast, cover in earth balance, powdered sugar and pure maple syrup. If you like a more savory french toast, cover in earth balance, a touch of powdered sugar and some nutritional yeast.

ALMOND FRENCH TOAST

Almond French Toast image

This is one of my family's favorites brunches. Because of the baking powder the slices really "puff" up when fried, and the French toast is light and so fluffy! Prep time includes one hour refrigeration time. Also the bread slices need to be refrigerated for 1 hour.

Categories     Breakfast

Time 1h

Yield 4-6 serving(s)

Number Of Ingredients 12

2 cups cups slivered almonds (can use more or less)

1/8-1/4 teaspoon salt
1/2 teaspoon baking powder
1/4-1/2 teaspoon almond extract
1 1/2 teaspoons vanilla
10 -12 slices thick French bread
3 tablespoons oil (more as needed)
4 tablespoons butter (more as needed)
confectioners' sugar (optional)

Steps:

  • Place the almonds in a small saucepan; toss occasionally until lightly browned (about 5-8 minutes) careful not to overbrown; set aside.
  • In a large bowl, whisk together eggs, half and half or milk (if using) flour, salt, baking powder, almond extract and vanilla.
  • Soak the bread slices in the egg mixture until soaked.
  • Place in a shallow glass dish.
  • Cover with plastic wrap and refrigerate the bread slices for about 1 hour.

  • For the French toast: Lay the bread slices in one layer, overlapping a little as needed, on a baking sheet. Bake the slices (to dry them out) for 6 minutes, then flip and bake for 6 minutes more. Set aside to cool.
  • Whisk together the eggs, half-and-half, granulated sugar, vanilla, cinnamon, and salt in a large bowl. Dip each bread slice in the egg mixture to coat and layer the slices in the buttered casserole dish. Pour the remaining egg mixture over the bread. (If a lot of the liquid remains, you can choose to add a little less if you'd like this recipe less like bread pudding.) Cover the dish with plastic wrap and refrigerate for at least 6 hours or overnight.
  • For the coconut-almond crust: Put 1/2 cup of the coconut, 1/3 cup of the almonds, granulated sugar, flour, and salt in a food processor or blender and mix until very fine. If using a food processor, add the butter, egg, and egg yolk and process well to form a smooth paste. If using a blender, transfer the coconut/almond mixture to a bowl and then add the butter, egg, and egg yolk. Stir until smooth.
