CONDENSED MILK TRUFFLES

These 2-ingredient condensed milk truffles are rich and fudgy and 100% dairy-free. Using just vegan condensed milk and cocoa powder, you can make a decadent chocolate dessert (like vegan fudge!) with just minutes of hands-on prep!

180 g vegan condensed milk
60 g cocoa powder ((I used Dutch-processed) + more for coating)

Steps:

  • Watch the video in the blog post for visual instructions.Line a small rectangular mold (mine measures 4.5x6.5 inches resp. 11.5x16.5 cm) with wax paper with an overhang on all sides (for easier removal).
  • Pour the condensed milk into a medium bowl. I used homemade vegan condensed milk.If it's too thick (i.e. if you stored it in the fridge), simply microwave it for a couple of seconds or warm it up in a double boiler until it's runny.
  • Sift in the cocoa powder in portions, stirring occasionally.
  • Once the mixture starts getting very thick, I recommend adding a bit of oil to your hands and kneading the dough until it's smooth.The dough should be soft, smooth, and manageable, but not sticky. If it's too wet, simply add more cocoa powder. If it's too dry, add more condensed milk.
  • Transfer the dough to the prepared mold and spread it evenly with your fingers. Chill it for 1 hour in the refrigerator.
  • Once chilled, remove the dough from the mold and place it on a cutting board. Sift some cocoa powder over it, then cut it into squares using a sharp knife.
  • Either enjoy immediately or round off the edges of each square with your fingers (this step is optional).

Butter, for greasing the pan
1 (14-ounce) can sweetened condensed milk
2 teaspoons ground cinnamon
1 teaspoon pure vanilla extract
1 pound (about 2 cups) bittersweet (60 percent cacao) chocolate chips (recommended: Ghiradelli) see Cook's Note
3 tablespoons unsalted butter, cut into 1/2-inch pieces, at room temperature
Kosher or flake salt, optional

Steps:

  • Butter the bottom and sides of an 8 by 8-inch baking pan. Line the pan with a sheet of parchment paper, about 14-inches long and 7-inches wide, allowing the excess to overhang the sides. Set aside
  • In a medium glass or stainless steel bowl, combine the condensed milk, cinnamon, and vanilla. Stir in the chocolate chips and butter. Put the bowl on a saucepan of barely simmering water and mix until the chocolate chips have melted and the mixture is smooth, about 6 to 8 minutes (mixture will be thick). Using a spatula, scrape the mixture into the prepared pan and smooth the top. Sprinkle with salt, if desired. Refrigerate for at least 2 hours until firm.
  • Run a warm knife around the edge of the pan to loosen the fudge. Remove the fudge to a cutting board. Peel off the parchment paper and cut the fudge into 1-inch pieces. Store refrigerated in an airtight container or freeze.

  • Add in the nuts,combine.
  • Moisten the mixture with the condensed milk,sat& vanilla extract.
  • Shape into balls.

I'm not very good at making cakes so whenever I needed to bring a plate of sweets to a morning or afternoon tea, I would make these. They are so easy to make. My daughter helps me rolled the coconut on the balls. Enjoy.

250 g plain sweet biscuits (I use Arnotts Marie biscuits)
1/2 cup desiccated coconut, fine
2 tablespoons cocoa
340 g condensed milk (I prefer Nestle Sweetened Condensed Milk)
3/4 cup of fine desiccated coconut

Steps:

  • Crush the biscuits in a food processor until it is fine (like flour).
  • Combine in a large bowl, the crush biscuits, 1/2 cup of fine desiccated coconuts and 2 tablespoons of cocoa. Mix the ingredients well.
  • Then slowly stir in the sweetened condensed milk into the mixture. (Don't pour the whole content of the can, pour it in slowly as you only may need 340 grams of the can).
  • You know you have the mixture right if the mixture is a dough ball. (If the balls are not holding shape then you may used too much sweetened condensed milk.) You should be able to roll them into a ball without being to hard or to soft.
  • Shape the mixture into one-inch balls.
  • Place the 1/4 cups of fine desiccated coconut into a flat plate (You may not need the whole 3/4 cups so just fill the flat plate when needed).
  • Roll the ball into the fine desiccated coconut.
  • Store in refrigerator until your ready to use.

Out of regular milk or evaporated milk? You can still make delicious and creamychocolate pudding! For the chocolate, use what you have on hand. You can use all cocoa (4 T), all unsweetened chocolate (4 oz), or substitute 1 or 2 ounces of the unsweetened chocolate with bittersweet or semisweet chips. Use coconut or almond milk to replace some or all of the water to add a subtle coconut or almond flavor.

2 tablespoons cocoa
1/4 cup cornstarch
2 ounces unsweetened chocolate, in small pieces
14 ounces sweetened condensed milk
2 1/4 cups water (you can also use almond milk or coconut milk to add additional flavor)
2 teaspoons vanilla (you can also use almond extract)

Steps:

  • Combine cocoa and cornstarch in bottom of heavy bottomed saucepan. Add condensed milk and water and stir to combine.
  • Use medium low heat and stir regularly until cit begins to thicken.
  • Once it starts to thicken, stir constantly until it begins to boil/bubble.
  • Allow pudding to cook for one more minute after it first begins to boil/bubble.
  • If the pudding got lumpy (either heat was a little high or it wasn't stirred enough when it was thickening, use an immersion blender or whisk to make it smooth.
  • Remove pudding from heat and stir in vanilla. You can substitute almond flavoring for the vanilla if you prefer that flavor.
  • Pour into four bowls. Cover with plastic wrap, pressing the plastic onto the top of the pudding; this will prevent the pudding from forming a thick skin.
  • Refrigerate until chilled or eat immediately. Serve with whipped topping.
