SAUSAGE & BEAN CASSEROLE

A comforting and hearty one-pot sausage stew with chorizo, smoked paprika and plenty of vegetables

2 tbsp olive or rapeseed oil
1 onion, finely chopped
2 medium sticks celery, finely chopped
1 yellow pepper, chopped
1 red pepper, chopped
6 cooking chorizo sausages (about 400g)
6 pork sausages (about 400g)
3 fat garlic cloves, chopped
1 ½ tsp sweet smoked paprika
½ tsp ground cumin
1 tbsp dried thyme
125ml white wine
2 x 400g cans cherry tomatoes or chopped tomatoes
2 sprigs fresh thyme
1 chicken stock cube
1 x 400g can aduki beans, drained and rinsed
1 bunch chives, snipped (optional)

Steps:

  • Heat 2 tbsp olive or rapeseed oil in a large heavy-based pan.
  • Add 1 finely chopped onion and cook gently for 5 minutes.
  • Add 2 finely chopped medium celery sticks, 1 chopped yellow pepper and 1 chopped red pepper and cook for a further 5 mins.
  • Add 6 chorizo sausages and 6 pork sausages and fry for 5 minutes.
  • Stir in 3 chopped garlic cloves, 1 ½ tsp sweet smoked paprika, ½ tsp ground cumin and 1 tbsp dried thyme and continue cooking for 1 - 2 mins or until the aromas are released.
  • Pour in 125ml white wine and use a wooden spoon to remove any residue stuck to the pan.
  • Add two 400g cans of tomatoes, and 2 sprigs of fresh thyme and bring to a simmer. Crumble in the chicken stock cube and stir.
  • Cook for 40 minutes. Stir in a 400g drained and rinsed can of aduki beans and cook for a further five minutes.
  • Remove the thyme sprigs, season with black pepper and stir through some snipped chives, if using. Serve.

2 tablespoons extra-virgin olive oil
1 pound hot and/or sweet Italian sausage, cut into 1-inch pieces
6 cloves garlic, chopped
2 carrots, chopped
1/2 fennel bulb, cored and chopped
1/2 onion, chopped
1 tablespoon fresh thyme
Kosher salt and freshly ground pepper
1/2 cup panko breadcrumbs
1 15.5-ounce can navy beans (do not drain)
1 15-ounce can cherry tomatoes

Steps:

  • Heat 1 tablespoon olive oil in a large ovenproof skillet over medium-high heat; add the sausage and cook, stirring occasionally, until browned, about 5 minutes. Transfer to a plate using a slotted spoon. Reduce the heat to medium low and add the garlic to the skillet. Cook, stirring often, until lightly browned, about 2 minutes. Add the carrots, fennel, onion, 2 tablespoons water, 1/2 tablespoon thyme and 1/2 teaspoon each salt and pepper. Cook, stirring occasionally, until the vegetables soften, 15 minutes.
  • Preheat the broiler. Combine the panko with the remaining 1 tablespoon olive oil, 1/2 tablespoon thyme and 1/4 teaspoon each salt and pepper; set aside. Return the sausage to the skillet along with the beans and their liquid, the tomatoes and 1/2 cup water. Bring to a boil, then reduce the heat to medium and gently simmer until the liquid is slightly reduced, about 5 minutes. Sprinkle the panko mixture evenly over the stew and broil until golden, about 4 minutes.

Steps:

  • In a food processor, mix beans, 1/4 cup sour cream, garlic, and salt. Pulse until smooth.

Steps:

  • Gather the ingredients.

2 stalks celery, diced
1 carrot, diced

1 8-ounce can baked beans
2 cups low-sodium chicken broth
2 tablespoons roughly chopped fresh parsley

Steps:

  • Heat the vegetable oil in a large pot or Dutch oven over medium-high heat. Add the sausages and cook, stirring occasionally, until lightly browned and crisp, about 5 minutes. Transfer to a plate with a slotted spoon.
  • Add the celery, carrot and onion to the pot and cook, stirring occasionally, until slightly softened, about 5 minutes. Season with salt and pepper. Add the cherry tomatoes, white beans (and their liquid), baked beans, chicken broth and 2 1/2 cups water. Bring to a boil, then reduce the heat to medium and continue cooking until the soup thickens slightly and the tomatoes just start bursting, about 20 minutes.
  • Return the sausages to the pot along with the parsley; season with salt and pepper. Top each serving of soup with the cheese.

