CHOCOLATE CARAMEL COOKIES
This is my favorite recipe for bake sales and bazaars. Each delightfully sweet chocolate cookie has a fun caramel surprise in the middle, thanks to Rolo candy. Dipped in pecans before baking, they look so nice that they sell in a hurry. —Melissa Vannoy, Childress, Texas

- In a large bowl, cream butter, 1 cup sugar and brown sugar. Beat in eggs and vanilla. Combine flour, cocoa and baking soda; gradually add to creamed mixture just until combined. Stir in 1/2 cup pecans. , Shape dough by tablespoonfuls around each candy. In a small bowl, combine remaining pecans and sugar; dip each cookie halfway. , Place with nut side up on ungreased baking sheets. Bake at 375° until top is slightly cracked, 7-10 minutes. Cool for 3 minutes; remove to wire racks to cool completely.

COCO-NUT CARAMEL CHEWS

Steps:
- Line a 8 by 8-inch square microwave safe dish with plastic wrap allowing the wrap to come over the sides. Spray the prepared dish with cooking spray.
- Spray a medium size, microwave safe bowl with cooking spray. To the prepared bowl, add the caramel candies, peanuts, white chocolate and 1/2 cup of the coconut. Give it a stir to combine. set the microwave for 1 minute 30 seconds on HIGH. Place the bowl in the microwave and cook 1 minute. Stop the microwave, stir the mixture, return to microwave to cook 30 seconds longer. Remove the mixture and stir. Scrape it into the prepared square pan. Flatten the mixture with a rubber spatula evenly. Cover the top of the candy with remaining coconut, using the rubber spatula to press it in slightly. If the mixture is too firm on top for the coconut to stick, place the mixture back in the microwave for 10 seconds, then resume pressing the coconut into the candy.
- Allow the candies to cool completely. Remove the entire block, using the plastic wrap to help you pull it out. Using a sharp knife, cut candy into small, 1-inch squares.

Steps:
- Mix all ingredients together in a med size pot.
- Boil on low fire until mixture reaches hard ball stage.
- Pour in a buttered pan 9x9 or 9x13.
- When candy is cool cut in 1 inch squares.
- Be careful that they don't stick together.
- Wrap each piece in wax paper for individual candies Keeps well in the refrigerator.

- Place all ingredients except nuts and vanilla in a heavy medium sauce pan. Over medium to medium-high heat, stir the mixture quite constantly with a spatula or wooden spoon until it just reaches 240° F, and then quickly pull pan from heat. This will take quite some time, be prepared to stand by the stove for awhile, stirring, stirring,stirring! Do not let the caramel mixture over cook, or you will have hard caramel. Likewise, undercooking will result in softer caramels. (See note below about using a candy thermometer.) With pan off the heat, stir in the vanilla. Stir in nuts, if using. Pour into prepared pan. Let cool to room temperature, then refrigerate.
- If you want to gift these caramels, simply cut them into your desired size and wrap in wax paper.
