2 cups biscuit/baking mix
2 large eggs, lightly beaten
1/2 cup canola oil
1 cup club soda

Steps:

  • In a large bowl, combine the biscuit mix, eggs and oil. Add club soda and stir until smooth. , Bake in a preheated waffle iron according to manufacturer's directions until golden brown. Freeze option: Cool waffles on wire racks. Freeze between layers of waxed paper in freezer containers. To use, reheat waffles in a toaster on medium setting. Or, microwave each waffle on high for 30-60 seconds or until heated through.

2 cups Bisquick
1 large egg
1 ¼ cups club soda ((a 10-ounce bottle))
¼ cup vegetable oil
Optional, for serving: butter, syrup, fresh berries, whipped cream

Steps:

  • In a large bowl, whisk together Bisquick, egg, club soda and oil. Let the batter rest while you preheat the waffle iron.
  • Cook waffles in a lightly oiled waffle iron for 3-5 minutes each, or until cooked through and golden brown.

Steps:

  • Combine ingredients and blend with a large spoon, being careful not to overmix. Spoon onto a HOT waffle iron and when done, you will have a delicious, fluffy waffle. These also freeze well and can be heated up in the toaster. Prep, servings and cooking time is approximate.

Super light pancakes and easy to make. I got this recipe from Houston Chronicle newspaper. I like the pancakes because they are thin, not heavy. Note that because of the carbonated club soda the batter cannot be stored but if you make all of the pancakes (or waffles, though I haven't tried this)you can freeze them for later.