A sweet and savory treat for any get-together that will sure be a crowd pleaser. It's cheap and easy to make in a slow cooker with only three ingredients. I make this for any get-together and it is always a hit! I was a little unsure at first about the grape jelly concoction, but I tried it and have never done it any other way. It is so savory with just enough sweet. I always receive or over hear lots of agreement with the taste of the sauce. It always disappears at parties, and the next day I have cravings for these cocktail wienies. Try it for your next potluck, back yard BBQ, or any event!

1 pound rigatoni
3 tablespoons extra-virgin olive oil, divided
1 pound ground mild Italian sausage
2 teaspoons coarse salt, divided, plus more to taste
1 teaspoon freshly ground black pepper, divided, plus more to taste
1/4 teaspoon crushed red pepper flakes
1 small yellow onion, diced
2 large cloves garlic, minced
1 15-ounce can cannellini beans, rinsed and drained
1 tablespoon chopped fresh sage
3 tablespoons chopped fresh parsley, divided
2 cups low-sodium chicken stock
2 cups packed chopped fresh kale
1/2 cup grated parmesan cheese, divided

Steps:

  • Cook the pasta according to package directions. Just before draining, reserve 1/2 cup of the starchy cooking water.
  • In a large skillet over medium heat, add 1 tablespoon of the oil and swirl to coat the pan. Add the sausage and season it with 1 teaspoon of the salt, 1/2 teaspoon of the black pepper, and the red pepper flakes. Cook, stirring occasionally, until browned and cooked through, about 8-10 minutes. Using a slotted spoon, remove the sausage from the pan and set aside.
  • Add the onions, garlic, beans, sage, 1 tablespoon of the parsley, the remaining teaspoon of salt, and the remaining 1/2 teaspoon of pepper. Saute until very fragrant, about 2 minutes. Deglaze the pan with the chicken stock, scraping to remove any brown bits from the bottom.
  • Transfer half of the bean and stock mixture to a blender and puree until smooth. Return the mixture to the pan and cook until the sauce is slightly thickened, about 5 minutes.
  • Return the sausage to the pan along with the cooked pasta, kale, and 1/4 cup of the parmesan. Toss, adding a few tablespoons of the reserved pasta water at a time, until the kale is wilted and the sauce clings to the pasta. Season to taste with additional salt and pepper if necessary.
  • Divide the pasta among plates and garnish with the remaining olive oil, parmesan, and parsley.

For the sausage in this recipe - I used elk/deer sausage that our family friend gave to us. You could use any kielbasa type sausage as well. This recipe has a lot of sauce - which we feel is perfect for sopping up with a good loaf of bread! Yield and time are approximate.

1 green bell pepper, chopped
1 medium onion, chopped
1 garlic clove, minced
1 tablespoon vegetable oil

4 cups chicken broth, I used a quart of homecanned
1 (16 ounce) can black beans, I used 1 pint homecanned
1 (16 ounce) can great northern beans, I used 1 pint homecanned
5 bay leaves
1 teaspoon dried parsley

3 -4 dashes hot pepper sauce
hot cooked rice

Steps:

  • In a large skillet, saute bell pepper, onion and garlic on oil until tender.
  • Add sausage, broth, beans and seasonings.

  • Discard bay leaves.
  • Serve in bowls over rice.

1 pound orecchiette pasta
2 tablespoons extra-virgin olive oil
1 pound sweet Italian sausage, removed from casings
1 yellow onion, diced

One 15-ounce can cannellini beans, rinsed and drained
1/2 cup grated Parmesan, plus additional for garnish

Steps:

  • Bring a pot of salted water to a boil and cook the orecchiette according to package instructions.
  • Meanwhile, heat the oil in a large, heavy-bottomed skillet over medium-high heat. Add the sausage and cook, breaking it up with the back of a spoon, until it starts to brown, 4 to 5 minutes. Remove the sausage to a bowl with a slotted spoon, leaving all the oil in the skillet.
  • Add the onions to the oil and cook until they start to soften and turn translucent, about 2 minutes. Add the garlic to the skillet and cook, stirring, for 30 seconds. Add the tomatoes and red pepper flakes and cook, stirring occasionally, until the tomatoes start to blister and split, about 4 minutes. Add salt and pepper.
  • Add the beans and return the sausage to the skillet. Cook until warmed through. Add the pasta and toss until it is completely coated. Add the Parmesan in batches, stirring to incorporate and letting it melt before more is added. Stir in the basil.
  • Plate the pasta and top with more Parmesan and basil. Serve immediately.
