COCOA MUFFINS

Cocoa Muffins image

These easy chocolate muffins, made with flour, sugar, cocoa, eggs, oil, and vanilla, have a not-too-sweet but intense cocoa flavor. For those of us with more adult chocolate cravings.

Provided by Bruce Weinstein and Mark Scarbrough

Categories     Breakfast

Time 1h

Number Of Ingredients 10

Nonstick spray or paper muffin cups
2 cups all-purpose flour
3/4 cup granulated sugar
1/2 cup Dutch process cocoa powder
1 tablespoon baking powder
1/2 teaspoon table salt
2 large eggs (at room temperature)
1 1/4 cups milk ((whole or low-fat but not nonfat))
1/3 cup mild vegetable oil
2 teaspoons vanilla extract

Steps:

  • Preheat the oven to 400°F (200°C). Position an oven rack in the center of the oven. Spray the muffin tin or line them with paper muffin cups.
  • In a medium bowl, whisk the flour, sugar, cocoa powder, baking powder, and salt.
  • In a large bowl, whisk the eggs until lightly beaten, then whisk in the milk, oil, and vanilla until smooth. Stir in the flour mixture with a wooden spoon until moistened.
  • Fill the prepared tins about 3/4 full. Reserve any leftover batter for a second batch. Bake for 20 to 23 minutes, or until the muffins have firm, rounded tops, and a toothpick inserted into the center of one muffin comes out with a few moist crumbs attached.
  • Set the pan on a wire rack to cool for 10 minutes.
  • Gently rock each muffin back and forth to release it. Remove the muffins from the pan and let them cool on the rack for 5 minutes.
  • Make them disappear. You can keep them in an airtight container or in resealable plastic bags for up to 24 hours at room temperature or stash them in the freezer for up to 2 months.

APPLESAUCE MUFFINS

Applesauce Muffins image

Soft and moist homemade applesauce muffins that can be oil free and are great for a healthy breakfast.

Provided by Chocolate Covered Katie

Categories     Breakfast

Time 20m

Number Of Ingredients 11

1 cup applesauce
3 tbsp oil OR applesauce or mashed banana
2 tbsp milk of choice
2 tsp pure vanilla extract
2 tsp white or cider vinegar
1 cup spelt,
1/4 cup sugar or unrefined sugar
1/2 tsp salt
1/2 tsp each: baking soda and baking powder
1/4 tsp cinnamon
optional handful raisins, (crushed walnuts, shredded coconut, etc.)

Steps:

  • *If you want to make mini muffins, bake only 10 minutes. I recommend this mini muffin pan.Whisk all liquid ingredients together. Preheat oven to 350, and line a muffin tin. In a new bowl, stir remaining ingredients very well. Pour dry into wet, and stir until just evenly mixed. Fill each liner about 2/3 of the way, leaving a little room because they will rise. Bake on the center rack, 20 minutes or until muffins have domed and a toothpick inserted into the center of a muffin comes out mostly clean. Let cool. (If you loosely cover overnight on the counter or refrigerated, the liners peel off easily the next day and flavor and texture are even better.) Leftovers can be frozen if desired. HEALTHY CHOCOLATE OATMEAL MUFFINS RECIPE

Healthy Chocolate Oatmeal Muffins Recipe image

Healthy Chocolate Oatmeal Muffins Recipe: Toasted oats replace flour, bananas & honey provide a bit of sweetness, cocoa & chocolate chips make them irresistibly chocolaty. Ingredients

Provided by Bren

Categories     Breakfast

Time 35m

Yield 14

Number Of Ingredients 12

2 ½ cups old fashioned oats (1.5 cups ground)
2 tbsp oats (for muffin tops)
2-3 large bananas, very ripe (1 cup mashed or 1 cup applesauce)
2 large eggs (lightly beaten)
1/3 cup honey
3/4 cup milk
2 tsp vanilla (pure)
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
3 -4 Tbsp cocoa powder
1 cup chocolate chips (divided into ½ cup portions)

Steps:

  • Preheat oven to 325. Place oats on a baking sheet and toast until lightly browned, stirring once (about 4 to 6 minutes). Let cool to room temperature. (If you are in a hurry you can skip this step and use plain old fashioned oats, however the toasting adds flavor!)
  • Place 1.5 cups of oats in a food processor and blend/pulse until they reach a rough, flour like consistency.
  • Mash bananas well, they should have no lumps. I use my mixer to mash them before adding the other wet ingredients.
  • Add eggs, honey, milk and vanilla. Mix to combine.
  • Add dry ingredients (including both ground and whole oats) to wet ingredients and mix until just incorporated. Allow these to sit for 10 minutes to soak the oats.
  • Fold in approximately 1/2 cup chocolate chips, if using.
  • Scoop into muffin tin, lined with muffin wrappers (makes 14 muffins). You can spray the bottom of the liners lightly with spray oil to make the muffins easier to remove from the wrappers.
  • Sprinkle muffin tops with reserved oats and remaining 1/2 cup chocolate chips, press down lightly.
  • Bake at 350 for about 20 -23 minutes, a toothpick inserted in the center of a muffin should come out clean.
