CREAMY CHICKEN LIVER PâTé



Creamy Chicken Liver Pâté image

French pâté is in fact easier to make than my grandmother's chopped liver, which called for rendering chicken fat. Here, you just soften onions in butter, cook the livers, cool, purée and refrigerate. You don't have to bother with soaking the livers in milk, a step found in many recipes. Season aggressively: you want to taste the pepper, the coriander, the brandy and even the allspice and clove. Finally, cook the liver quickly, over pretty high heat. What you want is to brown the outside while keeping the inside pink. This, perhaps, is another major difference between pâté and chopped liver, in which the livers are almost always cooked to death.

10 to 15 peppercorns
2 allspice berries
1 clove
4 coriander seeds
1/2 cup butter
1 onion, chopped
1 pound chicken livers
Salt
1/3 cup cream
1 to 2 tablespoons brandy
Bread or crackers for serving

Steps:

  • In a spice grinder or clean coffee grinder, combine peppercorns, allspice, clove and coriander seeds; grind until fine and set aside.
  • Melt 2 tablespoons butter in a skillet over medium-high heat; when foam subsides, add onion and cook until softened, about 3 to 4 minutes. Add livers to pan and sprinkle with salt; cook livers on one side until they begin to brown, about 2 minutes, then flip them and cook the other side. Be sure to keep heat relatively high so that the outside of livers sears and inside stays pink.
  • Put onion, livers and their buttery juices into a food processor or blender with remaining butter, the cream, spices and brandy. Purée mixture until it is smooth; taste and adjust seasoning.
  • Put pâté in a terrine or bowl, smooth top and put in refrigerator for 2 to 3 hours or until fully set. Serve pâté with bread or crackers.

1 lb chicken liver (fresh & cleaned)
1 cup milk
1/2 cup cold unsalted butter (cut into pieces)
1 cup onion (chopped)
2 teaspoons garlic (minced)
2 tablespoons peppercorns (green if available & drained)
2 bay leaves
1 teaspoon thyme leaves (fresh)
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 cup cognac (or brandy)

Steps:

  • Soak livers in milk for at least 2 hours and drain well.
  • Melt 4 tablespoons butter in a saute pan over medium heat.
  • Add onions and cook until soft (about 3 minutes).
  • Add garlic and cook for about 1 minute.
  • Add livers, 1 tablespoons peppercorns, bay leaves, thyme, salt & pepper.
  • Cook stirring until livers are brown on outside and pink inside (about 5 minutes).
  • Add cognac and cook until most of the liquid is gone.
  • Cool.
  • Discard bay leaves.
  • In food processor puree liver mixture.
  • Add remaining butter in pieces and pulsing to blend.
  • Fold in remaining tablespoon of green peppercorns and adjust seasonings to taste.
  • Pack in ramekins, cover and vacuum seal.
  • Refrigerate or freeze.

1/2 stick (1/4 cup) cold unsalted butter
1/4 cup chopped onion
5 ounces chicken livers (about 1/2 cup), rinsed, patted dry, and chopped coarse
3/4 teaspoon curry powder
1/2 teaspoon paprika
1/2 teaspoon salt
1 tablespoon brandy
Accompaniments: crackers and fresh pear slices

Steps:

  • In a 9-inch skillet heat 1 tablespoon butter over moderate heat until foam subsides and cook onion and chicken livers with curry powder, paprika, and salt, stirring, 1 minutes. Cover skillet and cook mixture, stirring occasionally, 8 minutes more, or until livers are just cooked through. Add brandy and cook,stirring, 1 minute.
  • Remove skillet from heat and in a food processor purée mixture with remaining 3 tablespoons butter, cut into pieces, until smooth. Transfer pâté to a 3/4-cup ramekin and smooth top. Pâté may be served immediately (texture will be mousse-like) or chilled, its surface covered with plastic wrap, at least 2 hours and up to 5 days. Bring pâté to room temperature before serving.
  • Serve pâté with crackers and pears.

James Martin's luxuriously rich dinner party starter can be made up to two days in advance for fuss-free entertaining - serve with toasted brioche, cornichons and chutney.

375g unsalted butter
400g chicken livers, trimmed
2 large garlic cloves, 1 crushed, 1 finely sliced
3 thyme sprigs, leaves only
3 tbsp madeira
4 slices brioche
1 Bramley apple, cored and diced
onion chutney, to serve
cornichons, to serve

Steps:

  • Heat 1 tbsp of the butter in a non-stick frying pan over a medium heat. When the butter is foaming, add the chicken livers and fry for 2 mins each side.
  • Stir the crushed garlic, some of the thyme and Madeira into the pan with the livers. Fry for 2 mins, letting the Madeira simmer. Transfer the mixture to a food processor, reserve 200g of the butter and add the rest to the processor. Blend everything to a smooth paste. Season to taste, then spoon into 4 x 70ml clip-top jars.
  • Melt the reserved butter in a medium frying pan and add the sliced garlic. Turn the garlic in the butter until slightly golden. Pour into the 4 jars of pâté, ensuring a few slices of garlic and the remaining thyme leaves go in each jar, and chill in the fridge for at least 4 hrs, or until set. Can be made up to 2 days in advance.
  • Before serving, toast the brioche, then cut into triangular quarters for serving. Stir the diced apple through the chutney. Serve the pâté on small wooden boards with the toasted brioche, cornichons and chutney.

  • Season the chicken livers with salt and pepper. In a large skillet, heat 1/4 cup of the olive oil. Add half of the livers and cook over moderately high heat, turning once, until just barely pink within, 6 minutes. Transfer the livers to a bowl and repeat with the remaining livers and 1/4 cup of the olive oil. Add 1 cup of the Marsala to the skillet and cook until reduced to 1/2 cup, 8 minutes.
  • Add the remaining 1/2 cup of olive oil to the skillet along with the butter. Add the onions and garlic and cook over moderate heat, stirring frequently, until softened and lightly browned, about 10 minutes. Add the capers, anchovies, sage, rosemary and thyme and cook for 5 minutes. Add the remaining 1/2 cup of Marsala and cook until nearly evaporated, about 5 minutes. Let cool.
  • Transfer the onion mixture and livers to a food processor. Add the crème fraîche and vinegar and puree until very smooth. Season with salt and pepper. Refrigerate until chilled.
  • Rub the toasts on one side with garlic, spread the chicken liver pâté on top, sprinkle with sea salt and serve.
