BLUE BAYOU CARAMELIZED PECANS
This is a recipe from the Blue Bayou Restaurant, New Orleans Square, Disneyland. It came from one of the Disney recipe sites, sorry I don't remember which one. I will also post the recipe for the pecans from Boatwrights at Disneyworld, it is slightly different. I have not made this version, I usually do the Boatwrights version which is baked after the sugar mixture is poured over the nuts. They are wonderful to eat as is, or garnish a salad with them.

Steps:
- Toast pecans in a 350F oven for 8 minutes, let cool.
- Melt butter, add sugar & cayenne, mix well.
- Bring to a medium boil.
- Remove from heat, pour over pecans & mix well.
- Pour on a parchment lined cookie sheet, spread out & let cool.
- Store in an airtight container.

Steps:
- Preheat oven to 400 Degrees, Farenheit.
- Lightly coat a nonstick cookie sheet with nonfat vegetable cooking spray. Place eggplant and zucchini slices on the sheet and cover with foil and bake for about 15 minutes or until slices are soft. Remove from oven and set aside.
- Heat a skillet over medium-high heat and coat with nonfat vegetable cooking spray. Place ground turkey, coriander, black pepper and cayenne pepper in the skillet and sautee until brown, approximately 3 to 4 minutes.
- Lasagna Assembly:.
- Lightly spray an oven proof baking dish with nonfat vegetable cooking spray. Alternate layers of baked eggplant, ground turkey, baked zucchini. Top with marinara sauce. Repeat the process if necessary.
- Place in oven and bake for 15 minutes or until heated through.
- Garnish: Top with chopped fresh basil.

Steps:
- Sprinkle yeast over warm water in a small bowl, stirring to dissolve. Let stand for 5 minutes.
- Combine flour, pumpkin puree, sugar, heavy cream, hot water, egg, shortening, and salt in a large bowl; stir in yeast mixture. Mix dough just until combined and smooth. Let dough rest in bowl, covered with a clean kitchen towel, 30 minutes.
- Transfer dough to a well-floured surface. Pat to about 1/4-inch thickness and cut into 2-inch squares. Cover with a clean kitchen towel and let dough rise in a warm, draft-free area, about 1 to 1 1/2 hours.
- Heat 3 inches of vegetable oil to 350 degrees F in a deep, heavy pot over medium-high heat. Fry beignets until golden brown, about 2 to 3 minutes, turning as soon as they brown on one side.
- Remove with tongs or a slotted spoon and place on paper towels to drain.
- Maple glaze: Combine butter and maple syrup in a medium microwave-safe bowl. Microwave until butter melts. Whisk in powdered sugar until smooth. Drizzle warm beignets with maple glaze and serve immediately.
